2 tablespoons EVOO
2 tablespoons butter
1 pound crimini or button mushrooms, sliced
3 to 4 cloves garlic, finely chopped
2 shallots, finely chopped
A few sprigs each fresh sage and thyme, finely chopped
Salt and freshly ground black pepper
2 tablespoons tomato paste
About 1/3 cup marsala or dry sherry
2 cups tomato passata or puree
1 cup chicken stock
1/2 cup heavy cream
2 cups poached chicken, in bite-size pieces
1 pound rigatoni
Freshly grated Parmigiano-Reggiano

Steps:

  • Heat the EVOO in a deep skillet over medium-high heat, add the butter and melt into the oil. Add the mushrooms and brown well. Add the garlic, shallots, herbs and some salt and pepper, and cook for 2 to 3 minutes more. Then add the tomato paste, stir 1 minute more. Add the marsala, stir. Add the passata, stock and cream, and combine. Add the chicken and simmer over low heat to thicken. Adjust seasoning. Cool and store for a make-ahead meal.
  • Bring a pot of water to boil for the pasta, salt the water and cook the rigatoni to al dente. Reserve a cup starchy water, then drain. Toss the pasta with the sauce and add the starchy water as needed if the mixture seems dry or tight. Serve topped with Parmigiano-Reggiano.

8 ounces penne pasta
1 lb boneless skinless chicken breast, cut into bite-size strips
1/4 teaspoon salt
1/8 teaspoon black pepper, freshly ground
2 tablespoons olive oil, divided
3 large garlic cloves, minced
3 cups fresh mushrooms, sliced
1 medium onion, thinly sliced
1/2 cup chicken broth
1/4 cup dry white wine
1 cup cherry tomatoes, halved
1/4 cup basil leaves, shredded
3 tablespoons fresh oregano, snipped
1/4 cup parmesan cheese, grated

Steps:

  • Cook pasta according to package directions. Drain and return to saucepan and keep warm.
  • Meanwhile, season chicken with salt and pepper. Heat 1 tablespoon of the oil in a large skillet over medium-high heat. Add chicken and garlic and cook, stirring, about 5 minutes or until chicken is tender and no longer pink. Remove from skillet and keep warm.
  • Add remaining olive oil to skillet. Cook mushrooms and onion in hot olive oil until just tender, stirring occasionally.
  • Carefully add chicken broth and white wine.
  • Bring to boiling, reduce heat and boil gently, uncovered, about 2 minutes or until liquid is reduced by half.
  • Remove skillet from heat. Add cooked pasta, chicken, cherry tomatoes, basil and oregano to mushroom mixture and toss to coat.
  • Transfer to a serving dish and sprinkle with Parmesan cheese and freshly ground pepper.

2-3 boneless chicken breasts (thinly sliced)
1/2 cup white onion (chopped)
3 cups sliced mushrooms ((8 oz))
1 Tbsp butter
2 Tbsp olive oil (divided)
salt

1/2 cup white wine
1/2 cup chicken stock
1/2 cup heavy cream
1 tsp corn starch
1 Tbsp water
1 Tbsp chopped fresh or frozen parsley

Steps:

  • In a large skillet heat 1 tbsp oil and 1 tbsp butter together at medium-high temperature. Season the thinly sliced chicken with salt and pepper. When the pan is hot and the butter melted fry chicken until browned and cooked through about 2 minutes each side. Take cooked chicken out of the pan and set aside.
  • In the same pan add 1 tbsp oil and cook the onion until lightly browned, about 2-3 minutes. Add the sliced mushrooms and cook until tender, about 2 minutes.
  • Add white wine to the pan and let simmer until reduced by half.
  • Add chicken stock and cream. In a small bowl combine corn starch and water. Stir until starch is completely dissolved then add to the sauce. Bring to a boil and let simmer without a lid at high heat for about 2-3 minutes to reduce and thicken.
  • Add the cooked chicken back to the pan and cook for 30 more seconds.
  • Stir in parsley and season to taste with salt and pepper.
  • Serve over pasta.

