- In a mixing bowl, cream 1 cup butter and brown sugar.
- Beat in eggs and 2 teaspoons vanilla.
- Combine the oats, flour, 1 teaspoon salt and baking soda; stir into creamed mixture.
- Press two-thirds of oat mixture into a greased 15 x 10-inch baking pan.
- In a saucepan, combine milk, chocolate chips and remaining butter and salt.
- Cook and stir over low heat until chocolate is melted.
- Remove from the heat; stir in walnuts and remaining vanilla.
- Spread over the crust.
- Sprinkle with remaining oat mixture.
- Bake at 350° for 25 minutes or until golden brown.
- Cool.
- Cut into squares.

- Preheat oven to 350 degrees with the rack in the middle position.
- Melt the butter in a large microwave safe bowl.
- Add the brown and white sugars and let cool a bit.
- Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
- Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
- With a spatula spread dough evenly into a greased 8x8 baking pan.
- Bake at 350 for 25- 30 minutes.
- Cut into bars when cool.
DARK CHOCOLATE OATMEAL
Steps:
- Bring 3 cups water to a boil in a large saucepan over medium heat. Add the oats, cocoa powder, vanilla and salt and cook, stirring regularly, until thickened, 5 to 7 minutes. Turn off the heat and stir in the honey. Cover and let stand for 2 minutes.
- Top each serving with 2 tablespoons chopped walnuts, half of a sliced banana and 2 tablespoons cherries. Serve immediately.

- Grease a 9x9 inch square pan.
- Melt butter in large saucepan over medium heat. Stir in brown sugar and vanilla. Mix in the oats. Cook over low heat 2 to 3 minutes, or until ingredients are well blended. Press half of mixture into the bottom of the prepared pan. Reserve the other half for topping.
- Meanwhile, melt chocolate chips and peanut butter in a small heavy saucepan over low heat, stirring frequently until smooth. Pour the chocolate mixture over the crust in the pan, and spread evenly with a knife or the back of a spoon.

- Preheat the oven to 350F.
- Stir together the flax and water to make the flax egg. Set aside to gel.
- In a large mixing bowl, stir together the oats, oat flour, coconut sugar, salt, and baking soda.
- Add the applesauce, almond butter, flax eggs, and vanilla.
- Mix to combine.

- Heat ½ cup / 120 mls of the milk, either in a pan on the stove or in the microwave until hot but not boiling. Remove from the heat.
- Put the chocolate in a medium bowl and pour over the hot milk. Stir to melt the chocolate and create a thick, smooth chocolatey sauce. Set aside.
- Grease and line a loaf pan with parchment paper and preheat oven to 350°F (175°C)
- To a large bowl add the flour, oats, sugar, salt and baking powder. Mix them together to combine.
- Add the vanilla and melted coconut oil to the oat mixture and stir together.
- Gradually add enough milk to bring the dough together. The amount you need will vary but will likely be about 5 or 6 tablespoons. Keep mixing as you add it and when you can squeeze it together in your hand and it stays together in a lump, stop.
- Pack about ⅔ of the dough into the bottom of the loaf pan really tightly and flatten it out.
- Pour over the chocolate mixture and give the pan a gentle shake to level it out.
- Crumble the rest of the dough evenly over the top of the chocolate layer.
- Bake for 30 minutes then remove from the oven and allow to cool in the pan.
- Once at room temperature, carefully remove from the pan using the parchment paper as handles, and slice into portions with a sharp knife.

- Preheat your oven to 350° (180°C).
- Using your blender, grind 1 cup of the oats into flour.
- Pour into a mixing bowl along with the remaining oats, baking powder and soda, cinnamon, flax meal and walnuts and mix.

- Preheat oven to 350 degrees F. Grease a 9 inch square baking pan.
- To prepare Filling: In a heavy pot, melt 2 tablespoons of the butter and chocolate chips. Add the evaporated milk and 1/4 cup of the white sugar. Bring to a rolling boil, stirring constantly. Remove from heat. Stir in nuts and cool.

- Preheat oven to 350°F. Lightly coat a 13-by-9-inch baking dish with cooking spray. Line with parchment paper, leaving a 2-inch overhang on long sides.
- Whisk flour, oats, sugar, and 1½ teaspoons salt in a large bowl. Add butter and stir until evenly moistened. (Dough should look like wet sand.) Set aside a third of the dough for topping. Using the bottom of a measuring cup, press remaining two-thirds of dough firmly into bottom of prepared baking dish.
- Process dates, ½ cup hot water, vanilla, and remaining ¼ teaspoon salt in a food processor until smooth, scraping down sides as needed. Transfer to a bowl and fold in chocolate. Spread mixture evenly over dough in baking dish, smoothing with a spatula. Crumble reserved dough over top, pressing gently to adhere.
- Bake until top is golden brown, 35 to 40 minutes. Let cool completely in pan, about 1 hour. Cut into squares.
