THE BEST SHRIMP SCAMPI
A classic menu item from every great Italian-American restaurant, this shrimp scampi hits all the right notes - buttery, lemony, garlicky. We love it for its simplicity and balance of flavor (copious amounts of butter help, too!). But while it looks and tastes fancy, this dish is actually very easy to make. The white wine sauce gets a spicy finish from red pepper flakes, perfect for soaking up with good crusty bread or cooked pasta.

- Heat a large nonstick skillet over medium heat. Pat the shrimp dry with paper towels and sprinkle with salt and pepper.
- Melt 2 tablespoons of the butter in the skillet. Add half the shrimp and cook until golden pink, about 2 minutes per side. Transfer the shrimp to a bowl. Melt another tablespoon of the butter in the skillet and cook the remaining shrimp.
- Return the skillet to medium heat. Add 1 tablespoon of the butter and let it melt. Add the garlic and red pepper flakes and cook until fragrant, about 30 seconds.
- Stir in the wine and lemon juice. Increase the heat to high and boil the liquid until it thickens slightly, about 1 minute. Remove the skillet from the heat and stir in the remaining 2 tablespoons butter and the parsley. Add the shrimp back to the skillet and toss to coat with the sauce. Transfer to a serving dish and top with more chopped parsley. Serve with crusty bread or pasta.
LIGHTER SHRIMP SCAMPI
(From Everyday Food) Scampi minus the butter and wine. Keep a bag of frozen (raw) shrimp in the freezer and you can have a quick and easy weekday meal on hand. (It just takes a few minutes to quick thaw the shrimp, follow the directions on the bag.) I always have a jar of minced garlic in the fridge and I often sub bottled lemon juice for fresh. I serve with steamed broccoli and a salad. You could also serve with a side of pasta, rice, or garlic bread.

- Set broiler rack 4 inches from heat.
- Place shrimp in a large broiler proof rimmed baking sheet. (I use a 9x13 glass baking dish.)
- Sprinkle with oil and garlic and season generously with salt and pepper. Add 1/4 tsp red pepper flakes. Toss to coat. Arrange shrimp in a single layer.
- Broil 3-4 minutes, until opaque throughout. Sprinkle with lemon juice, toss to combine. Serve immediately.

- Preheat the oven to 350 degrees F (175 degrees C). Place shrimp in a shallow baking dish.

- Cook the spaghetti according to package directions. Drain; set aside.
- Meanwhile, combine the croutons, 1/2 tablespoon of the parsley, and 1 tablespoon of the zest in a small bowl; set aside.
- Heat the oil in a large nonstick skillet over medium heat. Add the shallot, garlic, and red pepper. Cook, stirring until the shallots are soft, about 1 minute. Add the shrimp and the salt, and cook, over medium-high heat, turning occasionally, until the shrimp are opaque, 1 to 2 minutes. Stir in the broth, wine, lemon juice, and olives. Bring to a boil and cook for 1 minute, then reduce the heat to medium. - Bring a large pot of salted water to a boil. Add the linguine and cook as the label directs. Reserve 1 cup cooking water, then drain.
- Meanwhile, season the shrimp with salt. Heat the olive oil in a large skillet over medium-high heat. Scampi are tiny, lobster-like crustaceans with pale pink shells (also called langoustines). Italian cooks in the United States swapped shrimp for scampi, but kept both names. Thus the dish was born, along with inevitable variations. This classic recipe makes a simple garlic, white wine and butter sauce that goes well with a pile of pasta or with a hunk of crusty bread. However you make the dish, once the shrimp are added to the pan, the trick is to cook them just long enough that they turn pink all over, but not until their bodies curl into rounds with the texture of tires.

- Thaw that shrimp! Place unopened 1-lb. bag of shrimp in a large bowl and fill with cool water. Place a heavy plate on top to submerge until thawed, about 45 minutes. If you're the kind of person who actually thinks about dinner more than a few hours before you're going to make it, you can also let the shrimp thaw overnight in the fridge. Alternatively, if you're in a hurry, take the shrimp out of the bag and let them soak in a big bowl of cold water—they'll be ready in about 15 minutes. However you thaw them, make sure to pat them dry before proceeding. Season shrimp with 1 tsp. salt. Let sit until ready to use. While all that's happening, bring a large pot of salted water to a boil.
- This dish comes together quite quickly, so you're going to want to have all of your prep done before you start cooking. Peel 1 medium onion, then finely chop so that all pieces are about the size of lentils. Transfer to a medium bowl. Using a Microplane, grate 5 garlic cloves right into bowl. Finely grate zest of ½ lemon right into bowl. Coarsely chop 1 cup parsley leaves with tender stems; transfer to a separate small bowl and set aside.
- Heat ¾ cup panko, 2 Tbsp. olive oil, and ¼ tsp. salt in a large Dutch oven over medium, stirring to coat panko.