Creamy One-Pot Pasta With Chicken and Mushrooms image

Cooking pasta the way you would make risotto may sound new and hip. But it's at least old enough to have been demonstrated to me in Rome in 1976, and I imagine as old as pasta itself. In this method, the liquid is minimized: there's no need for a gallon per pound of pasta. The liquid is added gradually to the pasta, which absorbs it completely and thereby retains its starch. This makes the pasta creamy and rich; it also gains the flavor of the stock. You can use pretty much any pasta shape you like, but timing will vary depending on size. This approach may seem like more work than making pasta in the ordinary way. But as the making of the "sauce" is integrated into the pasta-cooking, it really becomes a one-dish meal - as interesting as risotto, and even a bit quicker. Here is a combination of gemelli with mushrooms and chicken to get you started.

1 shallot or small onion, chopped
1 tablespoon minced garlic

Steps:

  • Put 2 tablespoons olive oil in a large, deep skillet over medium heat. When hot, add shallot, garlic and mushrooms. Cook, stirring occasionally, until mushrooms soften and begin to brown on edges, about 10 minutes. Add pasta and cook, stirring occasionally, until it is glossy and coated with oil, 2 to 3 minutes. Add a little salt and pepper, then wine. Stir and let liquid bubble away.
  • Ladle stock into skillet 1/2 cup or so at a time, stirring after each addition and every minute or so. When liquid is just about evaporated, add more. Mixture should be neither soupy nor dry. Keep heat at medium and stir frequently.
  • Begin tasting pasta 10 minutes after you add it; you want it to be tender but with a tiny bit of crunch. When pasta is about 3 to 4 minutes away from being done, add chicken and stir to combine. Continue to cook until chicken is done - it will be white on inside when cut - and pasta is how you like it. Taste, adjust seasoning, garnish with parsley and Parmesan if using, and serve.

3/4 pound bowtie pasta
1 pound chicken tenders, white tendons removed, halved lengthwise and again crosswise
2 tablespoons butter
1 pound small white button mushrooms, stems trimmed, halved
1/2 cup dry white wine
1/2 cup heavy cream
1/2 cup chopped fresh parsley

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Reserve 1/4 cup pasta water; drain pasta, and return to pot.
  • Meanwhile, season chicken generously with salt and pepper. In a large skillet, melt butter over medium-high heat. Add chicken; cook, turning once, until cooked through, about 5 minutes. Transfer to a plate.
  • Add mushrooms to pan; season with salt and pepper. Cover; cook over medium heat until mushrooms release their liquid, about 5 minutes. Uncover; cook, stirring, until liquid has evaporated, 3 to 5 minutes more. Add wine; cook, stirring, until evaporated, 2 to 3 minutes.
  • Reduce heat to low. Add cream and chicken; stir to coat. Transfer to pot with pasta; add parsley and pasta water (if desired). Toss to combine. Season again with salt and pepper; serve immediately.

1 chicken breast
1 cup mushroom, sliced
1 tbsp ginger paste
1 tsp garlic paste

vegetable oil
1 and a half cups milk
1 tbsp butter
dried parsley

Steps:

  • Marinate the sliced chicken breast in ginger and garlic paste and salt for ten minutes. Fry the chicken for two minutes each side. After that, remove the chicken from the pan and add the mushrooms and fry for a minute.
  • Boil the pasta in a saucepan and drain the water when it turns soft.
  • In another pan, pour the milk in low heat and melt the butter in the milk. Then add the mushrooms and chicken in that and add the pasta. Cook it till the pasta turns creamy. Sprinkle finely chopped parsley on the pasta.

Steps:

  • Heat 2 tablespoons olive oil in a large pot on medium heat. Add chicken, salt and pepper, and brown - make sure to cook through. Set chicken aside.
  • Add 1 tablespoon olive oil and the onion into the pot and stir. Cook down for 1-2 minutes.
  • Add mushrooms and garlic, and stir to incorporate with the onion. Season with salt and pepper to taste as well as thyme and paprika. Stir to evenly season.
  • Add chicken broth and heavy cream to the pot and stir. Bring to a boil, then add the farfalle pasta.
  • Cook according to package instructions, being sure to stir every 1-2 minutes to keep the pasta from clumping together. (Cook time may be a little longer in this recipe than when the pasta is boiled in water.)
  • When the farfalle pasta is al dente, add the spinach and chicken and stir until the spinach cooks down and incorporates.
  • Add parmesan and stir until it's well-incorporated and you're left with a smooth sauce.

