Steps:
- Combine flour and salt in a large bowl. Add butter and shortening; rub in with cold fingers until mixture resembles fine bread crumbs. Mix in sugar and orange zest thoroughly. Mix in vanilla extract. Stir in enough orange juice to bring dough together.
- Knead dough briefly to form a smooth ball. Wrap in plastic wrap; refrigerate until firm, at least 1 hour.
- Preheat oven to 350 degrees F (175 degrees C).
- Roll dough out on a lightly floured work surface to a thickness of 1/8 inch. Cut out 12 circles using a 2 1/2-inch cutter and 12 circles using a 1-inch cutter.
- Line 12 mini tart pans or a muffin tin with the 2 1/2-inch dough circles. Cover dough with about 1 tablespoon mincemeat filling. Lay 1-inch circles on top.
- Bake in the preheated oven until tops are pale golden brown, 17 to 21 minutes. Cool slightly on wire racks, about 10 minutes. Dust with confectioners' sugar before serving.

These are absolutely the best pies I guess I've ever tasted except a chocolate and coconut. I used to make these every Christmas and my aunt and uncle loved them so much I always made 1 for everyone and my uncle loved it so much, I would make him one to eat all by himself.

Steps:
- In a medium sauce pan, mix together, cherries, crushed pineapple, sugar, flour & food coloring----cook until thick----let cool. Add 1 box orange jello, cut-up bananas & pecans. Let all of this cool. I set it in the fridge to cool.
- Pour into baked pie crusts and top each pie with whipping cream. Keep in fridge.
- I use real whipping cream...pour it into a bowl and beat with electric mixer until thick...add a little sugar and taste and see if it's sweet enough.

- To make the pastry, combine the flour, butter, sugar and salt in the bowl of a food processor with the blade attachment fitted. Pulse until the mixture resembles fine breadcrumbs, then add the eggs. Run the mixer until the pastry begins to clump together, then turn out onto the benchtop.
- Knead the pastry very briefly until smooth, then form into a disc and wrap in cling film. Chill until ready to use.
- To make the fruit mince, combine all ingredients except the alcohol in a medium saucepan. Heat gently, stirring constantly until the sugar has dissolved and the suet has melted. Simmer very gently for 10 minutes, stirring regularly to make sure the mixture doesn’t catch.
- When the fruit mince has cooked, stir through the brandy or rum and set aside to cool for at least 30 minutes.
