4 tablespoons butter, melted
1 cup creamy peanut butter
One 8-ounce package cream cheese, softened
1 1/4 cups powdered sugar
One 8-ounce package whipped topping, such as Cool Whip, thawed

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Crush the cookies until they're fine crumbs. Pour the melted butter over the top and stir with a fork to combine. Press into a pie pan and bake until set, 5 to 7 minutes. Remove from the oven and allow to cool completely.
  • For the filling: Beat the peanut butter with the cream cheese until smooth. Add the powdered sugar and beat until smooth. Add in the thawed whipped topping and beat until smooth, scraping the sides as needed.
  • Pour the filling into the crust, evening out the top with a knife or spatula. Chill for at least an hour before serving.

1 cup creamy peanut butter
1 cup chopped peanut butter cups
1 pre-made graham cracker pie crust
1 recipe Peanut Butter Sauce, recipe follows
1/4 cup chocolate shell ice-cream topping, such as Magic Shell
1 cup crushed roasted salted peanuts
1/4 cup mini chocolate chips
1/4 cup sweetened condensed milk
1/4 cup creamy peanut butter
1 teaspoon vanilla extract

Steps:

  • Combine the heavy cream, powdered sugar and vanilla extract in the clean, cold bowl of a stand mixer fitted with the whisk attachment. Whip until the mixture holds stiff peaks. Gently transfer the whipped cream to a new bowl. Add the cream cheese to the stand mixer bowl, switch to the paddle attachment and beat on medium speed for 1 minute. Add the peanut butter and beat until light and fluffy about 3 minutes.
  • Gently fold the whipped cream and chopped peanut butter cups into the cream cheese mixture. Pour the filling into the pie crust and place in the fridge to set for 2 to 3 hours.
  • Using a spoon, drizzle the pie in vertical lines with peanut butter sauce. Repeat with the chocolate shell ice-cream topping, also in vertical lines. Sprinkle the peanuts and mini chocolate chips around the perimeter of the pie.
  • Heat the condensed milk, peanut butter and 3 tablespoons water in a small saucepan over medium-low heat until smooth and melted, 5 to 7 minutes. (Thin with a little more water if too thick.) Let cool slightly.

1/8 teaspoon kosher salt

Steps:

  • Whisk together the granulated sugar, egg yolks, cornstarch, salt and 1/3 cup of the milk in a large bowl.
  • Heat the remaining 2 2/3 cups milk in a large saucepan over medium heat until hot but not boiling. Whisk half of the hot milk into the egg mixture until smooth, and then gradually whisk the egg mixture into the saucepan with the remaining milk. Bring to a boil, whisking constantly, and cook, continuing to whisk, until the mixture thickens, 6 to 8 minutes. Remove from the heat and whisk in the peanut butter until melted. Transfer to a bowl and let cool slightly, stirring a few times to prevent a skin from forming. Pour the filling into the crust, smoothing it out so that it reaches the edges of the pie crust. Press plastic wrap directly onto the surface and chill until set, at least 4 hours.
  • When ready to serve, whip the cream and confectioners' sugar in a large mixing bowl with a hand mixer until medium/stiff peaks form.
  • To assemble, top the pie with the whipped cream and garnish with the peanuts and chocolate chips.

8oz Heavy Whipping Cream

4oz Milk Chocolate, melted and slightly cooled
2 Tablespoons Sour Cream
120 Grams (1 Cup) Confectioner Sugar
6oz Chocolate
2 Tablespoons Creamy Peanut Butter

3-4 Tablespoons Roasted Peanuts, chopped
Homemade Whipped Cream or Store-bought Whipped Cream

Steps:

  • In a food processor, crush the Oreos till they become a fine crumbs. Add melted butter, stirring until fully combined. Press into the bottom and slightly up the upsides of the pie dish. Chill in the freezer while you prepare the filling.
  • In a large bowl with a handheld electric mixer or in the bowl of a stand mixer fitted with a whisk attachment beat the heavy whipping cream on medium speed until stiff peaks form. Transfer the cream to a clean bowl and set it aside.
  • In the dirty whipped cream bowl add the paddle attachment and add the cream cheese and peanut butter and mix to combine. Make sure to scrape down the sides of the bowl to ensure they are evenly combined. Add in the powdered sugar and mix to fully combine. Now mix in the melted chocolate. Scrape down the bowl to ensure everything is evenly combined. Mix in sour cream.
  • Using a spatula gently fold in the whipped cream, until just combined and no white streaks remain.
  • Pour chocolate peanut butter cream filling into the Oreo crust and use an offset spatula to spread into an even layer. Wrap the pie in plastic wrap tightly, then store in the fridge for at least six hours.
  • When ready to decorate make the ganache. In a small saucepan add the cream and cook over medium heat for a couple of minutes to warm it, you don't want to boil it though. You can also do this in the microwave. In a medium bowl add the chocolate and peanut butter then pour the warmed cream directly over it. Let it sit untouched for 5 minutes then using a whisk mix well together until a shiny homogenous chocolate ganache is formed. Pour ganache on top and use an angled spatula to spread into an even layer. Sprinkle chopped peanuts on top and add whipped cream.
  • Serve chilled and store leftovers in the fridge for up to three days.

1/4 cup light corn syrup
2 cups salted peanuts
1 teaspoon butter
1/4 cup baking cocoa
1 teaspoon baking soda

Steps:

  • Grease a 15x10x1-in. pan and a metal spatula; set aside. , In a 2-qt. microwave-safe bowl, combine sugar and corn syrup. Microwave, uncovered, on high for 4 minutes; stir. Cook 3 minutes longer. Stir in peanuts and butter. Microwave for 30-60 seconds or until mixture turns a light amber color (mixture will be very hot)., Quickly stir in cocoa, baking soda and vanilla until combined. 1/2 cup light corn syrup
1 teaspoon baking soda
1/4 cup whipping cream (heavy)
1 tablespoon butter
1 1/4 cups salted peanuts
1 cup sugar

Steps:

  • Lightly butter cookie sheet and set aside for now.
  • In small bowl, stir the cocoa and baking soda, then the butter; set aside.
  • In heavy 2 quart saucepan, combine sugar, corn syrup and whipping cream, stirring to combine.
  • Cook over medium heat. Keep stirring until sugar is dissolved.
  • Stir in the peanuts and continue cooking, stirring frequently, until mixture reaches 300° or when syrup dropped into very cold water separates to threads that are hard and brittle (of course, make sure the bulb on the candy thermometer is not resting on bottom of the pan when used).
  • Remove from heat and stir in cocoa mixture.
  • Immediately pour onto the buttered cookie sheet.
  • With tongs or wooden spoons, quickly spread and pull into a 1/4-inch thickness.
  • Put cookie sheet on a wire rack to cool completely.
  • When the brittle is cool, break into pieces.
