CHOCOLATE WAFFLE TURTLE COOKIES

These cookies are made in a waffle iron, then are topped with a chocolate glaze and pecans to form a rich dessert. This recipe comes from the Triangle Ranch B&B in South Dakota.

1 cup butter or margarine, melted
1 ½ cups granulated sugar
4 eggs, lightly beaten
½ cup unsweetened cocoa powder
2 teaspoons vanilla
2 cups all-purpose flour
¼ cup butter
3 tablespoons water
3 tablespoons unsweetened cocoa powder
1 ½ cups powdered sugar
1 teaspoon vanilla
½ cup caramel ice cream topping
1 cup chopped toasted pecans (optional)

Steps:

  • Preheat waffle iron to medium-high (if temperature settings are available). In a large bowl, stir together melted butter, granulated sugar, eggs, 1/2 cup cocoa powder and 2 teaspoons vanilla. Add flour; stir just until combined.
  • Drop heaping teaspoonfuls of batter into center of each waffle grid. Bake about 2 minutes, adjusting heat as necessary. Using a fork transfer cookies to rack; cool. Repeat with remaining batter.
  • In a small saucepan, heat 1/4 cup butter and the water over low heat until melted. Add the 3 tablespoons cocoa and stir until smooth. Remove from heat. Beat in powdered sugar and the 1 teaspoon vanilla. Stir in additional hot water, if needed, to reach drizzling consistency. Drizzle over cookies along with caramel topping. Sprinkle with pecans, if you like.

The best part of these crispy-on-the-outside, soft-in-the-middle- cookies is they're ready in a snap; no oven preheating required. We prefer thicker waffle irons for these cookies, but if your iron is thinner, be sure to adjust your timing so they'll cook faster.

1 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 stick unsalted butter, at room temperature
1/2 teaspoon pure vanilla extract (see Cook's Note)
1 large egg
1/2 cup semisweet chocolate chips
Nonstick cooking spray

Steps:

  • Whisk together the flour, baking soda and salt in a medium bowl. Beat the sugars and butter with an electric mixer on medium-high speed until light and fluffy, about 5 minutes. Beat in the vanilla and egg until incorporated. Adjust the speed to medium-low and add the flour in 2 batches, mixing until incorporated. Mix in the chocolate chips. Refrigerate the dough for at least 30 minutes if time allows.
  • Preheat a waffle iron to medium-low. Generously spray the top and bottom of the waffle iron with cooking spray. Scoop tablespoons of the dough, roll into balls and flatten slightly. Working in batches, place 1 dough round onto each section of the waffle iron, close gently and cook until slightly crisp, 3 to 6 minutes.
  • Serve the cookies warm or store in an airtight container at room temperature for up to 1 day.

¼ cup unsweetened cocoa powder
3 tablespoons vegetable oil
1 egg
½ cup semi-sweet chocolate chips
1 ¼ cups water
1 cup chopped pecans
1 whipped cream, for topping
1 maraschino cherry, for topping
¾ cup brown sugar
3 tablespoons butter
½ cup heavy cream
1 salt, Large pinch

Steps:

  • In a large mixing bowl, combine waffle mix, egg, oil, cocoa powder, and chocolate chips. Stir until mixture is smooth.
  • In a small saucepan over medium-low heat, combine ingredients for caramel sauce and bring to a low boil, whisking constantly once mixture starts to boil. Continue to whisk until mixture darkens slightly and begins to thicken. Remove from heat and let cool for at least 30 minutes.
  • Preheat a greased waffle iron. Pour ½ cup of waffle mix into the iron, then top with ¼ cup of pecans and a few tablespoons of caramel. Cover that with another half cup of waffle mix. Close waffle iron and cook according to manufacturer directions.
  • When waffle is cooked to desired crispness, remove to a plate. Top with more pecans, a drizzle of caramel, a dollop of whipped cream, and a cherry on top.

Steps:

  • Cookies:.
  • Combine chocolate squares and 1/2 cup butter in the top of a double boiler. Bring the water to a boil; reduce heat to low, and cook until the chocolate and butter melt, stirring occasionally. Set aside.
  • Combine eggs, sugar, and vanilla in a medium mixing bowl; beat at medium speed of an electric mixer until blended. Add flour and reserved chocolate mixture. Mix well.
  • Preheat waffle iron. Drop dough by 2 teaspoonfuls onto iron. Close iron, and bake for 1 to 1 1/2 minutes or until done. Let cool on wire racks. Continue cooking cookies until your dough is gone.
  • Top with frosting once they are cool.

The cookies were featured in Chocoaltier magazine, and editor in chief Barbara Albright was on "Live" on the Kathy and Regis show to demonstrate this chocolaty treat. It ended up in Cooking with Regis and Kathy Lee Cookbook and now here it is for you!

1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 1/2 tablespoons instant espresso powder (I grind coffee beans in the coffee grinder)
2 teaspoons pure vanilla extract
12 ounces semisweet chocolate, coarsely chopped
4 ounces unsweetened chocolate, coarsely chopped
1/4 cup unsalted butter, cut into 4 pieces
1 1/2 cups granulated sugar, divided
4 large eggs, lightly beaten (at room temperature)
2 cups coarsely chopped walnuts (or pecans)
12 ounces about 2 cups semi-sweet chocolate chips
2 cups pecan halves, for decoration

Steps:

  • Preheat the oven to 350°F.
  • Line two baking sheets with parchment paper or aluminum foil.
  • In a medium bowl, stir together the flour, baking powder, and salt.
  • In a small cup, dissolve the espresso powder in the vanilla extract.
  • In the top of a double boiler over hot, but not simmering water, melt the coarsely chopped chocolates with the butter, stirring frequently until smooth.
  • Transfer the chocolate mixture to a large bowl. Using a wire whisk, stir in 1/2 cup of the sugar. Gradually stir in the eggs. Mix in the remaining 1 cup of sugar and the espresso/vanilla mixture. Stir in the flour mixture. Stir in the chopped nuts and chocolate chips.
  • Using a 1/4 cup measuring cup, drop the dough onto the prepared baking sheets, leaving about 2 inches between cookies. Insert 5 pecan halves around the bottom of each cookie to represent the "turtle's" 4 legs and head.
  • Bake the cookies, 1 baking sheet at a time, for 10-12 minutes, or until the cookie's tops start to crack. Do not overbake; the cookies should be soft and fudgy.
  • Cool the cookies on the sheets, set on a wire rack.
  • Store in an airtight container for up to 5 days. These cookies freeze well.
