I clipped this recipe from Taste of Home magazine several years ago and have found it to be the best-tasting easy beef and broccoli stir-fry. It is credited to Ruth Stahl. I often use charcoal chuck steak, which is very tender and lean. I also like that it doesn't call for any unusual ingredients.

3 tablespoons cornstarch, divided
1/2 cup water, plus
2 tablespoons water, divided
1/2 teaspoon garlic powder
1 lb boneless round steak or 1 lb charcoal chuck steak, cut into thin 3-inch strips
2 tablespoons vegetable oil, divided
4 cups broccoli florets
1 small onion, cut into wedges
1/3 cup reduced sodium soy sauce
2 tablespoons brown sugar
1 teaspoon ground ginger
hot cooked rice, for serving
toasted sesame seeds, for serving (optional)

Steps:

  • In a bowl, combine 2 tablespoons cornstarch, 2 tablespoons water and garlic powder until smooth.
  • Add beef and toss.
  • In a large skillet or wok over medium-high heat, stir-fry beef in 1 tablespoon oil until beef reaches desired doneness; remove and keep warm.
  • Stir-fry onion in remaining oil for 4-5 minutes until softened. Add the broccoli and cook for 3 minutes until the broccoli is tender but still crisp. Return beef to pan.
  • Combine soy sauce, brown sugar, ginger and remaining 1 tablespoon cornstarch and 1/2 cup water until smooth; add to the pan.
  • Cook and stir for 2 minutes.
  • Serve over rice and garnish with toasted sesame seeds (optional).

3 tablespoons cornstarch, divided

  • Mix garlic powder and 2 tablespoons each cornstarch and water; toss with beef. In a small bowl, mix soy sauce, brown sugar, ginger and the remaining cornstarch and water until smooth., In a large skillet, heat 1 tablespoon oil over medium-high heat; stir-fry beef until browned, 2-3 minutes.   • Prepare the beef:
  • In a small bowl stir together the soy sauce, the sugar, and the salt, add the beef, and let it marinate for 20 minutes.
  • Make the sauce while the beef is marinating:
  • In a small bowl dissolve the cornstarch in the soy sauce and stir in the Sherry, the broth, the sugar, and the sesame oil.
  • Heat a wok or large heavy skillet over high heat until it is hot, add 2 tablespoons of the vegetable oil, and heat it until it just begins to smoke. Stir-fry the beef in the oil in batches for 1 minute, or until it is no longer pink, and transfer it as it is cooked with a slotted spoon to a plate. Add the remaining 1 tablespoon vegetable oil to the wok, heat it until it is hot but not smoking, and in the oil stir-fry the gingerroot, the garlic, and the chili for 30 seconds, or until the mixture is fragrant. Add the broccoli and stir-fry the mixture for 1 minute. Add 1/3 cup water and steam the broccoli, covered, for 1 1/2 to 2 minutes, or until it is crisp-tender. 1 tbsp cornstarch
1 tbsp soy sauce
1/2 tsp grated ginger
2 tsp sesame oil

Steps:

  • Thinly slice the sirloin steak (and if you are having trouble slicing it thinly, pop it into the freezer for 15 minutes, then slice). Toss the beef with the cornstarch, soy sauce, ginger, and sesame oil, and let it sit while you prep the veggies.
  • Cut the broccoli head into evenly sized florets.
  • Wash the broccoli and snow peas, and make sure you dry them very thoroughly either in a salad spinner or with a towel. If there's excess water, you will end up steaming your stir fry and it will likely be mushy.
  • Heat up a wok or skillet over medium high heat, and test it for heat by adding a few drops of water. If they sizzle and burn up immediately, the pan is hot enough.
  • Add the marinated beef. Toss frequently for a couple minutes until the beef slices are cooked, then remove the beef to a big bowl.
  • Add the vegetable oil to the pan, and toss in the garlic and red pepper flakes. Immediately add the broccoli and cook, stirring frequently, for 2-3 minutes until the broccoli is bright green, and still crisp, but slightly tender. Remove the broccoli to the same bowl that contains the beef.
  • Add the snow peas to the pan and cook for 1-2 minutes, until slightly tender but mostly crisp, then add in the reserved cooked beef and broccoli and stir it all together for 1 minute. The stir fry is now ready! Enjoy with rice or noodles if desired.

