1-1/4 pounds boneless skinless chicken breasts, cut into thin strips
1 tablespoon canola oil
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 package (16 ounces) frozen corn, thawed
1 can (14-1/2 ounces) diced tomatoes, undrained
1 medium onion, chopped
1 medium green pepper, chopped
1 medium sweet red pepper, chopped
1 can (4 ounces) chopped green chilies
1-1/2 teaspoons seasoned salt, optional
1 teaspoon ground cumin
1/2 teaspoon garlic powder

Steps:

In a large skillet, saute chicken in oil until lightly browned. Transfer to a 5-qt. slow cooker. Stir in the remaining ingredients., Cover and cook on low for 7-8 hours or until chicken and vegetables are tender. Stir before serving.

30 ounces chicken broth
15 ounces canned diced peeled tomatoes
4 ounces canned diced green chiles
16 ounces frozen corn, thawed
1 onion, chopped
4 chicken breasts, cut into strips
1/2 teaspoon garlic pepper seasoning
1 teaspoon ground cumin
seasoning salt

Steps:

Mix everything together in a 5 quart slow cooker. Cook on high for 1 hour.
Reduce heat to low for another 3-4 hours, or until the chicken is cooked.
Season with the seasoned salt to taste.

5 boneless chicken breasts
1 (15 1/2 ounce) can black beans
1 (10 ounce) jar salsa
1 (15 ounce) can corn
0.5 (15 ounce) package low-fat cream cheese

Steps:

Take 4-5 frozen, yes, frozen, boneless chicken breasts put into crock pot.
Add 1 can of black beans, drained, 1 jar of salsa, 1 can of corn drained.
Keep in crock pot on high for about 4-5 hours or until chicken is cooked.
Add cream cheese (just throw it on top!) and let sit for about 1/2 hour.
Enjoy!

2 tablespoons olive oil
8 ounces boneless chicken breasts, cut up
1 onion, chopped
2 garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon chili powder
1/8 teaspoon cayenne pepper
1 (14 1/2 ounce) can chicken broth
1 (15 ounce) can undrained corn kernels
1 (15 ounce) can black beans, rinsed and drained
1 (14 1/2 ounce) can Mexican-style tomatoes
18 inches corn tortillas, halved and cut in to strips
1 (8 ounce) container sour cream
1 cup cheddar cheese, shredded

Steps:

Heat oil to medium in large soup pot.
Brown meat, onion, garlic and spices.
Add all canned ingredients and bring to low boil.
Reduce heat and simmer 15 minutes.
Bake Tortillas at 450 degrees on baking sheet for 5 minutes - watch carefully so as not to burn.
Place a pile of chips in soup bowl. Ladle in soup, top with sour cream and cheese.

3 lbs boneless chicken breasts
16 ounces salsa
15 ounces corn
15 ounces black beans
2 tablespoons cilantro

Steps:

Empty salsa into a slow cooker/crock pot.
Mince Cilantro and place 2 Tblsp into crock pot (optional).
Empty Corn and Black beans into crock pot.
Set Crock pot to Low for 8 hours, or high for 4 hours.
Serve chicken with the corn & black beans on the side, and enjoy.

1 medium onion
1 (15 1/2 ounce) can kidney beans, Drained and rinsed
1 (15 1/2 ounce) can black beans, Drained and rinsed
1 1/2 cups frozen corn
1 (15 ounce) can tomato sauce
1 (14 1/2 ounce) can diced tomatoes with green chilies or 2 (14 1/2 ounce) cans diced tomatoes with green chilies
1 (1 1/4 ounce) envelope taco seasoning
4 boneless skinless chicken breasts
Tabasco sauce
1 cup chicken broth, less if you want a thinner soup consistency

Steps:

Combine all ingredients except chicken and broth (if using) in slow cooker.
Lay chicken on top and cover.
Cook on low for 6-8 hours or on high 3-4 hours.
Before serving remove and shred chicken. Chicken broth can be added at this point if a thinner consistency is desired.
Cook 30 minutes longer on low.
Can be served with rice, cheese, sour cream, tortilla chips.

This soup has a good chili flavor and is simple to pull together even when the refrigerator is looking pretty bare. I do substitute fresh ingredients when I have them and the time to prepare them, but I list canned ones here for convenience (and they do taste pretty good anyhow!). I leave the seeds in my chili pepper, but take them out if you want a milder taste, and adjust the seasonings accordingly as well. This soup is very flexible - it's a good way to use up leftover chicken, beans and corn, and I believe you could use ground beef or turkey or TVP in this just as easily as chicken breast. I found a 6 can soup recipe on the web, but I altered it so much that it became something new, and this is the result.

4 garlic cloves, minced
1/4 teaspoon ground cayenne pepper
1 teaspoon ground cumin
1 teaspoon chili powder
1 1/2 tablespoons dried parsley
2 tablespoons fresh lime juice
fresh ground black pepper, to taste
monterey jack cheese (optional) or monterey jack pepper cheese (optional)
sour cream (optional)
tortillas (optional) or corn chips (optional)

Steps:

Drain and rinse the beans and place in a 6 quart crock pot.
Add the chicken, corn, and tomatoes with their juices to the beans.
Add the remainder of the ingredients and stir.
Cover and cook on low for 6 hours or more.
We like this better the second day, and really don't think it can be overcooked!
Serve the soup in large bowls and top with cheese, sour cream, and/or chips, if desired.

Place the onion, garlic, cilantro, peppers, jalapeño peppers, white beans, black beans, diced tomatoes, beer, chicken stock, salt and pepper and taco seasonings (paprika, cumin, chili powder, oregano, coriander, and liquid smoke if using) into the slow cooker then stir to blend all the ingredients together. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients.
Next, add the cream cheese to the crock pot and whisk or stir it in until it’s thoroughly blended with the soup.
