White Chocolate and Peanut Butter Sweet and Saltine image

Nonstick cooking spray, for the pans
30 to 40 saltine crackers
2 sticks (1 cup) unsalted butter
1 cup light brown sugar
1/2 cup creamy peanut butter
8 ounces white melting wafers

Steps:

  • Preheat the oven to 425 degrees F. Line 1 large or 2 small jelly roll pans with aluminum foil, then spray with nonstick spray and arrange the saltines salt-side down in a single layer.
  • Melt the butter and brown sugar together in a medium saucepan and boil until it turns a caramel color, a few minutes. Remove from the heat and pour over the crackers, covering them evenly. Put the peanut butter in a microwave-safe bowl and microwave just until slightly loosened, about 20 seconds. Drizzle evenly over the caramel and spread with a small offset spatula. Bake, watching carefully, until just bubbly, 3 to 5 minutes.
  • Put the melting wafers in a microwave-safe bowl and melt according to package directions. Spoon dollops over the peanut butter caramel and smooth evenly with an offset spatula. Transfer the pan to the fridge or freezer until completely cold, then break up into pieces. Store in an airtight container at room temperature.

Steps:

Break up into pieces. Store in an airtight container.

Steps:

  • Line a 15x10x1-in. baking pan with heavy-duty foil. Arrange saltines in a single layer on foil; set aside., In a large heavy saucepan over medium heat, melt butter. Stir in sugar. Bring to a boil; cook and stir for 1-2 minutes or until sugar is dissolved. Pour evenly over crackers., Bake at 350° for 8-10 minutes or until bubbly. Immediately sprinkle with chocolate chips. To some, this may sound odd, but I grew up on this simple treat. Sweet and salty is one of my favorite combos. Use your favorite saltines and chocolate frosting for this. Serving size is totally approximate, as it depends on how much frosting you like on each saltine and how many saltines each person eats. Makes a great snack or dessert. Kid- and adult-friendly.

1 cup dark brown sugar
2 cups semisweet chocolate chips
¾ cup chopped pecans

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Line cookie sheet with saltine crackers in single layer.
  • In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.

1 cup all-purpose flour
¼ cup unsweetened cocoa powder
1 teaspoon baking powder
½ teaspoon sea salt
½ cup butter, cut into chunks
¾ cup semisweet chocolate chips
⅔ cup brown sugar
½ cup white sugar
2 eggs
1 teaspoon vanilla extract
1 tablespoon sea salt, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 2 large baking sheets with parchment paper and spray with cooking spray.
  • Combine flour, cocoa powder, baking powder and 1/2 teaspoon sea salt in a bowl.
  • Place butter in a saucepan over low heat and cook until melted, 3 to 5 minutes. Add chocolate chips and stir until completely melted. Remove from the heat.
  • Combine brown sugar, white sugar, eggs, and vanilla extract in a bowl and beat with an electric mixer until creamy. Pour a small amount of the chocolate mixture into the egg mixture and stir until well combined. Slowly add remaining chocolate mixture, stirring constantly so the eggs don't curdle. Fold in the flour mixture until just combined. Do not overmix.
  • Drop 6 large scoops of batter about 2 inches apart onto each of the prepared baking sheets.
  • Bake in the preheated oven until cookies have spread and flattened to a diameter of 4 1/2 inches or larger, and the tops are crinkled and puffed, 12 to 14 minutes. Immediately sprinkle with sea salt.
  • Place baking sheets on a wire rack and cool for 18 to 20 minutes. Remove cookies with a spatula onto serving platter.

40 saltine crackers (about one sleeve, Do not use unsalted)
1 cup butter (2 sticks)
1 cup brown sugar
1 teaspoon vanilla extract
11 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 400 degrees.
  • Cover cookie sheet with a single layer of saltines.
  • Boil butter, sugar, and vanilla for one minute. Pour evenly over saltines. If needed, gently spread to make even. Bake for 7 minutes.
  • While toffee is still hot and bubbly, pour chocolate chips evenly on top of candy. When the chocolate chips begin to melt, gently spread chocolate over toffee. Freeze for one hour. Break into pieces and enjoy!

Steps:

  • Heat oven to 350 degrees. Line a sheet pan or large cookie sheet with sides with heavy-duty aluminum foil. Arrange the crackers side by side in a single layer on the foil. In a small saucepan, melt the sugar and butter, stirring constantly until they bubble, about 2 to 3 minutes. Remove from heat and quickly stir in the vanilla. Pour evenly over the crackers and, using a spatula, spread to cover evenly.
  • Bake immediately. After 7 minutes, remove the pan from the oven and sprinkle the chocolate chips evenly over the crackers. Return to the top rack of the oven and bake for 2 minutes more. My GF passed this recipe along to me last year before the holiday. I am making it again today for a block party. It's a buttery chocolatey delight! Make a double batch, one with & with out the nuts. *Prep and cooking time does not include chilling/cooling time.

4 ounces saltine crackers, 1 sleeve
1 cup butter
1 cup dark brown sugar, packed
12 ounces chocolate chips, semisweet
3/4 cup chopped pecan pieces, I prefer to chop to a finer texture in food processor

Steps:

  • Preheat oven to 375°.
  • Line a jelly roll pan with foil. Coat with nonstick spray.
  • Cover the bottom of the pan with a single layer of saltine crackers.
  • Melt butter and sugar over med-low heat. Whisk until butter melted and mixture begins to boil. Boil for 3 minutes, whisking constantly. All the sugar granules should be melted.
  • Carefully pour over the crackers.
  • Bake for 5-6 minutes until bubbly. The crackers may bubble & lift off the bottom of the baking sheet, don't worry!
  • Remove from oven and sprinkle with chocolate chips. Let rest for a couple minutes until choc chips begin to get glossy and soft.
  • Spread the chocolate over the toffee, sprinkle with nuts, pressing the nuts into the warm toffee.
  • Cool completely. *Best results when cooled in in the fridge.
  • Cut or break into pieces.

Brush the side of the pan with a moistened pastry brush to wash down any sugar crystals. Cook the syrup over moderate heat without stirring until it starts to brown around the edge, about 5 minutes. Insert a candy thermometer into the syrup and simmer, stirring with a wooden spoon, until honey-colored caramel forms and the temperature reaches 300°, about 6 minutes longer.
  • Slowly and carefully pour the caramel over the crackers, being sure to cover most of them evenly. Using an offset spatula, spread the caramel to cover any gaps. Let cool for 3 minutes, then sprinkle the chopped chocolate evenly on top. Let stand until the chocolate is melted, about 3 minutes, then spread the chocolate evenly over the toffee. Spread the almonds evenly over the chocolate. Freeze the toffee until set, about 15 minutes.
