4 tablespoons unsalted butter
1 large onion, thinly sliced
1 jalapeno, diced (seeds removed if desired)
2 garlic cloves, finely chopped
1/4 lb fresh chorizo sausage, removed from the casing
3 tablespoons all-purpose flour
2 teaspoons chili powder
1/2 teaspoon ground cumin
12 ounces mexican lager beer
1/4 cup whole milk
4 cups shredded monterey jack cheese (about 1 pound)
1/2 cup loosely packed fresh cilantro leaves, roughly chopped, plus more for garnish
tortilla chips, for serving

Steps:

  • Heat a medium skillet over medium heat. Add 1 tablespoon of the butter, the onion, jalapeno and garlic. Cook, stirring occasionally, until the vegetables soften and begin to caramelize, about 20 minutes. Remove from the heat.
  • Heat 1 tablespoon of the butter in a large saucepan over medium heat. Add the chorizo and cook, breaking it up with the side of a spoon, until well browned, about 5 minutes. Add to the cooked vegetables in the skillet using a slotted spoon. Set aside.
  • Wipe out the saucepan the chorizo cooked in and return it to medium heat. Add the remaining 2 tablespoons butter. When the butter has stopped foaming, stir in the flour, chili powder, and cumin and stir until the flour is absorbed. Whisk in the beer and milk. Bring to a simmer and cook, stirring frequently, until slightly thickened, about 5 minutes. Remove from the heat and stir in the cheese, stirring until completely melted.
  • Transfer the cheese deep to a warmed serving dish, fondue pot or a small slow cooker set to warm or low. Stir the chopped cilantro leaves into the chorizo-onion mixture and dollop it on top of the melted cheese. Garnish with more cilantro leaves. Serve with tortilla chips.

Steps:

  • Heat medium cast iron skillet or some other over-safe pan over high heat. When hot, add vegetable oil.
  • Add chorizo, white onion, green bell pepper, red bell pepper, cilantro, jalapeno and chili powder. Sauté until soft, approximately 2-3 minutes. Remove from heat.
  • Heat oven broiler to high heat.
  • Sprinkle cheese evenly over chorizo and vegetable mixture. Don't attempt to stir it, it will get clumpy.
  • Place under broiler for 3-4 minutes or until cheese is melted, brown and bubbly.
  • Remove and top with the juice of one fresh lime, diced tomatoes, and additional cilantro, if desired. Serve with tortilla chips!

1 tablespoon vegetable oil (plus more to grease the baking dish)
1/3 pound Mexican chorizo (casings removed, coarsely chopped)
1 tablespoon unsalted butter
1/4 white onion (halved and thinly sliced (about 1 cup))
1 poblano chile (roasted, sweated, peeled, cut into strips)
1 ripe Roma tomato (cored, seeded, cut into small dice)
1/4 teaspoon kosher or sea salt (or to taste)
1 pound (or 4 cups) combination of shredded Mexican-style melty cheeses
8 to 10 flour or corn tortillas
1 ripe avocado (sliced)
Serve with salsa of your choice (optional)
Pair with Gran Centenario Añejo Tequila (neat or on the rocks)

Steps:

  • Heat the oil in a medium skillet over medium-high heat. Once hot, add the chorizo, cook for 4 to 5 minutes, breaking it into smaller pieces with a couple of spatulas or wooden spoons until crisp and brown. Remove from the heat and scrape into a bowl.
  • Set a rack on upper third tier of the oven and preheat to 450 degrees Fahrenheit.
  • Return the skillet to medium heat, add the butter and once it melts, add the onions. Cook, stirring occasionally and scraping the bottom of the pan, for 6 to 7 minutes, until they have wilted and begun to brown around the edges. Add the poblano pepper strips, tomato, and salt, and cook for another 3 to 4 minutes. Remove from the heat and transfer to a bowl.
  • Place shredded cheese in a gently oiled shallow baking dish that can comfortably hold it. Bake for 12 to 15 minutes, or until completely melted. Remove from the oven. Top with the crispy chorizo and poblano rajas mixture. Place back in the oven and bake for another 7 to 8 minutes, until cheese is oozing and browned along the edges and part of the top.
  • Meanwhile, preheat a comal or large skillet over medium-low heat. Heat the tortillas, making sure they are not on top of each other, until completely warmed, puffed and slightly browned. Place in a tortilla warmer or wrap in a clean cloth or kitchen towel.
  • Remove the queso from the oven and place on the table along with the warm tortillas, ripe avocado slices, and salsa of choice, if desired. Let everyone assemble their tacos!

