I really love KFC Coleslaw and I have tried several recipes. This one is the best by far. Its nice and creamy and really compliments a good Barbecue dish. This can be made with splenda instead of sugar.

- Shred the cabbage fine using the fine disk for the shredder attachment to the mixer. Shred the carrot the same way. Mix together cabbage, carrot and onion.
- In a bowl combine the buttermilk, mayonnaise, milk and lemon juice with a whisk until well combined. Add the salt and pepper. Add the sugar to the sauce until well mixed in . Add the sauce to the cabbage and carrot mixture and mix well and allow the mixture to marinate for 13 hours in the refrigerator.
- I have used Splenda sweetener in the place of sugar, and it was great.

COPYCAT KFC COLESLAW: THE REAL THING
I am an avid collector of recipes. A young lady, a former KFC employee, was looking at my recipes one evening when she discovered this one. She told me that the recipe was close, but that I should remove the vinegar and lemon juice and replace them with tarragon vinegar. Tarragon vinegar is the secret. - ADD the following DRESSING ingredients into a large bowl: 1/2 cup real mayonnaise, 1/2 cup milk, 1/3 cup sugar, 1/4 cup Miracle Whip, 2 teaspoons cider vinegar, 2 teaspoons pineapple juice, 1 teaspoon lemon juice, 1/4 teaspoon coriander powder, 1/4 teaspoon salt (or to taste).
- CUT 1-2 small wedges of white onion, each to the size of a garlic clove; PLACE onion wedge into garlic press; SQUEEZE onion pulp and juice to measure 1 teaspoon; ADD to other ingredients in bowl.
- WHISK together DRESSING ingredients until smooth, creamy and opalescent, using a wire whisk.
- CHOP COLESLAW ingredients to specifications, using a food processor if desired (4 cups cabbage should be cut to approximately 1/4 inch pieces; 1/3 cup carrots should be cut to approximately 1/8 inch thick x 1/4 inch long pieces.
- ADD prepped COLESLAW ingredients into large bowl containing DRESSING.
- BLEND all ingredients together until combined.
- COVER and refrigerate at 4 hours to overnight (I like it best the second day).
- COMBINE coleslaw well before serving.

JUST LIKE KFC COLESLAW - COPYCAT
I copied these ingredients from the KFC coleslaw container years ago. Yes, they did list Miracle Whip, not mayo! It always goes quick, but I never get any compliments when I bring it as a dish to pass because they all think that I just picked it up from KFC and put it in my own bowl! I use the bags of coleslaw mix from the produce section of my store and chop it in the food processor, but you can use a 1 lb head of cabbage, and a couple of carrots instead if you wish.

- If you are lucky enough to have a food processor, get it out of your cupboard. Start to cut up the cabbage and place it in the processor. While cutting up the cabbage, also cut up small slices of green pepper, onion, and carrot and add to the processor.
- Mixing up the ingredients this way will help distribute the flavors throughout the slaw. You may want to use a little less of the onion, or green bell pepper, but do use all of the carrot.
- If you do not have a food processor, no problem, simply chop the cabbage, onions, and carrots into small pieces. Add chopped green bell pepper if desired.
- Now mix Miracle Whip, vinegar, oil, and sugar until you have a smooth mixture. The taste should be sweet with just a hint of vinegar.
- Amount of dressing may be increased or decreased according to the amount of slaw you are making. Add to cut up veggies and mix well. Let stand at least one hour to let flavors mix.