10.5 oz Beef steak (( ribeye, rump, sirloin or tenderloin ) ( about 300 gram ))
2 cloves Garlic (( chopped ) about 1 tablespoon)

½ Bell pepper
½ Onion (( large sweet/white onion ))
3 Spring onion (( cut into 2" pieces ))
1 Fresh chilli (( cut thin slices ))

Steps:

  • Prepare all the vegetables buy cut them into thin slices and cut the beef steak into thin slices. Cut the beef against the grain to achieve the tender result. Marinade the beef slices with corn starch, sesame oil, sugar, baking soda and light soy sauce. Mix it well with hand and set aside for at least 10 to 15 minutes.
  • In a small mixing bowl add the oyster sauce, light soy, sesame oil, sugar, corn starch, white pepper and rice vinegar. Mix well until sugar and con starch dissolve in the sauce and set aside.
  • Heat the large wok/pan over medium-high heat, drizzle 2 tablespoons of vegetable oil and sear the beef for 2-3 minutes and stir through and cook for another 1-2 minutes.
  • Push the beef one side of the pan, drizzle 1 tablespoon of oil and add the onion, ginger, garlic and stir fry for few seconds.
  • Follow with the pepper slices and continue cook for another 1-2 minutes. Pour the sauce mixture in.
  • Add the spring onions and toss well to combine all ingredients and sauce evenly.
  • Remove from heat and transfer to serving plate. Garnish with fresh ginger shredded or chopped spring onions.
  • Serve over hot steamed rice, fried rice or noodles.

It's kept simple with minimal ingredients and also utilizes ones you may already have in your pantry, like dried ramen noodles. You can swap the NY strip steak for rib eye or sirloin.

1 head broccoli, cut into florets and stems peeled and sliced into 1/4-inch-thick coins
4 tablespoons canola oil
1 New York strip steak (10 to 12 ounces), 1 1/2 inches thick, thinly sliced
2 scallions, thinly sliced on a bias (whites and greens separated)
2 cloves garlic, minced
1-inch piece ginger, peeled and grated
1/2 yellow onion, sliced
2 tablespoons rice wine vinegar
1/4 cup oyster sauce
1/4 cup chicken stock
1 teaspoon chile paste, such as sambal
One 3-ounce package dried curly noodles, such as ramen

Steps:

  • Bring a pot of water to a boil and season generously with salt. It should be as salty as the sea. Prepare an ice bath and season generously with salt. Add the broccoli florets to the boiling water and cook for 2 to 3 minutes until bright green and tender, but still slightly crisp. Remove the broccoli and immediately plunge into the ice bath and set aside, but reserve the boiling water for the noodles later.
  • Heat 2 tablespoons of the canola oil in a large saute pan over medium-high heat until it shimmers. Season the steak with salt. Add the steak in batches to the pan and cook, turning occasionally, until brown and crispy, 2 to 3 minutes. Remove the steak from the pan and set aside. Repeat with remaining steak.
  • To the same pan, add the remaining 2 tablespoons canola oil. Add the scallion whites, garlic, ginger, onions and rice wine vinegar. Saute for 1 to 2 minutes. Add the oyster sauce, chicken stock and chili paste and stir to combine.
  • To the same pot of boiling water, add the noodles and cook according to package directions. Using tongs, remove the noodles and add directly into the saute pan with veggies. Add the broccoli florets and steak and toss to combine, ensuring the noodles, steak and broccoli are fully coated in the sauce. Mix in the broccoli stems. Plate and garnish with reserved scallion greens.

50 g young ginger
4 stalks scallion
2 tbsp vegetables oil, for stir frying

  • Put the beef in the freezer until it's half frozen.