1/2 lb chicken thighs (, boneless, skinless, chopped)
1/4 cup sun-dried tomatoes (, drained of most oil, chopped)
1/4 teaspoon red pepper flakes

3 garlic cloves (, minced)
1/2 cup basil pesto
1 cup milk
1/4 teaspoon salt (and more)
8 ounces penne pasta ((use gluten free for gluten free version))
fresh basil (chopped)

Steps:

  • Heat olive oil in a large skillet on medium heat. Add chicken (chopped up) with sun-dried tomatoes (chopped into smaller bites) to the skillet, sprinkle with red pepper flakes. Saute for about 1 minute on medium heat.
  • Add sliced mushrooms (add another 1 tablespoon olive oil if needed) and saute for about 2 more minutes (or a little bit more), until chicken is cooked through and mushrooms are softened.
  • Add garlic, basil pesto, milk, and 1/4 teaspoon of salt. Bring to boil, immediately reduce to simmer and simmer, stirring until everything is well combined. Remove from heat. Taste, and add more salt, if needed.
  • Cook pasta according to package instructions. Drain. Add cooked pasta to the sauce, reheat.

8 ounces dry pasta (I used Toscani-shaped pasta)
Kosher salt
1/3 cup extra virgin olive
1 tablespoon butter
2 shallots (minced)
5 garlic cloves (minced)
8 ounces Baby Bella Mushrooms (sliced)
8 ounces white mushrooms (sliced)
8 ounces portabella mushrooms (roughly chopped)
black pepper
1 teaspoon rosemary
3 tablespoons of tomato paste
¼ cup merlot wine
½ cup of grated Parmigiano-Reggiano (Parmesan)
½ cup packed parsley
1/3 cup chopped walnuts
Red pepper flakes to taste (optional)

Steps:

  • Cook the pasta to al dante in boiling salted water according to box instructions. Keep 1 cup of the pasta cooking water then drain the pasta.
  • In a large skillet, heat the olive and butter over medium-high heat, add the shallots and garlic and cook, tossing regularly for 2 to 3 minutes (manage the heat so that the garlic does not burn).
  • Add all the mushrooms and toss them around in the pan for a couple of minutes, adding another drizzle of extra virgin olive oil. Season with a good pinch of kosher salt, black pepper and the rosemary. Cook the mushrooms for about 7 to 10 minutes, tossing occasionally, until they turn color and release their juices.
  • Add the tomato paste, wine and about ½ to 3/4 cup of the pasta cooking water. Cook over medium heat for about 4 to 5 minutes (this becomes your mushroom pasta sauce).
  • Add the cooked pasta to the mushroom sauce. Toss to combine. If needed add a little bit more of the pasta cooking water.
  • Stir in Parmesan cheese and finish with a sprinkle of parsley, walnuts and red pepper flakes. Serve immediately!

2 teaspoons extra-virgin olive oil
1 small onion, chopped
8 oz. button mushrooms, sliced
2 cloves garlic, minced
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1 (1 lb.) box penne pasta (whole wheat, regular or gluten free are fine)
3 cups low-sodium chicken broth
4 oz. plain cream cheese (I use 1/3 reduced fat)
2 cups shredded mozzarella cheese
1 (10 oz.) bag frozen peas, thawed
2 cups cooked, shredded chicken (see notes)
1/4 cup fresh parsley, chopped (optional)
Shredded Parmesan cheese (optional)

Steps:

  • Heat olive oil in a large pot over medium heat. Add onion and mushrooms and saute for 7-8 minutes, until onions are tender and the mushrooms have released most of their liquid.
  • Add garlic, salt and pepper and saute for another 30 seconds.
  • Add pasta and chicken broth and bring to a boil.
  • Cover, reduce heat to medium-low and cook for 8-10 minutes, until most of the liquid is absorbed and the pasta is nearly cooked. I lift the lid and stir it once or twice during the cooking time so the pasta gets moved around and can cook evenly.
  • Add cream cheese and mozzarella cheese and stir until melted and well combined. You can add an extra splash of chicken broth if needed to get everything to mix well.
  • Add thawed peas and shredded chicken and stir to combine. Turn off heat, cover and let sit for a few minutes.
  • Taste and adjust seasonings.
  • Serve with fresh chopped parsley and Parmesan cheese (if using).

