MEXICAN BLACK BEANS RECIPE
These Mexican Black Beans are my go-to side dish for Taco Tuesday or when I make enchiladas. They are SO good and SO easy to make!

Steps:
- In a small sauce pan, heat the olive oil over medium heat. Add the onions and garlic and cook for 3-4 minutes, just until the onions begin to soften.
- Add the undrained black beans, cilantro, cumin, and salt. Stir well and reduce heat to medium low. Allow to cook for 15-20 minutes, stirring occasionally. Taste and adjust seasonings to your liking.
- Serve sprinkled with more chopped cilantro and cotija cheese if desired. Enjoy!

- Place black beans in a medium size mixing bowl, partially mash beans -- beans should remain a little chunky.
- In a medium size frying pan, heat oil over a medium heat. Stir in onion and garlic and saute for 4 minutes.
- Mix beans, corn, tomato, picante sauce, cumin, and chili powder into the frying pan; cook for 5 minutes or until thickened. Remove the pan from the heat, mix in cheese, cilantro and lime juice; stir until cheese is melted.

FIVE LAYER MEXICAN DIP

- Heat the oil in a skillet over medium-high heat. Add onions and cook until they soften, about 3 minutes. Stir in the garlic and cook for 2 minutes more.
- Put half of the onion mixture into a food processor with the black beans, chipotle pepper, 2 tablespoons of the lime juice, cumin, water and salt. Puree until smooth. Set aside.
- Add the corn to the skillet with the remaining onion mixture and cook for about 3 minutes. Remove from the heat and stir in the cilantro leaves.
- In a small bowl mash the avocado with the remaining lime juice. In a medium bowl toss together the tomatoes, scallion and jalapeno, if using. Season tomato mixture with salt and pepper, to taste.
- Spread the black bean dip into the bottom of an 8 by 8 glass baking or serving dish. Top with the corn mixture, spreading it out to form a single layer over the beans, repeat with the avocado, then the tomatoes. Top with cheese. Serve with baked chips.

- Heat the olive oil over medium heat in a small saucepan. Add the onions, garlic and jalapeño peppers and cook, stirring occasionally, until very soft, about ten minutes. Do not brown.
- Transfer the cooked onion mixture to a blender or food processor and add the black beans, salt, cumin, lime juice, water and cilantro. Blend until smooth (if you're using a blender, you may need to stop and stir a few times to help it out). If the dip is too thick, add more water or lime juice, little by little, to thin it out. Taste and adjust seasoning, then transfer to a serving bowl. Serve warm, cold or room temperature with tortilla chips.
- *Most of the heat from the jalapeños is in the seeds and ribs, so leave those out. If you like a spicier dip, reserve the seeds and add them little by little when you're blending the dip.

BLACK AND WHITE BEAN DIP
Black and White Bean Dip - the best dip ever. Gets its name from the black and white beans and the white shoepeg corn. Can even be used as a vegetarian burrito filling!

- Preheat oven to 350 degrees.
- Rinse and drain both cans of beans. Also drain the can of shoepeg corn (drain everything really well so you don't have liquid at the bottom after you cook it). Make sure to squeeze liquid out of tomatoes before chopping so the dip doesn't turn runny.
- Put everything (except for the avocado) in a bowl and mix together. Spray a shallow baking dish (I used a glass pie plate) with nonstick spray before spooning in the bean mixture.
- Sprinkle a little cheese on top and pop into the oven. Bake for 20 minutes until the cheese is melted and it is all warm and bubbly. Remove from oven and sprinkle with diced avocado and serve with tortilla chips.
BAKED MEXICAN BLACK BEAN DIP
This dip is a great starter for a Mexican Themed dinner night. I'm not too wonderful with "precise measurements", so please use the spices listed to you own taste. I sometimes will add diced, fresh tomatoes on top when they're in season. Also, some green onion on top is always nice too.

- Mix black beans with cumin, coriander, chili powder and cayenne pepper and spread over the bottom of an over-proof baking dish.
- I don't usually measure the spices, so please use them to your own taste.
- (I'm a bit heavy handed with the cayenne pepper!) Sprinkle the grated cheese over top of the beans.
- I usually sprinkle a little chili powder or cumin on top of the cheese to give it a little color.
- Bake in preheated oven at 375°F for 10-15 minutes or until cheese is melted and bubbling slightly.
- Remove from oven and spoon sour cream evenly over the top of the cheese.
- Add shredded lettuce, jalapeños (if using), and top with fresh cilantro.
- Serve immediately with nacho chips for dipping.
