CHOCOLATE PUMPKIN CAKE WITH CINNAMON CHOCOLATE GLAZE
I made this cake for a co-workers birthday and it was a huge success! Many recipe requests. :) Cooking time includes cooling time.

Steps:
- Preheat oven to 350 degrees F.
- Grease and flour a 12-cup bundt pan.
- In an electric mixer, combine cake mix, spices, baking soda, pumpkin, water and eggs.
- Mix on low for 1 minute.
- Scrape down sides of bowl.
- Increase speed to medium and mix for 2 more minutes or until thoroughly combined and batter is smooth.
- Fold in chocolate chips and nuts.
- Spoon batter into prepared bundt pan and smooth out top with a spatula.
- Bake for 40 minutes or until top springs back when lightly pressed.
- Cool in pan on a wire rack for 20 minutes then turn out onto rack to cool for 20 minutes more.
- To prepare glaze: combine sugar, butter and milk in a medium saucepan and stir until butter melts and mixture comes to a boil.
- Boil for 1 minute while stirring constantly.
- Remove from heat.
- Mix in cinnamon chips, cocoa powder and vanilla and stir until smooth.
- Let sit a few minutes to thicken.
- Pour over cooled cake.
- Dust with powdered sugar if desired.
PUMPKIN SPICE CAKE WITH CHOCOLATE-PECAN FILLING

- Make the cake: Preheat the oven to 350 degrees F. Lightly butter two 9-inch-round cake pans; line the bottoms with parchment paper.
- Whisk the flour, baking soda, baking powder, cinnamon, ginger, cardamom, allspice and salt in a large bowl; set aside. Combine the pumpkin, sugar, orange zest and vanilla in a stand mixer fitted with the paddle attachment and beat on medium speed until smooth, about 1 minute. Add the eggs, one at a time, beating until each one is incorporated. With the mixer running, add the vegetable oil in a steady stream. Add the flour mixture and mix just until incorporated. Divide the batter between the 2 prepared pans; lightly tap the pans on the counter to distribute the batter.
- Transfer the pans to the oven and bake until the cakes begin pulling away from the pans and the centers spring back when lightly pressed, about 30 minutes. Transfer to a rack and let cool 10 minutes in the pans, then unmold onto the rack and let cool completely.
- Meanwhile, make the filling: Combine the sugar and 1/4 cup water in a large deep saucepan over medium-high heat; bring to a simmer and cook, without stirring, until deep amber, about 8 minutes. Carefully whisk in the cream and cook, whisking, until smooth. Add the corn syrup and bring to a boil, then reduce the heat to medium low and cook, whisking occasionally, until the sauce thickens slightly and coats the back of a spoon, 40 to 50 minutes. Remove from the heat; whisk in the butter, chocolate, vanilla and salt until smooth. Let cool completely, then fold in the pecans. Cover and refrigerate until firm but spreadable, about 1 hour.
- Assemble the cake: Cut each cake in half horizontally with a serrated knife to make 4 layers. Put 1 layer on a platter; spread one-third of the pecan filling on top. Layer the remaining cakes and filling on top, ending with cake. Refrigerate until set, about 1 hour.
- Make the glaze: Combine the chocolate, cocoa powder, butter and honey in a microwave-safe bowl. Cover with plastic wrap and microwave 1 minute; uncover and whisk until smooth. Let cool to room temperature, then spread on the cake, letting the excess drip down the sides. Refrigerate until the glaze sets, about 10 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9 inch Bundt pan.
- In a medium bowl, mix the flour, cocoa powder, pumpkin pie spice, baking powder and baking soda. In a large bowl, beat together 3/4 cup butter, 2 cups sugar, applesauce, and eggs. CHOCOLATE PUMPKIN CAKE AND CUPCAKES
I found this recipe in Country Living Magazine about 4 yrs ago. I tried it out when my Ex's job had a contest requiring you to decorate, and use a pumpkin. I actually gutted, and carved a pumpkin. Lined the inside, and then layered the cake cubes with the Orange Cream Cheese Frosting. We actually won 2nd Place! Every time I make this cake, everyone asks for the recipe. Enjoy!

