1 /2 cup milk
3 lbs yukon potatoes (or russet potatoes (peeled and quartered))
8 tbsp butter (softened )
1/2 cup sour cream (plus additional 3 tbsp )
salt and pepper for taste

Steps:

  • Add the peeled and quartered potatoes to a large pot. Fill the pot up with just enough cold water to cover the potatoes. Set the stove to medium high heat. Cook until the potatoes are soft enough to pierce easily with a fork. Drain.
  • Place the potatoes back into the pot and cover the potatoes for about 5 mins. Heat up the milk until it's hot.
  • Pour half of the hot milk (see notes), softened butter and sour cream into the pot and mash until you get your desired consistency. If the mash is too thick, add a bit more milk until you get your desired consistency. Season with salt and pepper. Serve with pats of butter. 5 pounds Yukon gold or russet potatoes
1 1/2 sticks softened butter, plus more for baking
1 1/2 (8-ounce) packages cream cheese, softened
1/2 cup half-and-half
1/2 cup cream
Salt and freshly ground black pepper
Milk, if needed, for thinning

Steps:

  • Preheat the oven to 350 degrees F.
  • Peel the potatoes and rinse them in cold water. Chop the potatoes in fourths. Place the potatoes into a large pot and cover with water. Bring to a boil and cook until fork tender, 20 to 25 minutes.
  • Drain the potatoes, and then return them to the pan. With the burner on low heat, mash the potatoes with a potato masher; the more steam that's released while you mash, the better. Mash for about 5 minutes. Turn off the burner.
  • Add the butter, cream cheese, half-and-half, and seasonings. Stir to combine, and if the mixture needs thinning, add milk. Check the seasonings, adding salt and pepper, to taste.
  • Pour the mashed potatoes into a large casserole pan. Dot the surface with butter. Cover with foil and bake in the oven for 15 minutes. Remove the foil and continue baking for 10 more minutes. Serve immediately.

4 large russet potatoes, peeled and quartered
Kosher salt and ground black pepper
8 ounces cream cheese, softened
1 cup sour cream
2 tablespoons chopped fresh chives, plus more for serving

Steps:

  • Preheat the oven to 325 degrees F. Butter a 2-quart baking dish and set aside.
  • Place the potatoes in a large pot filled with salted water. Bring to a boil and cook until fork tender, 10 to 15 minutes. Drain the potatoes and transfer to the bowl of a stand mixer fitted with the paddle attachment. Beat the potatoes until chunky, then add the cream cheese, sour cream and 4 tablespoons of the butter. Whip until smooth. Add the chives and some salt and pepper to taste.
  • Using a spatula, transfer the potatoes to the buttered baking dish and spread evenly. Cut the remaining 2 tablespoons of butter into cubes, then sprinkle them over the top. (At this point it can be refrigerated until guests arrive.)
  • Bake, covered with aluminum foil, for 15 minutes, then uncover and bake for another 20 minutes.
  • Remove from the oven and let sit for 10 minutes. Sprinkle with additional chives and serve hot.

5 sprigs fresh thyme
1 garlic clove (bruised (press down on the garlic clove to crush it every so slightly) )
2 tbsp butter
½ cup sour cream

Steps:

  • Cook the potatoes in a large pot of salted water until a sharp knife can easily be inserted.
  • Drain and allow to stand, uncovered, for 5 minutes for any steam to evaporate then peel the potatoes.
  • While the potatoes are cooking, heat the milk with the pepper, thyme and bay leaf in a saucepan.
  • As soon as the milk starts to simmer, remove from the heat and allow to infuse.

Steps:

  • Place potatoes in a bowl and wash under cold, running water until water runs clear. Place in a medium saucepan with salt. Add enough water to generously cover. 1 1/2 cups milk
6 tablespoons unsalted butter
1/2 cup sour cream
1/2 teaspoon freshly ground black pepper

Steps:

  • Cut the potatoes into 1-inch cubes and place them in a large pot. Cover the potatoes with cold water and add enough salt so the water tastes quite salty. Bring to a boil, then lower the heat and simmer, uncovered, for about 10 to 12 minutes, until the potatoes fall apart easily when pierced with a fork.
  • Meanwhile, heat the milk and butter in a small saucepan, making sure it doesn't boil. Set aside until the potatoes are done.
  • As soon as the potatoes are tender, drain them in a colander. Place a food mill fitted with a small disc/blade over a glass bowl. Process the potatoes through the food mill, turning the handle back and forth to force the potatoes through the disc. 4 thyme sprigs
3/4 cup (1 1/2 sticks) plus 2 tablespoons unsalted butter, divided
3/4 teaspoon freshly ground black pepper, plus more

Steps:

  • Cover potatoes, garlic, and 1 Tbsp. salt with cold water in a large pot. Bring to a low boil, then reduce heat and simmer (do not boil) until potatoes are very tender when pierced with the tip of a paring knife but not falling apart, 20-25 minutes.
  • Meanwhile, heat milk, thyme, and 3/4 cup butter in a small pot over medium, stirring, until butter is melted. Remove from heat; set aside.