Steps:

  • Heat a small skillet over medium-high heat. Add the chorizo and cook, stirring, until browned, 4 to 5 minutes.
  • In a medium bowl, mix the jalapeño, cilantro, scallions and salt. Add the cheese and toss well.

1 tomato, chopped
1 serrano chile, seeds and membranes removed, chopped
2 tablespoons chopped cilantro
Salt to taste
8 ounces Oaxaca cheese, grated
4 ounces Sharp Cheddar cheese, grated
4 ounces Monterey Jack cheese, grated
1 tablespoon flour
1 teaspoon olive oil
5 ounces fresh chorizo, casings removed
1 medium onion, finely chopped
1/2 cup lager beer, plus more if necessary

Steps:

  • In a small bowl, mix the tomato, serrano chile and cilantro. Season with salt and let it stand for at least 30 minutes, while you prepare the queso.
  • In a medium bowl, toss the grated cheeses with the flour. Reserve.
  • Add the olive oil to a medium-sized skillet and bring it to the stove over medium heat. Cook the chorizo, breaking it up with a wooden spoon, until it starts to brown, about 2 minutes. Then, add the onions and continue cooklng until the chorizo is fully cooked and the onions are soft and translucent. Remove (with a slotted spoon) from the skillet into a separate bowl.
  • In a medium cast iron pan, over medium heat, add the beer and let it simmer. When simmering, start to add the cheese, slowly. Whisk constantly and only add the next handful of cheese once the previous one has melted.
  • Once all the cheese has melted and is smooth, stir back in the chorizo/onion mixture.
  • Optional: For a bubblier version with some delicious browned spots, simply pop the queso into the (preheated) broil for about 5 minutes. Check often to prevent the cheese from overcooking.
  • Using a slotted spoon, spoon the salsa over the queso.
  • Serve as a dip with tortilla chips or with soft tortillas.

Steps:

  • Preheat oven to 350 degrees. Place a skillet over medium heat, add the oil if using. Most Mexican chorizos have enough fat and won't need the vegetable oil. Add the chorizo and cook, stir frequently to cook evenly and avoid it from sticking to the bottom. It'll take about 6-7 minutes to cook.
  • Once cooked, remove the excess fat from the skillet or place the cooked chorizo over a paper towel to absorb the fat.
  • Place the chorizo in an oven proof dish, setting aside 2 tablespoons to garnish when ready to serve. I divided the chorizo and cheese into 2 small clay pots, but you can use a large oven proof dish.
  • Place the grated cheese over the chorizo and bake for about 10-12 minutes or until the cheese is melted and bubbling. Do not overcook or it will have a chewy texture.
  • Remove form oven and place over a heat proof surface. Serve warm with salsa and plenty of flour tortillas or tortilla chips.

1/2 small onion, chopped
1 garlic clove, minced
1 jalapeno, seeded and diced
2 ounces chorizo sausage

6 small flour tortillas

Steps:

  • Preheat oven to 400 degrees. Place an 8 inch casserole in oven while preparing the fundido.
  • Heat oil in skillet over medium high heat until slightly smoking. Add onion, garlic and pepper and cook for one minute stirring constantly.
  • Add chorizo and break up while coooking for about 10 minutes.
  • Remove the casserole from oven. Spread the cheeses over hot bottom of dish. Return the dish to oven and bake until cheese is just melted, about five minutes.
  • Remove from oven and sprinkle chorizo mixture over top. Return to oven and heat for about three minutes.

1/4 cup chopped onion
1 large clove garlic, minced

  • Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.
  • In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onions and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.

1/4 cup chopped pickled jalapeno, plus 1 tablespoon pickling juice
3/4 cup milk
4 ounces Monterey Jack cheese, finely diced (about 1 cup)
4 ounces whole-milk mozzarella, finely diced (about 1 cup)
2 tablespoons chopped cilantro
Warmed tortilla wedges, tortilla chips, bell pepper triangles or French fries, for dipping

Steps:

  • Cook the chorizo, stirring, in a medium skillet or a flameproof gratin dish over medium-high heat until golden, about 5 minutes. Remove with a slotted spoon and pour off any excess rendered fat, reserving about 1 tablespoon in the pan. If there is less than 1 tablespoon, add enough olive oil to make 1 tablespoon.
  • Reduce the heat to medium and cook the onions, stirring occasionally, until soft, 5 to 6 minutes. Add the garlic and cook, stirring, until fragrant, about 30 seconds. Sprinkle in the flour and cook, stirring, until the flour is golden, 1 minute. Pour in the beer and bring to a boil. Stir in the chopped jalapenos and pickling juice and cook 2 minutes. 8 oz. Oaxaca Cheese, freshly grated
8 oz. Monterey Jack Cheese, freshly grated
1 large poblano pepper
1 cup diced white onion
1 tbsp avocado oil
8 oz. Mexican Chorizo
Fresh cilantro
2 Roma tomatoes, diced
Tortilla chips and/or warmed tortillas

