CHOCOLATE SALAMI

Steps:
- Put the chocolate in a medium heatproof bowl and heat in the microwave in 30-second intervals, stirring in between, until completely melted and smooth, about 3 minutes. In another medium bowl, cream together the granulated sugar and butter with an electric hand mixer until smooth, about 3 minutes. Beat in the melted chocolate, coffee and cocoa powder until thoroughly combined, scraping the bowl as needed. Stir in the biscotti, pistachios and walnuts.
- Pour the chocolate mixture onto a large piece of plastic wrap and shape into a log about 2 inches in diameter and 12 inches long. Roll until the log is completely covered in plastic and refrigerate until firm, about 1 hour.
- When ready to serve, remove the chocolate salami from the plastic wrap and dust with the confectioners' sugar. Wrap with butcher's twine for an authentic salami look.

- Most boxes of vanilla wafers are approximately 11 oz each. For this recipe, you'll need to use 1 and 1/2 packages of vanilla wafers.
- In a large bowl, mix the melted butter, cocoa and a can of condensed milk.
- Add the crushed cookies to the bowl and mix to combine.
- Scoop out part of the mixture onto parchment paper or aluminum.
- Shape the cookie mixture into the shape of a log and wrap it tightly inside the parchment paper or aluminum foil.
- Chill in the refrigerator or the freezer. When you're ready to serve, sift some powdered sugar over the Chocolate Salami and slice into pieces.
- Cook time is how long you want to chill the chocolate roll.

- Microwave chocolate and butter in large microwaveable bowl on HIGH 1 min.; stir. Repeat microwaving and stirring in 15-sec. intervals until chocolate is completely melted and mixture is well blended.
- Add nuts and broken wafers; mix well.
- Refrigerate 1-1/2 hr. or until chocolate mixture is firm.
- Roll chocolate mixture into 9-inch log; wrap tightly with plastic wrap. Refrigerate 1 hr.
- Place unwrapped chocolate log on plate; sprinkle evenly with powdered sugar.
- Cut into 16 slices to serve.

Steps:
- 1. Blend crackers and nuts in a food processor. To that add the raisins.
- 2. In a separate bowl melt chocolate , butter and milk in the microwave. To that add cocoa, vanilla and amaretto.
- 3. Combine the wet with the dry ingredients and mix well. Divide the mixture on two and place on plastic wrap. Form it in a shape of salami and refrigerate overnight.

- Place biscuits in a large ziplock bag and crush them using a rolling pin until you have small and coarse crumbs. Transfer crumbs to a large bowl and stir in nuts.
- In a medium bowl place chocolate and butter. Heat in the microwave or in a double boiler until melted and smooth. Add milk and alcohol, if using, and stir. Add chocolate mixture to crumb mixture and mix until combined.
- Spread the mixture out on parchment paper or plastic wrap and shape it into a log using a spatula or spoon. Roll up the paper and wrap it like candy. Place in the fridge for several hours until firm.
- After chilling, remove log from the paper, dust with icing sugar from all sides, and remove any excess sugar with a brush—or your fingertips if you don’t mind getting messy. Cut into pieces and serve.
