Mint Chocolate Cream Pie! Like instant chocolate pudding in pie form, but way better. A hint of peppermint makes this dessert festive.

For the crust:
38 chocolate wafers (215g, I used Nabisco Chocolate Wafers )
5 tablespoons melted unsalted butter
3 tablespoons sugar
Pinch salt
For the filling:
4 egg yolks
2/3 cup sugar
1/3 cup unsweetened Dutch-processed cocoa powder (I use Valrhona, but use your favorite)
1/4 cup cornstarch
2 1/4 cups whole milk
1/4 cup heavy cream
2 tablespoons unsalted butter
1/4 teaspoon peppermint extract
Pinch salt
For the topping:
Whipped cream
Chopped peppermint bark, store-bought or homemade

Steps:

  • Prepare and bake the crust: Preheat the oven to 350°F. Grind the chocolate wafers in a food processor until you have medium-fine crumbs. Add the crumbs to a bowl and stir in the butter, sugar, and salt, mixing until the crumbs are like wet sand and the mixture clumps together when pressed in your fist. Press the crumbs into a 9-inch pie dish and tamp down with the bottom of a measuring cup. Bake for 10 to 12 minutes until the crust looks and feels dry to the touch, and your kitchen smells like Oreos. Cool on a rack while you make the filling.
  • Make the filling: Whisk the egg yolks, sugar, cocoa, and cornstarch together in a medium saucepan to make a smooth paste. (Add a splash of milk if it's too dry to mix; the idea is just to get these ingredients thoroughly mixed together before adding the rest of the milk and cream.) Whisk in the milk and cream. Heat the mixture over medium heat, whisking constantly, until the pudding thickens enough to leave visible tracks from the whisk. This could take anywhere from 10 to 20 minutes depending on your stovetop. Don't be tempted to turn up the heat because the pudding can easily start to curdle. Remove from the heat and stir in the butter, extract, and salt. Place a strainer over a bowl, and use a spatula to gently press the pudding through to catch any bits of egg that might have curdled.
  • Fill and chill the pie: Spread the pudding into the crust. Place a piece of plastic wrap directly on the surface of the pudding to prevent a skin from forming. Chill the pie for at least 6 hours to set or overnight. When ready to serve, top with whipped cream and chopped peppermint bark.

24 Oreo Cookies
4 tablespoons butter
25 regular sized marshmallows
2/3 cup half-and-half
2 teaspoons mint extract and 2 teaspoons chocolate extract
1 to 2 drops green food coloring (optional)
1 cup heavy whipping cream
Extra cookie crumbs or shaved chocolate for garnish

Steps:

  • Place the cookies in the bowl of a food processor and process until finely ground. With the food processor running, slowly add the melted butter.
  • Spray a shallow 9 inch pie pan with spray oil. Press the cookie and butter mixture into the pie pan. Refrigerate while making the filling.
  • In a double boiler, melt the marshmallows in the half-and-half. Let cool.
  • Add the extracts and food coloring.
  • Whip the heavy cream to the stiff peak stage and fold it into the marshmallow mixture.
  • Spread the filling into the chilled crust, and refrigerate for at least an hour. You can also freeze the pie for about an hour.
  • Before serving, sprinkle the pie with cookie crumbs or shaved chocolate.

18 mint-flavored creme-filled chocolate sandwich cookies
1/4 cup butter, melted
1 cup semi-sweet chocolate chips (6 oz.)
2 1/2 cups heavy cream (whipping)
1 (8 ounce) package cream cheese, softened
1/3 cup sugar
1 1/2 teaspoons pure mint extract

Steps:

  • Coat a 9-inch pie plate with nonstick spray.
  • Crust; Pulse cookies in food processor to make fine crumbs.
  • Add butter, process to blend.
  • Press on bottom and sides of pie plate.
  • Refrigerate to firm.
  • Heat chips and 1/2 cup heavy cream just to a simmer.
  • Let stand 1 minute.
  • Stir until smooth.
  • Cool to room temperature.
  • Beat cream cheese, sugar and mint extract with mixer on medium speed until light and fluffy.
  • Beat remaining cream until soft peaks form.
  • Fold 1/2 into cream cheese mixture and 1/2 into chocolate.
  • Spread 1/2 the cream cheese mixture evenly on bottom of crust; top with 1/2 the chocolate.
  • If necessary place pie in freezer 8 to 10 minutes to firm before proceeding.
  • Spread with rest of cream cheese mixture; swirl on rest of chocolate.
  • Refrigerate at least 6 hours until firm.