  • Bring a large pot of water to a boil. Add pasta and cook until just tender, 4 to 6 minutes or according to package directions. Drain and rinse.
  • Meanwhile, whisk 5 teaspoons flour and broth in a small bowl until smooth. Place the remaining flour in a shallow dish. Season chicken with 1/4 teaspoon salt and pepper and dredge both sides in the flour.
  • Heat 2 teaspoons oil in a large nonstick skillet over medium heat. Add the chicken and cook until browned and no longer pink in the middle, 2 to 3 minutes per side. Transfer to a plate; cover and keep warm.

1/2 ounce porcini mushroom
1 cup hot water
2 tablespoons butter, divided
1 shallot, finely diced
2 garlic cloves, minced
1 teaspoon fresh thyme, chopped
1 tablespoon extra virgin olive oil
8 ounces boneless skinless chicken breasts, sliced into strips
1 cup whipping cream
1/2 cup chicken stock
1/2 cup rye whiskey
1 cup frozen peas, thawed
1 cup cherry tomatoes, halved
salt and pepper
1 cup parmesan cheese, grated plus extra for garnish

Steps:

  • Soak porcini mushrooms in hot water for 20 minutes.
  • Remove mushrooms from water and set aside. LIne a strainer with a coffee filter and strain soaking water. Reserve 1/2 cup.
  • In a large sauté pan over medium heat, melt 1 tablespoons of the butter. Add shallot and cook for 2-3 minutes until translucent.
  • Add garlic, mushrooms and thyme. Cook for 1 minute. Remove from heat and set aside.
  • Heat olive oil and remaining butter in pan over medium heat. Add chicken and cook for about 5 minutes until cooked through. Remove from heat and add to mushroom mixture.
  • Add cream, reserved porcini water, chicken and whisky to pan. Cook until liquid has reduced by half to a medium-thick consistency and lightly coats a spoon.
  • Meanwhile bring a large pot of water to a boil. Add 1 tablespoons salt to water, Cook pasta, uncovered, until tender, 8-10 minutes. Drain well.,.
  • Add mushroom mixture, peas, cherry tomatoes, Parmesan cheese and pasta to pan. Toss to combine. Season with salt and pepper. Serve with additional Parmesan.

1 teaspoon dried basil
Salt and pepper, (to season)
1 tablespoon olive oil, (divided)
1 medium yellow onion, (chopped)
4 cloves garlic, (minced (or 1 tablespoon minced garlic))
1/3 cup dry white wine, ((or chicken stock/broth))
8 ounces (250 g) brown or Cremini mushrooms, (sliced)
1 quart (1 litre) chicken broth, ((or stock))
12 ounce (375 ml) can evaporated milk*
1/3 cup milk
Extra salt and pepper, (to taste)
10 ounces (300 g) uncooked penne pasta ((just over 4 cups))
1 cup fresh grated parmesan cheese
A handful of fresh parsley, (chopped)

Steps:

  • Season chicken thighs with dried basil, salt and pepper. Heat 2 teaspoons of oil in a large saucepan or pot over medium-high heat. Add the chicken thighs and sear on both sides until golden brown, cooked through and no longer pink. Remove and set aside.
  • Add the remaining oil to the pot. Fry the onion and garlic until the onion becomes transparent, stirring occasionally (about 2 minutes). Pour in the white wine and allow to simmer for 5 minutes, or until beginning to reduce down.
  • Add the mushrooms and cook for a further 3 minutes, while stirring occasionally. Then, add the broth, milks (or cream if using), salt and pepper, and bring to a gentle simmer. Add the pasta and simmer until pasta is al dente, about 15 minutes, while stirring occasionally.
  • Stir in the parmesan cheese until it melts through the sauce. Remove from heat and allow to sit for 5 minutes to allow the sauce to thicken. Slice the chicken into strips and stir through the pasta.
  • Garnish with fresh parsley and extra parmesan, if desired

250 gr button mushrooms (chopped)

4 portions fettuccine (cooked)
1/2 cup parmesan (to serve)
fresh basil (to serve)

Steps:

  • Heat the olive oil in a saucepan and brown the chicken. Set aside.

  • Add the tomatoes, cover and simmer for 15 minutes.
