1 (10 oz.) container grape tomatoes, halved or quartered
4 ounces fresh mozzarella cheese, cubed
1/2 cup fresh basil leaves, (I used about 25 small leaves), torn
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar, (or balsamic glaze)
sea salt, to taste ( I like pink himalayan)

Steps:

  • In a medium bowl, toss together the cut up tomatoes, mozzarella, and basil leaves.
  • Add olive oil to bowl, and lightly toss together.
  • Drizzle the balsamic vinegar over the top of salad.
  • Sprinkle salt as desired.

8 ounces fresh mozzarella cheese, cut into 1/2 inch pieces (1 cup)
3 tablespoons extra virgin olive oil
2 tablespoons shallots, minced
2 garlic cloves, minced
salt and pepper
1/2 fresh basil leaf
1 1/2 lbs grape tomatoes, cut in half lengthwise
2 romaine lettuce hearts, quartered lengthwise and cut into 1/2 inch pieces (12 ounces)
1/4 cup kalamata olive, pitted, chopped
3 tablespoons red wine vinegar

Steps:

  • 1. Combine mozzarella, oil, shallot, garlic, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a bowl. Coarsely shop half of basil leaves and add to mozzarella mixture; set aside while preparing tomatoes. Combine tomatoes and 1 teaspoon salt in separate bowl; transfer to colander set in sink and let drain for 15 minutes, stirring occasionally. (Tomatoes can be prepared up to an hour in advance).
  • 2. Tear remaining basil leaves into 1/2-inch pieces. Gently toss tomatoes, romaine, olives, vinegar, mozzarella mixture, and basil together in large bowl. Season with salt and pepper to taste, serve.

Flaky sea salt
2 pounds mixed medium and large tomatoes, preferably heirloom, cut into thin slices and/or wedges
8 ounces buffalo mozzarella or mozzarella, room temperature, torn into pieces
Coarsely ground black pepper
Small basil leaves and toasted country bread (for serving)

Steps:

  • Toss cherry tomatoes with 1 Tbsp. oil in a small bowl; season with salt.
  • Arrange tomato slices on a platter, slightly overlapping; season generously with salt. Arrange mozzarella over tomatoes; lightly season mozzarella with salt. Spoon cherry tomatoes over salad and drizzle with 6 Tbsp. oil; season with pepper. Let stand 30 minutes to let flavors meld and release juices from tomatoes and mozzarella.

ITALIAN CAPRESE CHOPPED SALAD - BAKED IN THE SOUTH
I made this salad for a recent cookout. Although the taste was delicious, the Mozzarella Cheese pieces turned a brown color after adding the Balsamic Vinegar. Looked nothing like the picture. Thank goodness I had some diced cheese left over and sprinkled that over the top to make the dish look more like the picture.