4 (8 ounce) packages cream cheese, softened
¾ cup white sugar
3 eggs
1 teaspoon vanilla extract
1 (9 inch) prepared graham cracker crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • With an electric mixer beat the cream cheese and sugar until smooth. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla. Pour filling into the crust.

1 and 1/4 cups (300ml) heavy cream
1/2 cup (60g) icing/powdered sugar
1 teaspoon vanilla extract
12oz (350g) chocolate (milk, dark, or semi-sweet), chopped
3 cups (720ml) heavy cream
1 teaspoon peppermint extract
1/2 teaspoon vanilla extract
1/2 cup (115g) cream cheese, softened
30 Oreo cookies, processed into fine crumbs
1/2 cup (115g) unsalted butter, melted

Steps:

  • Mix together the Oreo crumbs and melted butter. Press the crumbs into a greased 9-inch pie dish, or springform pan, and refrigerate whilst preparing the filling.
  • Add the chocolate, and 1 cup (240ml) of the heavy cream to a microwave-safe bowl, and heat in 30 second intervals, stirring after each one, until melted and smooth. Stir in the mint and vanilla extract, and allow the melted chocolate to cool completely.
  • Using a handheld or stand mixer, whip the remaining 2 cups (480ml) of heavy cream to soft peaks. Add the cream cheese and whip to stiff peaks. Gently fold in the melted chocolate.
  • Spoon the filling into the crust, and gently spread out evenly. Cover and refrigerate for at least 6 hours or overnight before topping.
  • Using a handheld or stand mixer, whip the heavy cream until it starts to thicken. Add the icing sugar, and vanilla, and whip to stiff peaks.

  • Heat oven to 400°F. Bake pie crust as directed on package for One-Crust Baked Pie Shell. Cool completely, about 30 minutes.
  • Meanwhile, in 2-quart saucepan, stir together milk and pudding mix. Cook over medium heat 7 to 9 minutes or until mixture comes to a full boil, stirring constantly. Remove from heat. 2 teaspoons creme de menthe liqueur
⅓ cup white sugar

Steps:

  • Combine 1 1/2 cups cookie crumbs and melted butter or margarine. Press firmly over bottom and up the sides of a 9 inch pie pan. Freeze.
  • Spread half of softened ice cream in crust. Drizzle 2 tablespoons creme de menthe and sprinkle 1/2 cup cookie crumbs over the ice cream. Repeat. Freeze till firm.
  • In a clean bowl, beat egg whites until foamy. Add salt and cream of tartar, and beat until slightly stiff. Gradually beat in sugar until peaks form. Fold in 2 teaspoons creme de menthe. Spread meringue over pie, and seal to edges. Freeze up to 24 hours.
  • Just before serving, broil until top is golden.

Steps:

  • Pulse the Oreos in a food processor until completely crumbled
  • Add the crumbled Oreos and melted butter to a large bowl. Mix until well combined

Steps:

  • Coat a 9-inch pie plate with nonstick spray.
  • Crust: Pulse cookies in a food processor to make fine crumbs. Add butter; process to blend. Press over bottom and up sides of pie plate. Place in refrigerator.
  • Meanwhile heat 1/2 cup heavy cream and the chocolate chips in a medium saucepan just until cream simmers. Let stand 1 minute. Stir until smooth. Cool to room temperature.
  • Beat cream cheese, sugar, and extract in a medium bowl with mixer on medium speed until light and fluffy.
  • Beat remaining heavy cream with mixer on medium-high speed until soft peaks form when beaters are lifted. Fold 1/2 into cream cheese mixture and 1/2 into chocolate.
  • Spread 1/2 the cream cheese mixture over bottom of crust; top with 1/2 the chocolate. If necessary, freeze pie 8 to 10 minutes to firm up before proceeding. Spread with rest of cream cheese mixture; swirl on rest of chocolate.
  • Refrigerate at least 6 hours until firm, or up to 3 days.
