GREEN BEANS ALMONDINE
No matter how much I make, it's never enough and it couldn't be simpler to make. Even those who hate veggies love this green bean almondine!

Steps:
- Place beans into a microwave-safe casserole dish with enough water to cover the bottom. Microwave on high power until almost tender, 8 to 10 minutes. Drain in a colander and refresh under cold running water to keep the nice green color.
- Heat a frying pan over medium heat. Add almonds and cook until just starting to turn golden, about 5 minutes, watching closely so as to not burn. Take pan off of heat and add butter to melt. Return to heat and add garlic. Mix in green beans, season with salt and pepper, and continue to stir until heated through, 5 to 7 minutes.

GREEN BEANS ALMONDINE
This green beans almondine recipe is one of my favorite ways to serve green beans. It's so simple to make, and it's absolutely delicious. The toasted almonds offer the perfect crisp, nutty contrast to the tender green beans. A squeeze of lemon juice takes it all over the top.

- Bring a large pot of salted water to a boil and set a large bowl of ice water nearby. Drop the green beans into the boiling water and blanch for 2 minutes. Drain, and immediately immerse in the ice water to stop the cooking process. Drain, and transfer to a towel to dry.
- Heat a cast-iron skillet over medium heat. Add the almonds to the dry skillet and toast until golden brown, 2 to 3 minutes. Remove the almonds from the pan and set aside.
- Add the oil to the pan (turn down the heat down if necessary), then add the shallot and the salt and sauté for 2 minutes. Add the green beans and sauté, 2 to 4 more minutes, until the green beans are warmed through and tender. Remove the pan from the heat, add the garlic and lemon juice and toss. Season to taste with salt and pepper and transfer to a serving dish. Top with the almonds and serve.

Saute 1/4 cup sliced almonds in butter in a skillet over medium heat until golden, 2 minutes; add a pinch of nutmeg. Stir in the beans and 2 tablespoons water; season with salt and pepper. Cook, stirring, until warmed through, 2 minutes.

- Trim green beans and slice into 2-inch sections.
- In a large nonstick skillet, heat margarine over medium-high heat.
- Add green beans and sauté 1 to 2 minutes, stirring constantly so beans cook evenly.
- Add broth, oregano, and pepper; sauté for 20 to 30 seconds.
- Add onions. Cook, covered, over medium-low heat for 6 to 8 minutes, or until beans are tender-crisp.
- Meanwhile, in a small nonstick pan over medium heat, dry-roast almonds, stirring occasionally, for 2 to 3 minutes.
- Sprinkle bread crumbs and almonds over cooked beans and serve.
