PLAIN POUND CAKE
Steps:
- Preheat the oven to 350 degrees F. Grease and flour 2 (8 1/2 by 4 1/2 by 2 1/2-inch) loaf pans. Line the bottoms with parchment paper.
- Cream the butter and granulated sugar in the bowl of an electric mixer fitted with the paddle attachment for about 5 minutes, or until light and fluffy. With the mixer on medium speed, beat in the eggs, 1 at a time.
- In a large bowl, sift together the flour, baking powder, baking soda, and salt. In another bowl, combine the buttermilk and vanilla. Add the flour and buttermilk mixtures alternately to the batter, beginning and ending with the flour. Divide the batter evenly between the pans, smooth the tops, and bake for 45 minutes to 1 hour, until a cake tester comes out clean.
- When the cakes are done, let them cool for 10 minutes. Take them out of the pans, place them on a baking rack and allow them to cool completely. Wrap well, and store in the refrigerator.
ANNA'S BIRTHDAY POUND CAKE
Several years back, I asked my mother in-law what kind of cake would she like me to make for her birthday. Not wanting to trouble me, she requested a simple pound cake with whipped cream and strawberries. Only problem, I'd never made a pound cake. But a found a recipe and have since modified it. Now every time I see beautiful strawberries in the spring, I am tempted to make a pound cake.

Steps:
- Preheat oven to 300. With non-stick cooking spray, spray and flour a Bundt pan.
- In a large mixing bowl, cream butter, sugar and agave nectar.
- Add yogurt and eggs, one at a time. Stir in vanilla.
- In a separate bowl, sift together remaining dry ingredients. Gradually add to creamed mixture until thoroughly combined.
- Pour into prepared pan. Bake 60-75 minutes or until a toothpick inserted in middle of cake comes out clean. Cool completely, before removing from pan.

- Pre-heat oven to 180C/160C fan/gas 4 and line a 900g loaf tin with parchment paper (mine was 19cm x 9cm x 6cm). Put all of the ingredients except those for the icing into a large bowl and beat together, either using an electric hand whisk or a wooden spoon until smooth and combined. Pour the mix into the loaf tin and spread evenly with the back of spoon. Bake for 40 - 45 mins.
- Once out of the oven, leave to cool and make the icing. Combine the icing sugar and vanilla paste with three tbsp of water - you may need more but add it gradually to get a thick icing. Spread it over the top of the cake; it's fine if it drips down the edges. Allow to set and then slice.

GRANDMA ANNA'S APPLE CAKE
It's Apple Season, here in Wisconsin! This recipe came from my wife's Grandma & is VERY GOOD...especially when served warm along with a good cup of coffee!

Steps:
- Preheat oven to 350°.
- Lightly grease or spray a 9 X 9 cake pan.
- In a medium bowl, cream the shortening sugars & eggs together.
- In another bowl, sift together the dry ingredients.
- Add to the creamed ingredients, alternately with the sour milk.
- Beat on medium-high until smooth.
- Fold in the diced apples.
- Pour into greased pan.
- TOPPING:.
- Mix together 1 teaspoons cinnamon, ½ cup white sugar & ¼ cup light brown sugar. Spinkle evenly over top of cake.
- Bake for 1 hour or until a toothpick, inserted in the center comes out clean.
- ENJOY!

- 2. Mix sugar, butter, and butter flavor Crisco. Mix till lite and fluffy. Add eggs one at a time. Mix well after each egg is added.
- 3. Sift together flour and baking powder. Add Flour and milk alternating. Add vanilla.
- 4. Spray pound cake or bunt cake pan with cooking spray. Then coat with flour. Pour cake batter in pan . Bake at 325 degrees for 1 hour and 30 mins.
