CHOCOLATE PEANUT BUTTER COOKIES

Chocolate Peanut Butter Cookies image

Delicious, moist, and rich, these chocolate peanut butter cookies are the perfect homemade treat.

Provided by Stephanie Keeping

Categories     Dessert

Time 1h30m

Number Of Ingredients 10

2¼ cups flour
1 cup creamy peanut butter
1 cup butter, (softened)
⅔ cup cocoa powder, (do not pack spoon the cocoa powder into the measuring cup)
1½ cups sugar, (divided (½ cup is for rolling the cookie dough balls in before baking))
1¼ cup light brown sugar, (packed)
2 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F.
  • Line a cookie sheet with parchment paper or a silicone baking mat.
  • Sift the flour, cocoa powder, baking soda, and baking powder. Set it aside.
  • Set aside the extra ½ cup of sugar to roll the dough balls in before making the criss-cross pattern. You can use a Ziploc baggie to minimize the sugar mess.
  • Using a stand mixer or hand held mixer, cream the butter and the peanut butter until well combined.
  • Add the light brown sugar and sugar. Cream until fluffy.
  • Add the eggs one at a time. Mix just until eggs are combined.
  • Add the vanilla extract. Mix until combined.
  • Slowly add the sifted flour, cocoa, baking soda, and baking powder mixture. Mix just until the flour is incorporated.
  • Cover the cookie dough and refrigerator for 1 hour.
  • Use either a small cookie dough scoop or a tablespoon to scoop out the dough. Shape them into 1 to 1½-inch cookie dough balls.
  • Roll the cookie dough balls in the ½ cup reserved sugar until completely covered. You can use a quart-size Ziploc. It keeps it from being too messy.
  • Place the sugared cookie dough balls about 2 inches apart.
  • Using a fork, lightly press a criss-cross pattern into the cookies. In order to keep the fork from sticking, dip the fork in the sugar.
  • Bake the cookies for 8 to 10 minutes.
  • Let the cookies rest on the baking sheet for about 2 to 3 minutes. This helps the cookie keep its shape and allows the cookie to lift off of the parchment paper without sticking or coming apart.
  • Allow cookies to cool and store in an airtight container.

CHOCOLATE PEANUT BUTTER PUDDING COOKIES

Chocolate Peanut Butter Pudding Cookies image

These decadent pudding cookies are the softest, most tender cookies you'll ever have, it's a peanut butter cup lover's dream cookie!

Provided by Wendie

Categories     Dessert

Time 24m

Number Of Ingredients 11

2 ¼ cup all purpose flour
1 teaspoon baking powder
1-3.4 ounce package chocolate instant pudding
1 cup salted butter, softened
1/2 cup peanut butter
6 ounces cream cheese, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
¾ cup semi sweet chocolate chips
3/4 cup peanut butter chips

Steps:

  • Preheat the oven to 350℉ and line two large baking sheets with parchment paper or baking mat. If you don't have parchment paper, you can just drop the cookies onto an ungreased sheet pan, they won't stick.
  • In a medium bowl whisk together the flour, baking powder, and instant pudding mix. Set aside.
  • In a large bowl using a hand mixer (or a stand mixer fitted with the paddle attachment) cream together the butter, peanut butter, cream cheese, and sugar until light and fluffy, about 1 minute. Scrape bowl with a silicone spatula.
  • Add the egg and vanilla, and mix until combined. Scrape bowl with a silicone spatula.
  • On low, add half of the dry ingredients and mix until mostly combined. Add the remaining dry ingredients and mix on low until just combined. The dough should be difficult to mix.
  • Fold in the chocolate peanut butter chip mixture.
  • Use a cookie scoop to drop balls of dough onto the sheet pans 1" apart. Press down down to flatten the cookies slightly. If you'd like a uniform edge on your cookies, roll the dough balls briefly in your hand before pressing chips into them. The cookies will not spread much in the oven, it's important to pat them down a bit.
  • Bake for 12-14 minutes, or until the edges of the cookies look dry and are starting to brown. Let them cool on the sheet pan for 3 minutes before transferring to a cooling rack to cool completely.
