Everyone loves garlic bread, and as you'd expect, this version totally over delivers. Soft, spongy and with the crunchiest backsides you've ever seen, as well as being bombed with pungent garlic butter - what's not to love? One of my favourite ways to eat this is simply with a massive green salad for lunch, but of course the great thing about garlic bread is that it can be a side for many things - chilli, pasta, soup, part of a picnic - you name it.

800 g strong bread flour, plus extra for dusting
1 x 7 g sachet of dried yeast
100 g stale breadcrumbs
BUTTER
1 bulb of garlic
500 g unsalted butter, (at room temperature)
1 lemon
1 bunch of fresh flat-leaf parsley, (30g)
1 level teaspoon cayenne pepper

Steps:

  • Put the flour, yeast and 1 teaspoon of sea salt into a large bowl and make a well in the middle. Gradually pour in 550ml of tepid water, continuously stirring and bringing in the flour from the outside as you go to form a rough dough.
  • Transfer to a flour-dusted surface and knead for 10 minutes, or until smooth and springy. Place in a bowl, cover with a damp tea towel and prove in a warm place for 1 hour, or until doubled in size.
  • Meanwhile, make the butter - this is a big batch, to make good use of your time, and you can freeze the extra for rainy days. Use a garlic crusher to crush the garlic into the softened butter, finely grate over the zest of ½ a lemon, finely chop and add the parsley (stalks and all), the cayenne and a pinch of salt, then mix it all together.
  • Remove one quarter to use in this recipe, then place the rest on a sheet of greaseproof paper, roll it up into a log and twist the ends like a Christmas cracker, then pop into the freezer.
  • After 30 minutes, get the butter out and slice it up to pre-portion, then re-roll and return to the freezer, where it will keep very happily for up to 6 months.
  • Spread one third of your soft butter portion all around the base and sides of a large metal tray (25cm x 35cm), then scatter in the breadcrumbs and shake around into an even layer so they stick to the butter.
  • Divide up the dough into 35 pieces, then, one-by-one, roll each one into a ball and place in the tray in rows - 5 balls across and 7 balls long is perfect.
  • Bomb over another third of the soft butter, in and around the balls. Leave to prove for another 1 hour 30 minutes, or until doubled in size again.
  • Preheat the oven to 190ºC/375ºF/gas 5.
  • Sprinkle the balls with a little salt, then bake on the bottom shelf of the oven for 30 minutes, or until lovely and golden.
  • Bomb over that final third of your soft butter and spread it around to give the bread a beautiful shine.
  • Whack the tray in the middle of the table or at the centre of your picnic for sharing, and let everyone tear off their own pieces.

6 large garlic cloves, chopped
1/4 cup chopped flat-leaf parsley
1/4 cup chopped fresh oregano leaves
1/2 teaspoon kosher salt
Freshly ground black pepper
1/2 cup good olive oil
1 loaf ciabatta bread
2 tablespoons unsalted butter

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the garlic in the bowl of a food processor and process until minced. Add the parsley, oregano, salt and pepper and pulse twice.
  • Heat the olive oil in a medium saute pan and add the garlic mixture. Remove the pan from the heat.
  • Slice the ciabatta bread in half horizontally, and spread the butter on 1 half. Spread the garlic mixture on the other half of the bread, and put the halves together. Wrap the bread in aluminum foil.
  • Place the bread in the oven and bake for 5 minutes. Open the foil, and continue baking for an additional 5 minutes.

6 large garlic cloves, chopped
1/4 cup fresh parsley
2 tablespoons fresh oregano leaves
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/2 cup good quality olive oil
1 large loaf ciabatta
2 tablespoons unsalted butter, at room temperature

Steps:

  • Preheat oven to 350 degrees.
  • Place the first five ingredients in a food processor and chop until finely minced. In a medium saute pan heat the olive oil over low heat and then add the garlic mixture. Cook on low for 3-5 minutes until garlic is tender - do not let the garlic brown. Remove from heat and set aside.
  • Cut the bread in half, horizontally and spoon the oil-garlic mixture on the bottom half. Butter the top half of bread and then place the two halves together again. Wrap in tin foil and put on sheet pan.
  • Bake at 350 for 5 minutes. Carefully remove the tin foil and discard and bake for an additional 5 minutes. slice crosswise and serve warm.

1 small ciabatta
2 tbsp grated parmesan (or vegetarian alternative)
2 garlic cloves ,crushed

Steps:

  • Heat the grill to high. Beat together the mayonnaise, butter and garlic cloves until smooth. Chop basil, stir through and season with salt and pepper. Put the halves of the ciabatta, sliced lengthways, on a baking tray and spread with the butter. Sprinkle with grated Parmesan, then grill for 2-3 mins.

¼ tsp dried active yeast
165g plain flour
½ tsp dried action yeast
35ml warm milk
1 tbsp olive oil
250g strong white bread flour

Steps:

  • The night before, make the biga (see tip, below). Stir yeast with 50ml warm water, stand for 10 mins, then add another 80ml warm water. Gradually add the flour in a stand mixer on its lowest setting. Once it's a wet dough, transfer to a well-oiled bowl, cover and leave for 12 hours or overnight at room temperature.
  • In the morning, combine the yeast and milk and leave to stand for 10 mins. Tip into a freestanding mixer fitted with a dough hook, add 160ml water, the biga and the olive oil. Then add the flour and 1 heaped tsp salt. Use the dough hook of a stand mixer to combine the dough. Knead for 10 mins until smooth and elastic. Don't worry if it looks very wet, it should to be a very wet dough! Pour into a well-oiled bowl and cover with cling film. Leave to prove for an hour and a half or until doubled in size.
  • Once rested, begin to do a series of folds - lift the dough from the edge, pull up, over, then release it. Turn the bowl 90 degrees and do the same again. Repeat so you do a full turn of the bowl twice, or 8 folds. Rest for 30 mins, then repeat the whole folding process once more.
  • Heat the oven to 220C/200C fan/gas mark 6. Tip the dough onto a really well-floured surface and cut in half. The dough will feel like a batter and spread across the surface a bit, but don't panic, just work on a well-floured surface, using the flour and a pastry scraper to help move the dough. Shape the dough into 2 large squares (about 20cm x 20cm). Dealing with each loaf at a time, fold the dough in from each side, as if folding a booklet. Flip over, then pick up the roll and place each onto separate well-floured sheets of baking paper. The roll will be very soft, so oil or flour your hands well. Allow to rest for another 30 mins, covered with a floured tea towel. Don't worry if it spreads a little.
  • While the dough rests, heat a baking sheet in the oven. Once the dough has rested, slide each of the loaves, along with the baking paper beneath them, onto the hot baking sheet. Bake for 35-40 mins, until the crust is golden and the loaves sound hollow when tapped on the base. Move to a wire rack and cool for an hour before slicing and serving with olive oil and balsamic vinegar.