- Prepare cake pans: Heat oven to 350 degrees F. Lightly butter three 8-inch cake pans and fit each bottom with an 8-inch circle of parchment paper. Lightly butter the parchment paper. Set aside.
- Make the batter: Sift the flour, cocoa, baking powder, baking soda, cinnamon, and nutmeg in a large bowl and set aside. Combine the buttermilk, pumpkin, and vanilla in a medium bowl and set aside. Beat the butter and sugar together in a large bowl, with an electric mixer set on medium speed, until fluffy. Add the eggs, one at a time, beating well after each addition, until the mixture is smooth and light. Alternately add the flour mixture and buttermilk mixture, blending well after each addition.
- Bake the cake: Divide the batter among the pans and bake until a wooden skewer inserted into the middle comes out clean -- about 35 minutes. Cool the cakes in the pan for 20 minutes. Remove cakes and cool. (For cupcakes: Heat oven to 375 degrees F. Place cupcake liners in standard cupcake tins and fill each with 1/4 cup of batter. Bake for 22 minutes.).
- Assemble the cake: Trim each of the layers. Place one layer on a cake plate and top with one third of the frosting. Repeat with the second and third layers. (To ensure that the cake layers do not shift, cut three skewers to 1/4 inch shorter than the full height of the cake and insert them before icing the top layer.) Refrigerate until ready to serve.
PUMPKIN BUNDT CAKE WITH CHOCOLATE GLAZE
This is a recipe I used to make before being diagnosed diabetic. I don't think it can be re-vamped with Splenda and still be as good, so I'll make it for really special times, when I have been really good at watching the carbs! UPDATE: I changed the amounts of spices in this. I usually add more than called for and two reviewers thought it needed more. If it sounds TOO spicy for you, cut the amounts in half.

- Preheat oven to 350°F.
- Coat a 10-12 cup bundt pan (or a 10" tube pan) with non-stick cooking spray.
- Sift flour, baking powder, soda, salt and spices together; set aside.
- In a large mixing bowl, beat eggs until foamy. Add sugars and beat until thick. Stir in pumpkin and oil, beating until smooth.
- Blend dry ingredients into pumpkin mixture, mixing thoroughly.

- For filling, beat cream cheese and powdered sugar.
- Beat in pumpkin, nutmeg, cinnamon, and vanilla.
- Add whipping cream slowly, beating until slightly thickened.
- Refrigerate approximately 2 hours.
- For cake: Heat oven to 375°F
- Line a jelly roll pan with aluminum foil or wax paper. Grease foil or wax paper.
- Beat egg whites on high speed until soft peaks form; gradually add 1/2 cup sugar, beating until stiff peaks form. Set aside.
- Beat egg yolks and vanilla 3 minutes; gradually add remaining 1/4 cup sugar, beating another 2 minutes.
- Combine dry ingredients; add to yolk mixture alternating with water, beat on low just until smooth.
- Slowly fold chocolate mixture into egg whites with a spatula until well blended. Spread batter evenly in pan.
- Bake 12-15 minutes or until top springs back when touched.
- Immediately loosen cake from edges of pan; turn over onto a clean towel sprinkled with powdered sugar. Carefully peel off foil or wax paper.
- Roll cake in towel, starting from narrow end; place on wire rack to cool.
- Carefully unroll cake; remove towel. Spread cake with filling; re-roll without towel.
- For chocolate glaze: Melt butter in a small pan over low heat;
- add cocoa and water, stirring until smooth and slightly thickened. Do not boil.
- Remove from heat; cool slightly.
- Slowly add powdered sugar and vanilla, beating until smooth.
- Spoon glaze over rolled cake.
- Keep refrigerated.
