1 cup butter or 1 cup margarine, softened
2 tablespoons butter or 2 tablespoons margarine, softened
2 cups brown sugar, firmly packed
2 large eggs
4 teaspoons vanilla extract (divided)
3 cups quick oats
2 1/2 cups flour
1 1/2 teaspoons salt (divided)
1 teaspoon baking soda
1 (14 ounce) can sweetened condensed milk
2 cups semi-sweet chocolate chips
1 cup walnuts (chopped)

Steps:

  • In a mixing bowl, cream 1 cup butter and brown sugar.
  • Beat in eggs and 2 teaspoons vanilla.
  • Combine the oats, flour, 1 teaspoon salt and baking soda; stir into creamed mixture.
  • Press two-thirds of oat mixture into a greased 15 x 10-inch baking pan.
  • In a saucepan, combine milk, chocolate chips and remaining butter and salt.
  • Cook and stir over low heat until chocolate is melted.
  • Remove from the heat; stir in walnuts and remaining vanilla.
  • Spread over the crust.
  • Sprinkle with remaining oat mixture.
  • Bake at 350° for 25 minutes or until golden brown.
  • Cool.
  • Cut into squares.

1/2 cup melted butter (1stick)
1/2 cup brown sugar
1/2 cup white sugar
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 egg, beaten
1/2 teaspoon vanilla
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 cup flour
3/4 cup semi-sweet chocolate chips (I use Ghiradelli)
3/4 cup rolled oats (uncooked oatmeal)

Steps:

  • Preheat oven to 350 degrees with the rack in the middle position.
  • Melt the butter in a large microwave safe bowl.
  • Add the brown and white sugars and let cool a bit.
  • Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
  • Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
  • With a spatula spread dough evenly into a greased 8x8 baking pan.
  • Bake at 350 for 25- 30 minutes.
  • Cut into bars when cool.

1/4 cup unsweetened cocoa powder
1 teaspoon vanilla extract
1/2 teaspoon salt
1/3 cup honey
1/2 cup chopped toasted walnuts
2 bananas, sliced into coins
1/2 cup dried cherries, plumped in warm water

Steps:

  • Bring 3 cups water to a boil in a large saucepan over medium heat. Add the oats, cocoa powder, vanilla and salt and cook, stirring regularly, until thickened, 5 to 7 minutes. Turn off the heat and stir in the honey. Cover and let stand for 2 minutes.
  • Top each serving with 2 tablespoons chopped walnuts, half of a sliced banana and 2 tablespoons cherries. Serve immediately.

  • Grease a 9x9 inch square pan.

2 cup (200g) rolled oats
1 cup (120g) oat flour
3/4 cup (110g) coconut sugar
1/2 tsp salt
1 tsp baking soda
3 tbsp ground flax + 6 tbsp water
1 cup (240g) nut or seed butter (I used almond butter)
1 cup (240g) unsweetened applesauce
1 tsp vanilla extract
2 ripe bananas (or frozen and defrosted)
1/4 cup (20g) cacao powder

Steps:

  • Preheat the oven to 350F.
  • Stir together the flax and water to make the flax egg. Set aside to gel.
  • In a large mixing bowl, stir together the oats, oat flour, coconut sugar, salt, and baking soda.
  • Add the applesauce, almond butter, flax eggs, and vanilla.
  • Mix to combine.
  • Spread into an 8×8″ square baking pan that has bee sprayed with nonstick spray or coconut oil.
  • Blend the banana and cocoa powder.
  • Spoon on top of the oatmeal bars and spread/swirl to cover. Sprinkle with chocolate chips if desired.

Steps:

  • Preheat the oven to 325 degrees and line a 8×8-inch baking pan with aluminum foil and spray the foil with cooking spray ( overhangs the edges of the foil to lift the bars easier from the pan) .
  • Combine flour, oats, 11/3 cups light brown sugar, baking powder and salt in a medium bowl, add 101/2 tablespoons melted butter and stir to combine.
  • Press half of mixture firmly into the pan and bake about 8 minutes, cool it.

1 cup / 240 mls dairy-free milk (, divided)
1 cup / 170 grams dairy-free chocolate chips (, or chocolate from a bar)
2 cups / 250 grams flour (, all purpose, spelt, oat or plain flour)
1⅓ cup / 120 grams rolled oats (, or old fashioned oats (certified gluten-free if necessary))
1 cup / 200 grams sugar
½ teaspoon fine salt
1½ teaspoons baking powder
1 teaspoon vanilla extract
½ cup / 108 grams melted coconut oil (, or vegan butter)

Steps:

  • Heat ½ cup / 120 mls of the milk, either in a pan on the stove or in the microwave until hot but not boiling. Remove from the heat.
  • Put the chocolate in a medium bowl and pour over the hot milk. Stir to melt the chocolate and create a thick, smooth chocolatey sauce. Set aside.
  • Grease and line a loaf pan with parchment paper and preheat oven to 350°F (175°C)
  • To a large bowl add the flour, oats, sugar, salt and baking powder. Mix them together to combine.
  • Add the vanilla and melted coconut oil to the oat mixture and stir together.
  • Gradually add enough milk to bring the dough together. The amount you need will vary but will likely be about 5 or 6 tablespoons. Keep mixing as you add it and when you can squeeze it together in your hand and it stays together in a lump, stop.
  • Pack about ⅔ of the dough into the bottom of the loaf pan really tightly and flatten it out.
  • Pour over the chocolate mixture and give the pan a gentle shake to level it out.
  • Crumble the rest of the dough evenly over the top of the chocolate layer.
  • Bake for 30 minutes then remove from the oven and allow to cool in the pan.
  • Once at room temperature, carefully remove from the pan using the parchment paper as handles, and slice into portions with a sharp knife.

Steps:

  • Preheat your oven to 350° (180°C).
  • Using your blender, grind 1 cup of the oats into flour.

1 cup Gold Medal™ whole wheat flour
1/2 cup old-fashioned or quick-cooking oats
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup packed brown sugar
1/4 cup canola or soybean oil
1 teaspoon vanilla
1/4 cup fat-free cholesterol-free egg product or 1 egg
2 tablespoons old-fashioned or quick-cooking oats
2 teaspoons butter, softened

Steps:

  • Heat chocolate chips and milk in 1-quart heavy saucepan over low heat, stirring frequently, until chocolate is melted and mixture is smooth; set aside. Heat oven to 350°. Spray square pan, 8x8x2 or 9x9x2 inches, with cooking spray.
  • Mix flour, 1/2 cup oats, the baking powder, baking soda and salt in large bowl; set aside. Stir brown sugar, oil, vanilla and egg product in medium bowl with fork until smooth; stir into flour mixture until blended. Reserve 1/2 cup dough in small bowl for topping.
  • Pat remaining dough in pan (spray fingers with cooking spray or lightly flour if dough is sticky). Spread chocolate mixture over dough. Add 2 tablespoons oats and the butter to reserved dough; mix with pastry blender or fork until crumbly. Drop small spoonfuls of oat mixture evenly over chocolate mixture.
  • Bake 20 to 25 minutes or until top is golden and firm. Cool completely, about 1 1/2 hours. For bars, cut into 4 rows by 4 rows.
