GRANDMA'S APPLE PIE
Steps:
- Preheat the oven to 375 degrees F.
- Roll 1/2 the short crust pastry to 1/4-inch thickness and cut out a 14-inch circle. Line a 9-inch pie plate with the pastry, trim away the excess and crimp the edge.
- Roll out the rest of the pastry to 1/4-inch thickness. Cut the pastry into 1/2-inch strips. On a piece of parchment paper or waxed paper weave the strips of pastry into a lattice that will cover the top of a 9-inch pie plate with 1-inch of overhang. Refrigerate the pie shell and lattice for at least 30 minutes.
- Meanwhile, cut the apple quarters into 1/4-inch thick slices. Toss the apples with the sugar, lemon juice, lemon zest, nutmeg, and salt. Whisk together the egg yolk and water to make an egg wash. Brush the inside edge of the pastry with the egg wash. Arrange the apples in the pie shell and dab the top with pieces of cold butter. Slide the lattice top over the apples. Press the pastry of the lattice firmly on the crimped edge to seal the 2 together. Brush the lattice with egg wash. Place the pie on a baking sheet and bake for 1 hour and 15 minutes.
- Sift the flour and salt into a large mixing bowl. Using a cheese grater, grate the butter and shortening into the flour. Combine the mixture with your fingers until it resembles cornmeal. Add the ice cold water and mix with a spoon, pulling the water into the flour until a dough forms.
- With your hands, shape the dough into 2 balls and flatten them into disks. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Store in the refrigerator for up to 4 days and in the freezer for up to 1 month.
GRANDMAS APPLE PIE SQUARES
This recipe was sent to me by my cousin Shirley in Florida. We both fondly remember grandmas wonderful apple squares. The bakerys sell it with a thick powdered sugar frosting...but not grandma.! - 1. In a bowl combine flour and salt. Cut in shertening until mixture resembles coarse crumbs. Add eggs and milk, mix to form dough. Chiull for 20 minutes. Divide dough in half, roll one half to fit the bottom of a 15x10 inch baking pan..Arrange apples over crust. Combine sugar, cinnamonn, nutmeg and corn flakes, sprinkle over apples. Roll out remaing dough to fit on top of apples. Seal edges, cut slits in top, brush with beaten egg white. Bake at 400 for 15 minutes. Reduce heat to 350 and bake for 25-30 minutes or until golden brown. Makes 16- 20 servings.

- Whisk 2 cups flour and salt together in a bowl. Cut shortening into flour mixture using a pastry blender or a fork until crumbly.

- For the crust and topping: Preheat the oven to 350˚. Spray a 9 x 13 inch baking pan with cooking spray. Line the pan with parchment paper. (This will make it easier to lift the pie bars out of the pan after baking.)
- Beat the butter, sugars, and vanilla in a large bowl with an electric mixer for 4-5 minutes, until combined and airy. Scrape down the sides and bottom of the bowl. Add the flour and salt to the bowl and mix at low speed until combined.
- With lightly moistened hands, press about 3/4 of the crust mixture along the bottom and slightly up the sides of your prepared pan. Refrigerate for 15 minutes. Place the remaining 1/4 of the crust mixture (about 1 1/2 cups) in the fridge until needed.
- Transfer the pan to the preheated oven and bake until the crust is golden brown, 20 to 25 minutes. Place on a wire rack to cool.
- For the filling: Toss the apple slices and vinegar together in a large bowl. Add the brown sugar, cornstarch, apple pie spice, and salt and toss well to coat. Spread the apples evenly over the crust, leaving a small border around the edges.
- Tear the reserved crust mixture into small pieces. Using your hands, combine the pecans with the dough and scatter the mixture evenly over top of the apples. Bake for 1 hour, rotating pan halfway through, until the apples are fork-tender and the topping is golden brown. Cool completely in the pan, about 1 to 2 hours
- For the glaze: Combine the maple syrup, butter, cream cheese, powdered sugar, and milk or cream in a medium bowl. Whisk until combined and smooth. Once the bars are cool, lift from the pan using the parchment paper overhang and place on a cutting board. Drizzle evenly with the glaze. Cut into squares and serve.

- Lightly grease 15 x 10 jelly-roll pan.
- Prepare Struesel Topping: in medium bowl, with hand, mix all topping ingredients until mixture comes together.
- Shape into a ball; cover and refrigerate.
- Prepare Shortbread Crust: in large bowl, combine flour, sugar, and salt.
- With pastry blender or 2 knives used scissor-fashion, cut in butter until mixture resembles fine crumbs.
- Sprinkle crumbs evenly in prepared pan.
- With hands, firmly pat crumbs into bottom of pan to form a crust.
- Bake crust 20 to 25 minutes or until lightly browned (crust may crack).
- Meanwhile, prepare Apple Filling: in 12-inch skillet, melt butter over medium heat.
- Add apples, raisins, sugar, and cinnamon, and cook 15 minutes or until apples are tender, stirring occasionally.
- In cup, mix cornstarch and lemon juice; stir into apple mixture until thickened (it will thicken almost immediately).

- Break struesel topping into 1/2-inch chunks, and scatter over apple mixture.
- Bake 30 minutes or until struesel is golden.
- Cool completely in pan on wire rack.
- When cool, cut lengthwise into 3 strips, then cut each strip crosswise into 6 pieces.
- Use wide metal spatula to lift and serve squares.

- Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.
- Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.
