Churrasco is a Latin American term for a long flat cut of skirt steak that's marinated in a citrus-garlic mojo marinade and grilled to juicy perfection. This tender steak is then served with a delicious chimichurri sauce.

2 lbs skirt steak (cut in 4 steaks)
1 cup mojo marinade
Salt + pepper to taste
Chimichurri Sauce

Steps:

  • Place the steaks in a large baking dish. Pour the mojo marinade on top then season with salt and pepper to taste.
  • Cover the dish with plastic wrap and marinate the steaks for 20 minutes or up to 2 hours in the fridge. The longer, the better!
  • Grill or cook the steaks on the stove in a cast-iron skillet, on medium-high heat, for 5-6 minutes or until desired doneness. Transfer steaks to a plate to rest for 5 minutes. Serve with chimichurri sauce. Enjoy!

This citrus and pesto like recipe is from one of our favorite local restaurant's "Dinosaur BBQ". It is using their bottled marinade. For those who have received a package from me, I have included this sauce. For those who have not--never fear, I am including the web address so that you can enjoy it too. 4 (10 -12 ounce) beef strip steaks
1 cup dinosaur bbq mojito marinade
1 bunch fresh Italian parsley
10 -12 garlic cloves, coarsely chopped
3 -4 tablespoons fresh lemon juice (about 1 lemon)
1 teaspoon red pepper flakes
2 teaspoons kosher salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1 cup extra virgin olive oil

Steps:

  • Start early in the Morning, remove the boot strap tendon sometimes found on the outside edge of the steaks.
  • Pour on marinade and let them stand all day.
  • Using parsley leaves fill measuring cup to make 1 full packed cup.
  • Mix together all sauce ingredients except oil in a food processor or blender to form a paste.
  • Dribble in a little oil at a time until fully blended.
  • Taste, add more seasonings if desired.
  • Set aside.
  • Take steaks out of marinade and pat dry.
  • Grill on hot grill until medium-rare (Ok, Hubby teases me, I like mine a little more done than that).
  • Serve with some sauce spooned over each steak.

1 quart blended oil
1 cup extra-virgin olive oil
1 1/2 cups chopped garlic
1 1/4 cups lime juice
3/4 cup dried oregano
1/2 cup red wine vinegar
2 tablespoons salt
1 tablespoon red pepper flakes
1/2 teaspoon ground black pepper
3 bunches chopped fresh parsley
2 bunches chopped fresh cilantro
2 cups mayonnaise
1 ounce blended oil
5 large yellow onions, sliced
4 ounces brown sugar
1 tablespoon salt
1 teaspoon ground black pepper
2 pounds ground chuck
2 pounds ground skirt steak
8 brioche buns, split and toasted

Steps:

  • For the chimichurri: Combine blended oil, olive oil, garlic, lime juice, oregano, vinegar, salt, pepper flakes and black pepper in a large bowl and let the mixture stand for 30 minutes.
  • Whisk in parsley and cilantro and let the mixture stand for 1 hour.
  • For the chimichurri aioli: Add mayonnaise to a mixing bowl and slowly whisk in 1/2 cup chimichurri until combined well.
  • For the caramelized onions: Heat a large skillet over medium heat. Add blended oil and the onions. Cook until translucent, then add the brown sugar. Add the salt and pepper and cook until desired color is achieved.
  • For the skirt steak burger: Add the meats and 2 cups chimichurri to a large mixing bowl and mix until well incorporated. Form into 8-ounce patties.
  • Preheat a grill for cooking at high heat.
  • Grill patties until they have crosshatch marks, 3 to 4 minutes per side. Add patties to buns and drizzle the bun tops with caramelized onions and chimichurri aioli.

CHIMICHURRI STEAK

1 1/2 cups grapeseed oil
1/2 cup chopped fresh parsley
1 tablespoon sherry vinegar
2 teaspoons diced seeded jalapenos
1 teaspoon red chile flakes
2 cloves garlic, minced
Juice of 2 limes
Kosher salt and freshly ground black pepper
5 pounds skirt steak
Roasted carrots and yucca, for serving, optional

Steps:

  • In a bowl, whisk together the grapeseed oil, parsley, vinegar, jalapenos, chile flakes, garlic, lime juice and 2 teaspoons each salt and pepper. Set aside 1/2 cup of the chimichurri sauce for marinating the steak; reserve the remaining sauce for serving.
  • Tenderize the skirt steak by pounding it lightly. Sprinkle the steak with kosher salt and black pepper, keeping in mind that there is salt and pepper in the marinade. Transfer to a bowl or dish and add the 1/2 cup chimichurri sauce. Marinate, refrigerated, at least 10 hours or overnight.
  • When ready to cook the steak, heat a grill or saute pan to medium heat. Remove the steak from the marinade (discard the marinade). Grill the steak to medium-rare, 4 to 5 minutes per side, or cook to desired temperature or doneness. Let the steak rest for 5 minutes before slicing in thin strips on the bias.
  • Put some steak slices on each plate and spoon over the reserved chimichurri. Serve with roasted carrots and roasted yucca or your favorite vegetable and starch. Enjoy!

