Chutney-Topped Brie image

This easy and elegant appetizer from Rebecca Irons in Lubbock, Texas has only four ingredients! "I first tasted something similar at a cheese shop," she says. "Most any chutney flavor will work-from pineapple or mango to onion-for a toasty, melt-in-your-mouth treat on chilly days."

1 round (8 ounces) Brie cheese
1/4 cup chutney
2 tablespoons bacon bits
Assorted crackers

Steps:

  • Place the cheese in an ungreased ovenproof serving dish. Top with chutney and bacon. Bake, uncovered, at 400° for 10-12 minutes or until cheese is softened. Serve with crackers.

This round wheel of Brie is dusted with curry powder, then spread with a mango chutney, studded with chopped cashews, and baked until the cheese inside the rind is melted. The sweet/savory combination is creamy and delicious.

1 (2.2 pound) wheel Brie cheese
2 teaspoons ground curry powder
1 (12 ounce) jar mango chutney
1 cup chopped cashews
1 French baguette, cut into 1/2 inch slices

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Sprinkle curry powder over top and sides of Brie; rub the curry powder into the rind to thoroughly coat the surface. Place the Brie wheel in a large pie plate or oven proof dish. Spread a generous layer of chutney over the top, and evenly sprinkle with cashews.
  • Bake 15 minutes in the preheated oven, or until cashews are slightly golden and cheese inside the rind is melted. Serve with slices of baguette.

I saw this on allrecipes.com and it sounded so wonderful, that we made it right away. I love Brie, & cashews and then baked - what can be bad? This would be wonderful for Super Bowl Sunday here in Miami - yeah! Update: 12/21/2009 - Made this the other day with 4 crispy & crumbled bacon slices in addition to the other ingredients. Instead of a bageutte which I didn't have, served it with gingersnaps and it was a wonderful orchestra of flavors! :)

⅓ cup chutney*
2 Tbsp. sliced almonds
¼ tsp. curry powder

Steps:

  • Preheat the oven to 350°F.
  • Place the cheese on an ovenproof serving dish and bake until softened at the edges, about 10 minutes.
  • Top with the chutney, almonds, and curry powder and continue baking until the cheese is soft, the chutney is warm, and the almonds are toasted, about 5 minutes.
  • Serve with baguette slices, crostini, toasts, or crackers.

1/2 cup mango chutney
1/3 cup sliced blanched almond
2 red apples, sliced
1 loaf French bread, sliced

Steps:

  • Preheat oven to 350 degreesF.
  • Place Brie on a cookie sheet and spread the chutney on top, leaving a 1/2 inch border Place the almonds around the border.
  • Bake for 15 minutes.
  • Carefully transfer warm brie to a cheese board and surround with apples and french bread.