Steps:

  • Put oven on high broil, and place a whole poblano pepper on a small sheet pan. Broil until it's charred on each side (about 10 minutes total). Remove from oven and cover with foil, allow the pepper to steam for 5 minutes, this helps the skin easily peel off. Peel the skin off the poblano pepper, then dice, discarding the seeds.
  • Preheat oven to 400F degrees
  • In a cast iron skillet, over medium/high heat, add in the chorizo. Cook the chorizo fully through, breaking it up into smaller pieces as it cooks. Use a slotted spoon and set aside.
  • Lower the heat to medium, add in avocado oil, diced onion and roasted poblano peppers. Sauté until the onion becomes translucent, about 4 minutes. Add onion and poblanos to the chorizo bowl and mix together.
  • Turn the heat off and add half the grated cheese to the bottom of the skillet evenly. On top of the cheese, add in the chorizo, onion, poblano mix, and evenly spread. Add the rest of the cheese on top.
  • Place in the oven for 8-10 minutes, until the cheese is browned and bubbling.
  • Remove from the oven, garnish with cilantro and roma tomatoes, and serve immediately in the cast iron skillet.
  • Use tortilla chips or scoop the queso fundido into warmed tortillas. Enjoy!

9 oz beef or pork mexican chorizo
1 1/2 tsp olive oil
1 small yellow onion chopped
2 clove garlic minced
10 oz oaxaca cheese grated (mexican melting cheese)
6 oz pepper jack cheese grated
3/4 c diced tomato
1 small jalapeno minced
1/3 c chopped cilantro

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. Cook the chorizo over medium heat; drain the fat off. Plate the cooked chorizo. Add oil to the same skillet and cook the onion over medium heat for 3-4 minutes. Add garlic and cook for 1 minute; stirring constantly. Plate the onions and garlic.
  • 3. Sprinkle half of the cheese in the bottom of a casserole dish or use the same skillet you cooked the chorizo and onion in if it is oven safe. Add the chorizo on top of the cheese reserving 2 tablespoons for the top. Top with the remaining cheese. Add the reserved cooked chorizo.
  • 4. Bake for 10-15 minutes or until cheese is melted. Over baking it can leave it hard on the top making it difficult to eat with chips or spoon on to tortillas.
  • 5. Garnish with tomatoes, jalapenos and cilantro. Serve with warm tortillas or tortilla chips.

This queso fundido with Oaxaca cheese, Monterey Jack, roasted poblano pepper, and Mexican chorizo, is the ultimate party dip.

Number Of Ingredients 9

8 oz. Oaxaca Cheese, freshly grated
8 oz. Monterey Jack Cheese, freshly grated
1 large poblano pepper
1 cup diced white onion
1 tbsp avocado oil
8 oz. Mexican Chorizo
Fresh cilantro
2 Roma tomatoes, diced
Tortilla chips and/or warmed tortillas

Steps:

  • Put oven on high broil, and place a whole poblano pepper on a small sheet pan. Broil until it's charred on each side (about 10 minutes total). Remove from oven and cover with foil, allow the pepper to steam for 5 minutes, this helps the skin easily peel off. Peel the skin off the poblano pepper, then dice, discarding the seeds.
  • Preheat oven to 400F degrees
  • In a cast iron skillet, over medium/high heat, add in the chorizo. Cook the chorizo fully through, breaking it up into smaller pieces as it cooks. Use a slotted spoon and set aside.
  • Lower the heat to medium, add in avocado oil, diced onion and roasted poblano peppers. Sauté until the onion becomes translucent, about 4 minutes. Add onion and poblanos to the chorizo bowl and mix together.
  • Turn the heat off and add half the grated cheese to the bottom of the skillet evenly. On top of the cheese, add in the chorizo, onion, poblano mix, and evenly spread. Add the rest of the cheese on top.
  • Place in the oven for 8-10 minutes, until the cheese is browned and bubbling.
  • Remove from the oven, garnish with cilantro and roma tomatoes, and serve immediately in the cast iron skillet.
  • Use tortilla chips or scoop the queso fundido into warmed tortillas. Enjoy!
