2 cans (14-1/2 ounces each) pitted tart cherries
3/4 cup sugar
1/4 cup cornstarch
1/8 teaspoon salt
1/4 cup amaretto or 1/2 teaspoon almond extract
DUMPLINGS:
1 cup all-purpose flour
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon grated lemon zest
1/8 teaspoon salt
1/3 cup 2% milk
3 tablespoons butter, melted
Vanilla ice cream, optional

Steps:

  • Drain cherries, reserving 1/4 cup juice. Place cherries in a 3-qt. slow cooker., In a small bowl, mix sugar, cornstarch and salt; stir in reserved juice until smooth. Stir into cherries. Cook, covered, on high 7 hours. Drizzle amaretto over cherry mixture., For dumplings, in a small bowl, whisk flour, sugar, baking powder, lemon zest and salt. In another bowl, whisk milk and melted butter. Add to flour mixture; stir just until moistened., Drop by tablespoonfuls on top of hot cherry mixture. Cook, covered, 45 minutes or until a toothpick inserted in center of dumplings comes out clean. If desired, serve warm with ice cream.

This sounds so good! From an auto-glass company's compilation cookbook which was given out as a gift. It contains recipes from all different insurance companies in the US. This was submitted by Sharon Kesner of the Lytell Insurance Agency, Woodbridge, Virginia. There is an overnight marination required.

1 (6 ounce) jar maraschino cherries, drained
1 cup Amaretto
1 cup chocolate chips

Steps:

  • Soak the cherries in the Amaretto overnight,.
  • Drain the cherries and dry them with paper towels.
  • Melt the chocolate in a micorwave for about 15 seconds and then mix. May need another 15 seconds.
  • Dip the cherries into the chocolate and enjoy!

This old-fashioned dessert is made by simmering fruit with cinnamon dumplings that soak up the sweet syrup as they cook.

2 bags (16 ounces each) frozen dark sweet cherries
1/3 cup plus 1 tablespoon sugar
1/4 teaspoon ground cinnamon
1 cup all-purpose flour (spooned and leveled)
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup whole milk
Ice cream, for serving (optional)

Steps:

  • Combine cherries and 1/3 cup sugar in a large skillet. Bring to a boil over high heat. Reduce heat to medium-high; simmer rapidly until syrupy, 8 to 10 minutes. In a small bowl, combine cinnamon and remaining tablespoon sugar; set aside.
  • Meanwhile, in a medium bowl, stir together flour, baking powder, and salt; gradually stir in milk, mixing just until a wet dough forms.
  • Reduce heat to medium-low. Spoon tablespoons of dough (you should have about 18) over simmering fruit; sprinkle all with cinnamon-sugar.
  • Cover skillet; simmer very gently until dumplings are set and dry to the touch, 10 to 12 minutes. Serve warm, with ice cream if desired.

I was about to make Sheri D's Amaretto Sourcream Strawberries #161835, when my mom stopped by with 3 pounds of fresh Bing Cherries from Eastern Washington. She makes the 5 hour drive annually in July just to get fresh cherries and stock up on wine for the year! She saw what I was making and suggested the following recipes for the cherries. I don't care for the taste of powdered sugar, and I don't think the recipe needs it, so I don't use it, but you decide. These are so simple, elegant (except for spitting out the pits) and yummy! Enjoy!!

1 1/2 lbs fresh cherries (leave any stems on)
1/2 pint light sour cream
3 tablespoons Amaretto (up to 4 tablespoons)
1/4 cup powdered sugar (optional)
1/3 cup light brown sugar

Steps:

  • Mix sour cream and Amaretto. Add more Amaretto to taste if needed.
  • If desired, add powdered sugar to mixture.
  • Place sour cream mixture into small "dipping" dish.
  • Place brown sugar into second small "dipping" dish.
  • Dip cherries in sour cream and then the brown sugar.
  • Eat and enjoy!
