CREOLE PORK CHOPS

Steps:
- In a small bowl, combine the first six ingredients; rub over both sides of pork.
- In a large skillet, brown pork chops in oil over medium heat. Add the remaining ingredients. Cover and cook 15-20 minutes longer or until meat is tender.
CREOLE PORK CHOPS

Steps:
- In a large, deep, heavy skillet with a lid, over moderately high heat, heat the oil and brown the pork chops for 3 minutes on each side.
- Remove the chops as they brown, and keep warm in a 180 degree oven.
- Reserve 3 tbls.
- of the pan drippings, and pour off the excess.
- Over moderate heat, with the pan drippings saute the onion, green pepper, celery and garlic, stirring for 5 minutes.
- Add the tomatoes, tomato paste, beef stock, sugar, bay leaf, oregano, salt and pepper, and stir.
- Reduce to moderately low heat, cover, and simmer for 30 minutes, stirring occasionally.
- Return the chops to the skillet and cook covered for 30 minutes more, turning chops once.
- Transfer the chops to a large, deep, heated platter, pour the sauce over the chops, sprinkle with pasrley and serve.
PUERTO RICAN PORK A LA CRIOLLA
This is a really flavorful roast pork, with lots of garlic and black pepper. It doesn't require overnight prep, just about 5 minutes of seasoning and an hour and a half in the oven. Leftovers make great sandwiches!

- Preheat oven to 350 degrees F.
- Combine pepper, garlic, oregano, vinegar, olive oil and salt in a small bowl, then rub this mixture all over the pork roast.
- Place roast in a shallow baking pan and roast, uncovered, at 350 degrees F for about 1-1/2 hours; meat thermometer should read 165 to 170 degrees F.
- Remove from oven and let rest 10 minutes before slicing.
GRILLED PORK CHOPS (CHULETAS ASADO A LA PARRILLA)

Steps:
- Rub both sides of chops with adobo.
- Place chops in a deep baking dish. In a separate bowl, mix together orange juice, lemon juice, vinegar, and garlic.
- Pour marinade over chops and turn to coat both sides of chops.
- Let chops marinate in refrigerator for at least one hour or overnight.
- Preheat your grill and grill pork chops over a low to medium low flame. Cook each side for about 10-15 minutes per side.
- The pork chops are done when meat is white and has reached an internal temperature of 160 degrees F.

- Disolve the salt in the water in a large bowl, place the pork chops in the mixture, cover and refrigerate for 20 minutes.
- Heat the olive oil in a large skillet over medium heat. Place the chops into the heated oil and cook about 5-7 minutes per side, depending on how thick the chops are. Transfer the pork chops to a plate.
- Reduce the heat to medium low. In the same pan add the butter, prunes, water, pinch of salt and sugar. Cook for about 15 to 20 minutes, stirring occasionally with a wooden spoon. Add the wine and salt and continue cooking for 15 minutes more. Pour half of the sauce over the chops and serve immediately, using the remaining sauce as table gravy.

- In a medium bowl mix the lime juice, onion powder, garlic, thyme, oregano, cumin, salt, and pepper.
