SUGARED WALNUT SUNDAES IN CHOCOLATE CUPS
Steps:
- Sugared Walnuts: In a deep saucepan, combine the sugar, water, orange zest and cinnamon and bring to a boil. Add the walnuts and simmer, stirring, as the water evaporates. The glaze will be shiny and transparent at first, then turn opaque as the water cooks away. When the nuts are completely coated with sugar crystals, they are done. Spread them out on a sheet pan to cool. (To wash the saucepan, soak it overnight.) The walnuts can be made up to 2 weeks in advance and stored in an airtight container.
- Sundae Cups: Spread the toasted walnuts out on a plate. Dip the rims of 6 coffee cups or mugs into the melted chocolate, then into the chopped walnuts. Turn them right side up and set aside. Dip 6 teaspoons in the chocolate and sprinkle with chopped walnuts. Let the cups and spoons cool at room temperature until set, about 2 hours. The cups can be made up to 2 days in advance.
- To assemble sundae, scoop ice cream into each chocolate-dipped coffee cup and pour espresso over it. Top with a dollop of whipped cream and sugared walnuts. Place the cup on the saucer and rest a chocolate-dipped spoon alongside.
CLASSIC HOT FUDGE SUNDAE
There is a reason a hot fudge sundae is such an enduring classic: That combination of warm, rich chocolate fudge mixing with frozen ice cream and melting it slightly is absolutely irresistible. Of course, if you have homemade fudge sauce and homemade ice cream, it gets even better. Vanilla ice cream is the standard here, but feel free to use your favorite flavor, or a combination of flavors. And if you like nuts, by all means use them here. The added crunch is marvelous against all the rich creaminess.

Steps:
- In a medium saucepan over medium heat, bring the cream, sugar, corn syrup or honey, cocoa, and salt to a simmer, whisking until the sugar dissolves and the mixture thickens slightly, about 5 minutes.
- Stir in the chocolate and let cook until the chocolate melts. Stir in butter and vanilla or liquor. Let cool slightly. Contrary to its name, hot fudge is best served warm, not piping hot.
- For assembly, make the whipped cream. Using a whisk or an electric mixer, beat the cream, sugar, and vanilla until soft peaks form.
- Pour a little fudge sauce into the bottoms of sundae dishes or bowls. Top with ice cream, then more hot fudge, then nuts if using. Cover all with whipped cream and a cherry if you like. Serve.

CHOCOLATE WAFFLE SUNDAES WITH FLAMBéED CHERRIES
This recipe is a take on the beloved flavor combination of chocolate and cherries, but with booze thanks to the rum flambeed cherry topping. Flambee refers to lighting the rum on fire, which burns off the alcohol while still imparting a rich flavor into the cherries and syrup. Don't forget to serve with ice cream for the ultimate waffle sundae!

Steps:
- Make the waffles: Put the milk in a medium microwave-safe bowl and microwave until warm, about 1 minute. Remove 1/2 cup of the warm milk to a small bowl, sprinkle the yeast on top and set aside until foamy, 5 to 10 minutes. Stir the cocoa powder into the remaining 1 cup warm milk and set aside 5 minutes.
- Whisk the egg, vegetable oil, sugar and vanilla into the cocoa mixture. In a large bowl, whisk the flour and salt, then add the egg-cocoa mixture and the yeast mixture and stir until combined. (It's OK if there are some lumps.) Fold in the chocolate chips. Cover and set aside until the batter is almost doubled in size, 1 to 2 hours.
- Preheat the oven to 250˚ F. Heat a waffle iron to medium high. Brush with melted butter, then add 2/3 cup to 1 cup batter and cook until crisp, 3 to 4 minutes. Remove to a baking sheet, then repeat to make more waffles. Transfer the baking sheet to the oven to keep the waffles warm.
- Make the flambéed cherries: Combine the cherries, sugar, cinnamon stick, salt and water in a large skillet and bring to a simmer over medium heat, stirring. Cover, reduce the heat to medium low and cook, swirling the pan occasionally, until the cherries are softened, 4 to 7 minutes. Remove the pan from the heat and pour in the rum. Return to medium-high heat and carefully tilt the pan to ignite the rum, then swirl the pan until the flame burns out. Reduce the heat to medium and continue to simmer until the sauce coats the back of a spoon, 2 to 3 minutes. Add the butter and swirl the pan until melted.
- Divide the waffles among plates. Top each with a scoop of ice cream, then spoon the cherries and sauce on top.

Steps:
- To make the blondies:
- Preheat oven to 325°F. Lightly coat a 13x9" baking dish with nonstick spray. Whisk buckwheat flour, almond flour, and salt in a medium bowl to combine.
- Cook butter in a medium saucepan over medium-low heat, stirring often, until it foams, then browns, 5-8 minutes. Transfer to a large bowl; let cool slightly. Add sugar and whisk until smooth. Whisking constantly, add egg yolks one at a time followed by whole egg, beating after each addition to fully incorporate before adding more. Add dry ingredients and mix until smooth. Scrape batter into prepared dish; smooth top.
- Bake blondies until lightly browned and center is firm when gently pressed, 15-20 minutes. Transfer dish to a wire rack and let cool. Cut into 16 bars.
- To make the sundaes:
- Preheat oven to 350°F. Toast walnuts on a rimmed baking sheet, tossing once, until golden brown, 5-8 minutes. Let cool slightly; place in a heatproof jar or airtight container.
- Heat sugar and 1 cup water in a medium saucepan over medium, stirring, until sugar dissolves. Let cool slightly; then pour over walnuts. Seal jar and let sit at least 12 hours and up to 1 day.
- Pour walnuts into a fine-mesh sieve set over a clean medium saucepan and let syrup drain into saucepan, tossing walnuts to shake off excess. Transfer walnuts to a medium bowl. Reserve sieve.
- Add sliced fennel and lemon zest to syrup; scrape in vanilla seeds and add pod. Bring to a simmer over low heat. Cook, stirring occasionally, until fennel is translucent and tender, 20-25 minutes. Discard pod; let fennel cool in syrup.
- Fit another medium saucepan with thermometer; pour in oil to come 2" up sides of pan. Heat oil over medium-high until thermometer registers 350°F. Add powdered sugar to walnuts and toss to coat. Place in reserved sieve and shake off excess sugar. Carefully add walnuts to oil and cook, turning with a spider or slotted spoon to prevent sticking, until brown and crisp, about 3 minutes. Transfer to a parchment-lined rimmed baking sheet; let cool. Break up any clumps.
- Scoop gelato into bowls. Top with ground cherries, blondies broken into large pieces, walnuts, candied fennel, and fennel fronds.
- Do Ahead
- Blondies can be made 2 days ahead. Store tightly covered at room temperature.
- Walnuts can be fried 2 days ahead. Let cool; store airtight at room temperature. Fennel can be candied 2 days ahead. Let cool in syrup; transfer to an airtight container and chill.
