PUMPKIN SPICE OATMEAL

Pumpkin Spice Oatmeal image

Loaded with fiber from the oats and pumpkin, this warm, spiced oatmeal offers up a hearty, comforting breakfast. Even though we like it made with whole milk for a rich and creamy taste, it is equally delicious made with 1 or 2 percent milk. Make a large batch and thin it out with a little milk or water before reheating for a speedy morning meal.

Provided by Food Network Kitchen

Time 25m

Yield 6 servings

Number Of Ingredients 9

One 15-ounce can pure pumpkin puree
2 cups milk, plus more for serving
1/2 cup dried cranberries or raisins
1/4 cup light brown sugar (packed), plus more for sprinkling
1 teaspoon pumpkin pie spice
1 teaspoon pure vanilla extract
Kosher salt
2 cups old-fashioned rolled oats
Pepitas (toasted pumpkin seeds), for serving

Steps:

  • Whisk the pumpkin puree, milk, 2 cups of water, the dried cranberries, brown sugar, pumpkin spice, vanilla and a large pinch of salt together in a medium saucepan. Bring to a simmer over medium heat, then add the oats and reduce the heat to medium-low. Gently simmer, stirring frequently, until the oats are tender and the oatmeal is the consistency you like, 10 to 15 minutes (15 minutes for very thick oatmeal).
  • Ladle the oatmeal into bowls and serve drizzled with milk and sprinkled with a little extra sugar and pumpkin seeds.

SPICY ZUCCHINI OATMEAL COOKIES

Spicy Zucchini Oatmeal Cookies image

In my efforts to use the abundance of zucchini in my garden I concocted this little cookie. I prefer my oatmeal cookies to have a little jazz, so if you are not a fan of ground cloves, they can be omitted. It's a not too sweet cake-like cookie that is perfect with your cup of coffee or tea.

Time 30m

Yield 30

Number Of Ingredients 11

1 ¼ cups all-purpose flour
½ teaspoon baking soda
1 ½ teaspoons ground cinnamon
¼ teaspoon ground cloves
½ cup butter, softened
⅔ cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup quick cooking oats
1 cup shredded zucchini
½ cup raisins

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Grease baking sheets.
  • Stir together the flour, baking soda, cinnamon, and cloves in a bowl; set aside. Beat the butter and brown sugar with an electric mixer in a large bowl until creamy. Add the egg and the vanilla extract. Mix in the flour mixture and oats until just incorporated.
  • Wring the zucchini in a clean towel to remove any excess moisture. Stir the zucchini and raisins into the dough; mixing just enough to evenly combine. Drop batter by rounded teaspoonfuls 2-inches apart onto the prepared baking sheets. Bake for 14 to 16 minutes or until the bottom edges turn golden brown.

Categories     Breakfast

Time 10m

Yield 1-2 serving(s)

1 cup milk
1/2 cup old fashioned oats
2 teaspoons cocoa powder
2 teaspoons sugar (younger audiences may prefer 3 tsp to make it sweeter)
salt
chocolate chips (optional)
fruit (optional)
nuts (optional)

Steps:

  • Heat milk and a pinch of salt in a small saucepan over medium heat until begining to simmer.
  • Reduce heat and add oats, cocoa and sugar.
  • Simmer over low heat, stirring occasionally until thickened.
  • If you want your oatmeal thick or watery, this is where you determine the consistency- don't stop until it's pretty much at the consistency you would like.

  • Remove cover, stir and serve.
  • Garnish with chocolate chips, nuts, and/or fruit if desired.

A hearty and healthy sweet breakfast. Full on chocolate flavor high in fiber and perfect for grab and go mornings.

Provided by Loren | Fed and Nourished

Categories     breakfast

Time 35m

Yield 8

Number Of Ingredients 10

2 cups of gluten free quick cooking rolled oats (see notes)
3 tablespoons of cocoa powder, unsweetened
2 tablespoons of ground chia seeds (see notes)
6 tablespoons of water
1 cup of full fat coconut milk (from a can)
1/3 cup of pure maple syrup
1/2 teaspoon of cinnamon
1/8 teaspoon of salt
1 teaspoon of baking powder
optional: chocolate chips for topping

Steps:

  • Preheat oven to 350°F and prepare an 8x8 inch square baking pan by lining with parchment paper.
  • If you do not have ground chia seeds, grind chia seeds in a coffee or spice grinder. I would grind about 1/4 cup whole seeds and save any extra in the fridge in a sealed container.
  • Place ground chia seeds in a small bowl and add the water. Stir to combine and set aside to gel up. They will be a very thick gel like consistency when ready.
  • In a large mixing bowl, add the dry ingredients. This includes the oats, baking powder, salt, cocoa powder, and cinnamon. Whisk to combine.
  • Add wet ingredients into the bowl with the dry ingredients. This includes the milk, maple syrup and the ground chia seed gel.
  • Use a large mixing spoon and stir to combine ingredients. Pour into the prepared baking pan and spread evenly.
  • Bake for 25-30 minutes or until the oatmeal is springy in the center when touched. Do not overbake. If you want to add chocolate chips to the top, sprinkle desired amount on the oatmeal the last
  • Let cool for 15 minutes in pan before slicing. Slice into 8 large bars (or you pick the size) and serve warm or cold.
  • Store in the fridge in a sealed container up to 5 days. minutes of cooking.

30 WAYS TO SPICE UP SNOOZY OATMEAL - GREATIST

From greatist.com
Estimated Reading Time 6 mins
  • Pumpkin Pie Oatmeal. With varying degrees of success, pumpkin everything—lattés, donuts, fritters, soup, ale, etc.— is trotted out in the Fall. But unlike Pumpkin Spiced Oreos, this seasonal treat is a sure winner.
  • Carrot Cake Oatmeal. The name alone makes the decadent dessert sound like a healthy option, but carrot cake’s nutritional potential is often undercut by sugar-loaded frosting.
  • Sweet Potato Oatmeal Casserole. Dubbed “the heartier cousin of pumpkin,” sweet potato gets showcased in this recipe as a baked oatmeal casserole. A handful of melted marshmallows on top bring it into autumnal overdrive.
  • Apple Pie Baked Oatmeal. Pie is a great breakfast optional when it’s full of simple, wholesome ingredients (like fiber-rich apples). Try this classic American dessert for breakfast, lunch, or dinner.
  • Pumpkin Spice Steel Cut Oatmeal. This recipe is a perfect collision of pumpkin pie and oatmeal. To make it last all week (trust us, you’ll want to), prepare a large batch of oats over the weekend and simply heat up single-servings when hunger strikes.
  • Baked Squash Oatmeal. Another delightful, squash-filled dish, this rustic recipe makes moderate use of spices and sweeteners for a wholesome, down-to-earth meal.
  • Carrot Cranberry Oatmeal. Not all fall dishes feature squash. Here, cranberries and a splash of lemon (or orange juice) amp up the vitamin C and give this recipe a refreshing, tart kick.
  • Cannoli Oatmeal. With the decadent filling of a ricotta cheese and chocolate chips, this inventive recipe turns humble oatmeal into everyone’s favorite Italian pastry.
  • Indian-Spiced Oatmeal. A pinch of saffron, ground cardamom, and nutmeg give this dish a taste of India and a nutritional boost while at it. With the right balance of milk, it resembles a rich bowl of kheer (Indian rice pudding).
  • Kimchi and Fried Egg Oatmeal. There are countless ways to make savory oatmeal, but this Korean-influenced version provides a lot more flavor than the go-to egg and cheese combo.