CHURRASCO WITH CHIMICHURRI

5 to 6-inch piece of beef tenderloin (cut from the center-about 1 1/2 pounds)
1 cup cilantro leaves
1/2 cup fresh mint leaves
1 cup flat-leaf parsley
6 cloves fresh garlic, peeled
1/2 teaspoon hot pepper flakes
1 cup extra-virgin olive oil
1/3 cup white vinegar
1/3 cup water
1 teaspoon salt
1/2 teaspoon black pepper
Special Equipment: 2 cups oak chips, soaked in cold water for 1 hour, then drained (optional)

Steps:

  • Prepare the chimichurri. Combine the herbs and garlic in a food processor and finely chop. Add the oil, vinegar, water, salt, pepper and hot pepper flakes and process to make a thick sauce. Correct the seasoning, adding salt or vinegar, to taste. The chimichurri should be highly seasoned. Pour a 1/4 of the chimichurri into a baking dish just large enough to hold the tenderloin.
  • Holding the knife parallel to the cutting board, cut the tenderloin lengthwise into 4 flat even slices. Place each slice between 2 sheets of plastic wrap and pound with the side of a cleaver (or a scaloppini pounder) to a thickness of 1/4-inch. Arrange the steaks on top of the chimichurri in the baking dish. Pour another 1/4 of the chimichurri on top. Marinate the beef for 30 minutes to 1 hour.
  • Set up the grill for direct grilling and preheat to high. If using charcoal, toss the chips directly on the coals. If using gas, place them in the smoker box and preheat until you see smoke. If your grill lacks a smoker box, use a foil smoking pouch. Arrange the beef slices on the grate on the diagonal and grill until cooked to taste, about 2 minutes a side for medium-rare, rotating the slices 90 degrees after 1 minute to create an attractive crosshatch of grill marks. Transfer the churrasco to plates or a platter and serve with the remaining chimichurri sauce on the side.

4 strip steaks (10 to 12 ounces each)
1 cup Mojito Marinade (page 164)
The Sauce
1 medium bunch fresh Italian parsley
10 to 12 large cloves garlic, coarsely chopped
3 to 4 tablespoons freshly squeezed lemon juice (about 1 lemon)
1 teaspoon red pepper flakes

Steps:

  • Get up early in the morning and remove the bootstrap tendon sometimes found on the outside edge of the steaks, so they won't curl when you cook them. Pour on the marinade and let them soak up flavor all day.
  • Whip up a batch of sauce. Pick off the parsley leaves to make a packed cup. Toss them in a processor or blender with the garlic, lemon juice, red pepper flakes, salt, cumin, and oregano. Process to a paste, scraping down the workbowl several times. With the processor running, slowly dribble in the olive oil til fully blended. Taste and fix up the seasonings. Set aside.
  • Fire up the grill. Take the steaks out of the marinade and pat dry. Grill over hot coals til medium-rare (see page 34). When they're done, pull them off the grill and throw them on some plates. While they're still sizzling, spoon some sauce over each steak and let the flavors and aromas blow your mind.

CHURRASCO (GRILLED MARINATED SKIRT STEAK)

Like so many of the best Puerto Rican dishes, churrasco - garlicky wood-fire-grilled steak served with chimichurri - starts by tenderizing a tougher cut of meat (skirt steak) with a flavorful marinade. Although its origins are Argentinian and Brazilian (the word churrasco encompassing grilled meats in both Spanish and Portuguese), variations on the dish are Latin American staples. This recipe kicks up a classic Puerto Rican marinade with a bit of adobo seasoning, and then served with wasakaka, an herbaceous sauce from the Dominican Republic using lime juice. The steak should be grilled over an open fire (the smoke is key), but a gas grill will do, as will a cast-iron skillet. Serve with adobo roasted potatoes, maduros, white rice or arroz mamposteao, plus fresh tomato and avocado slices.

1 1/2 pounds skirt steak or tri-tip (see Tip)
3 large garlic cloves
1 tablespoon fresh oregano leaves, finely chopped
1 tablespoon white vinegar
2 teaspoons olive oil
1 tablespoon adobo seasoning (preferably Loísa or Badía brands)
2 teaspoons kosher salt (such as Diamond Crystal), plus more to taste
1/3 cup fresh lime juice
1/2 cup fresh flat-leaf parsley leaves, finely chopped
1/4 cup fresh cilantro leaves, finely chopped
1/4 cup fresh oregano leaves, finely chopped
1/4 cup extra-virgin olive oil
2 garlic cloves, minced
1 teaspoon kosher salt (such as Diamond Crystal)
1/4 teaspoon freshly ground black pepper

Steps:

  • Pat the steaks dry and place in a large zip-top bag.
  • Combine the garlic, oregano, vinegar, olive oil, adobo seasoning and salt in the bowl of a pilón or mortar and pestle, or a small food processor. Grind into a thin paste, then pour the marinade over the steak. Zip the bag then shake well to coat the meat, rubbing in gently as needed. Let rest on the counter for 10 to 20 minutes, or refrigerate overnight if you have time. Be sure to let the steak come to room temperature before grilling.
  • If using a charcoal grill, start by building a fire with hardwood and kindling, then adding lump hardwood charcoal once the fire is kicking. Allow the fire to mellow. If using a gas grill, set the temperature to 500 degrees.
  • Meanwhile, make the wasakaka: Combine the lime juice, parsley, cilantro, oregano, olive oil, garlic, salt and pepper in a small bowl and whisk to incorporate. If you'd like a creamier sauce, blend in a small food processor or blender. (Wasakaka will keep for 3 or 4 days in a sealed jar in the refrigerator.)
  • Once the grill is ready, remove skirt steak from the bag and shake off excess marinade. Place on the grill and sear for 1 to 3 minutes. Using tongs, pull up the corner to ensure the steak has a good dark char, bordering on burned in places, before flipping, then cook for 1 more minute for rare, 2 minutes for medium-rare. Be careful not to overcook or steak will be tough.
  • Remove steak from grill and let rest for 5 to 7 minutes. Slice into strips and pour over wasakaka, or serve sauce on the side. Taste and sprinkle with additional salt, if desired.
