1 (2 pound) whole red snapper
2 tablespoons grapeseed oil
1 teaspoon Cajun seasoning, or to taste
2 cloves chopped garlic
1 slice orange
1 slice lime
1 slice lemon
2 sprigs fresh thyme

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Clean red snapper inside and out under cold running water. Pat dry with paper towels.
  • Brush grapeseed oil all over the inside and outside of the fish, and sprinkle with Cajun seasoning on all sides. Insert garlic cloves, citrus slices, and thyme sprigs into the cavity of the fish. Set on a baking sheet.
  • Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes, depending on size of the fish.

1/4 teaspoon ground cayenne pepper
1 teaspoon fresh coarse ground black pepper
1/2 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon dried basil
1 teaspoon garlic powder
1/4 teaspoon dried oregano
2 tablespoons butter
1 tablespoon olive oil
6 (6 ounce) red snapper fillets

Steps:

  • On a large piece of wax paper, mix together paprika, cayenne, black pepper, onion powder, thyme, basil, garlic, and oregano.
  • In a small saucepan over medium heat, melt butter with oil.
  • Brush both sides of snapper fillets with butter mixture, reserve remaining.
  • Coat both sides of fillets with seasoning mixture.
  • Heat a large cast iron skillet over high heat until a drop of water sizzles on it.

3 ounces fish sauce
6 ounces water
1 tablespoons chile garlic sauce
2 limes, juiced
2 ounces sugar
1 tablespoons cornstarch mixed with 2 tablespoons of water
2 tablespoons chopped scallion
2 cups vegetable oil
1 whole red snapper (about 1 1/2 pounds), scaled, eviscerated, and fins removed
Salt and pepper
Flour
Serving suggestion: Steamed rice

Steps:

  • Mix the fish sauce, water, chile garlic sauce, the lime juice, and sugar together in a small pan and bring to a boil.
  • Fill a large heavy saute pan with 1-inch of oil and heat for 5 minutes until hot, but not smoking.
  • Make 2 diagonal cuts on each side of the fish for ease of cooking. Salt, pepper, and flour both sides of the fish. Fish should be dry, as to not splatter oil when frying. Lower fish into oil, the oil should bubble vigorously. Cook 4 minutes on each side until golden brown. Check cuts on fish for doneness.
  • When fish is almost cooked, heat up sauce and stir in cornstarch mixture while sauce is boiling. Sauce should be slightly thick, but not lumpy. Remove fish from oil and slightly dry with paper towels. Add scallions to the sauce and pour over fish to cover. Serve with steamed rice.

1 (1 1/2 pound) whole red snapper, cleaned and scaled
½ cup fresh basil leaves
2 tablespoons peanut oil
2 tablespoons fish sauce
2 cloves garlic, minced
1 teaspoon minced fresh ginger
2 red chile peppers, sliced diagonally
1 yellow bell pepper, seeded and diced
1 tablespoon brown sugar
1 tablespoon rice vinegar
2 tablespoons water
2 tomatoes, seeded and sliced
5 leaves basil

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a roasting pan with aluminum foil.
  • Stuff the cavity of the snapper with 1/2 cup basil leaves and set aside. Heat the peanut oil in a large skillet over high heat until it begins to smoke. Place the snapper in the skillet, and quickly brown on both sides, about 1 minute total. Place the fish into the roasting pan, and sprinkle with fish sauce. Reserve the peanut oil in the skillet.
  • Bake fish in preheated oven until the flesh flakes easily with a fork, 25 to 30 minutes.
  • Meanwhile, heat the remaining peanut oil over medium heat. Stir in the garlic, ginger, chile peppers, and yellow pepper and cook until the peppers have softened, about 5 minutes. Stir in the sugar, rice vinegar, water, and tomatoes. Bring to a simmer over medium-high heat until thickened to desired consistency. Pour the sauce over the snapper, and garnish with the remaining basil leaves to serve.

½ teaspoon onion powder

Steps:

If you are also on one, eliminate any ingredients that are triggers for you. I found it on Pinterest by an author named Stephanie. Don't know who she is because it wasn't on her board. :)

1 1/2 tablespoons olive oil, divided
1 garlic clove, halved
1 1/2 tablespoons sesame oil
2 limes, juice of
1 1/2 lbs red snapper, filleted
Chinese five spice powder, to taste
cayenne, to taste
garlic powder, to taste (high Fodmap, remove is this is a trigger for you)
2 shallots, thinly sliced (high Fodmap, remove is this is a trigger for you)
1/3 fresh jalapeno, diced, no seeds
4 cups red bell peppers, chopped
4 cups green beans, cut 1/2 to 1 inch long
2 large carrots, cut julienne style
1 tablespoon low-sodium tamari (wheat free soy sauce)
4 -6 cups uncooked rice noodles

Steps:

  • Heat the olive oil in a small saucepan over medium low. Place the halved garlic clove in the oil until the oil is garlic infused. (If you are on a low fodmap diet, remove the garlic from the oil).
  • Heat the oven to 425 degrees. Place the fish in a baking dish. Drizzle with the garlic infused olive oil and the juice of 2 limes. Sprinkle Chinese 5 spice powder all over the fish, so it is lightly coated. Very lightly sprinkle cayenne pepper and garlic powder, if using, over the fish.
  • Place the fish on the top rack of the oven and bake for 10 to 12 minutes until done. Do not flip.
  • Cook noodles according to package directions.
  • In a large skillet, warm 1/2 tbsp sesame oil and 1/2 tbsp olive oil on medium heat. Add shallots (if using) and cook 4-6 minutes until translucent. Add the jalapeno, bell peppers, green beans, carrots, and tamari. Cook for 5 to 7 minutes longer until the vegetables reach the desired degree of tenderness.
  • Serve over the noodles and top with the crispy, spicy fish.

1 lemon, quartered
