Porridge image

This is a winter favorite of ours, that builds on a traditional British breakfast dish. We add sultanas, bananas and cinnamon and it's awesome.

1 cup rolled oats
2 ½ cups water
1 teaspoon salt
1 tablespoon white sugar
2 bananas, sliced
1 pinch ground cinnamon
½ cup cold milk

Steps:

  • In a saucepan, combine the oats, water, salt, sugar, bananas and cinnamon. Bring to a boil, then reduce heat to low, and simmer until the liquid has been absorbed, stirring frequently. Pour into bowls, and top each with a splash of cold milk.

Danish Christmas Rice Porridge image

This is a real Danish tradition for Christmas Eve and is served as a first course. When the porridge is almost cooked you make a ceremony, with everyone watching, of dropping one blanched almond in the pot. Whom ever finds the almond in their bowl wins a small present (Chocolate Santa, marzipan figure whatever) The kids love looking for the almond and of course have to eat their porridge in order to find it - no cheating by stirring the poridge in the bowl

2 pints milk
4 1/2 ounces short-grain rice
1/2 teaspoon salt
sugar
cinnamon

Steps:

  • Bring the milk to a boil in a heavy saucepan.
  • Add rice to the boiling milk, stirring.
  • Lower the heat, cover with a lid and gently cook the rice for about an hour.
  • Be very careful not to scorch the milk.
  • Add salt.
  • Serve the hot porridge with a pat of butter and sprinkle with cinnamon& sugar.

⅓ cup brown sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
2 Granny Smith apples - peeled, cored, and sliced 1/4 inch thick
¾ cup dried cranberries
¼ cup butter, cut into pieces
2 cups regular rolled oats
2 cups water
1 cup apple juice
1 cup cranberry juice
¼ teaspoon salt
¾ cup candied walnuts

Steps:

  • Mix the brown sugar, cinnamon, and nutmeg together in a bowl. Add the apples and cranberries, tossing to coat evenly with the sugar mixture. Pour into a slow cooker. Top with butter pieces.
  • Mix the oatmeal together with the water, apple juice, cranberry juice, and salt in a bowl, and pour over the apple mixture in the slow cooker. Do not stir. Cover, and cook on Low for 8 hours.
  • Stir before serving. Spoon into bowls and top with candied walnuts, if desired.
