Steps:
- Preheat the oven to 400 degrees. Liberally grease a nonstick popover pan, or a muffin pan with 1/2-cup indentations, with softened butter.
- For the puffs, put the 2 tablespoons melted butter, eggs, milk, salt and sugar in a blender and whiz for a few seconds.
- Add the flour and whiz for 5 to 8 seconds, just until smooth.
- Divide the batter among 9 greased molds, filling each 1/2 to 2/3 full.
- Bake for 35 minutes, until the puffs are deep brown.
- Remove from the oven, wait a few minutes until cool enough to handle, then remove the puffs from the pans. You may need a small knife to help pry them out.
- Mix the sugar and cinnamon in a medium bowl. Thoroughly brush each puff all over with melted butter, then dredge in sugar and cinnamon mixture to coat completely. Let cool on a baking rack.

CREAM PUFF CHRISTMAS TREE
I've been cooking up a Cream Puff Christmas Tree regularly for almost 50 years now, and it always receives the same enthusiastic reaction from friends and family.

- In a large saucepan, bring water and butter to a boil over medium heat. Add flour and salt; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add the eggs, one at a time, beating well after each addition. continue beating until mixture is smooth and shiny., Drop by rounded teaspoonfuls 2-in. apart onto greased baking sheets. (You will need about 62 puffs to make the tree.) Use a moistened finger to smooth any peaks., Bake at 400° for 30-35 minutes or until golden brown. Transfer to wire racks to cool., For filling, in a large bowl, beat cream until soft peaks form. Gradually beat in sugar and rum extract if desired until stiff peaks form., Insert round tip #7 into a pastry or resealable plastic bag; fill with the whipped cream. With a sharp knife, cut a small slit in the side of each puff. Insert pastry tip into slits; fill each puff with whipped cream. Refrigerate for up to 2 hours., For icing, combine confectioners' sugar and enough cream to achieve desired consistency. Stir in food coloring if desired., To assemble tree: Separate puffs according to size and shape, choosing the flattest ones for the bottom layer and the smallest ones for the top. Spread the bottom of 18 puffs with icing. Place on the serving platter, forming a 9-in.-diameter solid circle. , For the second layer, spread icing on the bottoms of 18 puffs, then position above the space of the base layer of puffs. , Continue building tree in this manner using about 14 puffs in third layer, about seven puffs in fourth layer, about four puffs in fifth layer and one puff on top., To decorate: Insert round tip #7 into a pastry or resealable plastic bag and fill with remaining icing. Drizzle over tree. Trim with cherries if desired., The completed tree may be loosely covered with plastic wrap and refrigerated for up to 2 hours. Just before serving, dust with confectioners' sugar if desired.

CINNAMON PALMIERS
These pretty little cookies are similar to the bakery staples, but made with a flaky, homey, easier version of puff pastry. A liberal sprinkle of cinnamon and sugar in between the layers gives each cookie both sweetness and a hint of spice.

- Stir together flour and salt in a chilled large metal bowl. Coarsely grate frozen butter into flour, gently tossing to coat butter.
- Drizzle 5 tablespoons ice water evenly over flour mixture and gently stir with a fork until incorporated. Test mixture by gently squeezing a small handful: When dough has the proper texture, it will hold together without crumbling apart. If necessary, add another tablespoon water, stirring until just incorporated, and test again. (Do not overwork dough or add too much water, or pastry will be tough; dough will be lumpy and streaky.)
- Form dough into a 5-inch square, then chill, wrapped in plastic wrap, until firm, at least 30 minutes.
- Roll out dough on a floured surface with a floured rolling pin into a 15- by 8-inch rectangle (with a short side nearest you). Brush off excess flour and fold dough into thirds like a letter. Rewrap dough and chill until firm, at least 30 minutes.
- Arrange dough with a short side nearest you on a floured surface and repeat rolling out, folding, and chilling 2 more times. Brush off any excess flour, then halve dough crosswise with a sharp knife and chill, wrapped separately in plastic wrap, at least 1 hour.
- Stir together sugar and cinnamon, then generously sprinkle a clean work surface with some of cinnamon sugar and place 1 piece of chilled dough on top. Quickly roll out into a 16- by 12-inch rectangle (1/8 to 1/16 inch thick; if dough becomes too soft, chill on a baking sheet until firm). Trim edges with a sharp knife. Sprinkle top of dough evenly with some cinnamon sugar to cover completely, brushing off any excess. Fold 2 opposite long sides of pastry so they meet in center. Fold in same sides of pastry in same manner, then fold one half over the other (like a book) and press gently with a rolling pin to flatten slightly, forming a long rectangular log. Sprinkle with additional cinnamon sugar if dough is sticky.
- Chill on a baking sheet, uncovered, until firm, at least 30 minutes and up to 2 hours. Meanwhile, repeat with remaining piece of dough and cinnamon sugar.
- Preheat oven to 425°F with rack in middle. Line a large baking sheet with parchment paper.
- Cut 1 log of dough crosswise into 1/4-inch-thick slices with a sharp knife and arrange slices, cut sides down, 1 1/2 inches apart on baking sheet. Bake until puffed and golden around edges, 7 to 9 minutes. Remove from oven and turn palmiers over with a spatula. (If palmiers begin to unroll, gently press to reshape when cooled slightly.) Continue baking until golden all over and sugar is caramelized, 3 to 5 minutes more. Transfer as done (palmiers may not bake evenly) to a rack and cool. Make more cookies on cooled baking sheet lined with fresh parchment.

- Make the cream puffs: Preheat the oven to 400º. In a medium saucepan, combine the water, sugar, salt and butter. Bring to a simmer over medium-high heat.
- Transfer this mixture to the bowl of a stand mixer fitted with the paddle attachment and mix for 2 minutes to slightly cool down the dough. One at a time, add the eggs, making sure each one is completely incorporated before adding the next.
- Line 2 sheet pans with parchment paper and pipe 1-inch rounds of dough 1½ inches apart. The puffs will have a tail at the top where you piped them. Using a small bowl of water, dip your finger and smooth the tails for a perfectly round puff.
- Bake for 10 minutes, then rotate the trays and reduce the temperature to 375º. Continue to bake until golden brown and puffed, another 20 minutes. Let cool completely, then puncture a small hole in the bottom of each puff using a ⅛-inch star tip or paring knife.
- Make the spiced cream: In a large bowl, whisk all the ingredients together to stiff peaks. Transfer to a piping bag fitted with a ⅛-inch round tip. Fill each puff with spiced cream.
- Glaze and decorate the cream puffs: Place the white chocolate chips in a medium glass bowl. In a microwavable bowl, microwave the corn syrup on high until syrupy in viscosity, 1 minute.
- Begin glazing the cream puffs by dipping the top third into the glaze and scraping off any excess. Garnish with sprinkles while the glaze is wet, then let cool to set.
- Make the caramel: In a medium saucepan fitted with a candy thermometer, combine the sugar and water over high heat. Cook, stirring constantly until the sugar has dissolved, 2 minutes.
- Begin dipping the bottom of each cream puff and sticking it to the cone, using the sugar as glue. Continue this process, working from the bottom up, until all the cream puffs are attached to the cone.
