GIRL SCOUT CHOCOLATE MINT COOKIES (COPYCAT)
I've never been able to tell the difference between this imposter and the real deal. Easy, Easy, Easy!! I actually overheard this recipe at a meeting when I was working as a journalist. I tried it, and it's a winner! You might be able to get more than 70 cookies out of this recipe.

Steps:
- Melt the mint chocolate chips in the microwave.
- Dip crackers, one at a time, into the chocolate.
- Lay on wax paper to set.
- Store in airtight container (if there's any left, that is).

CHOCOLATE MINT COOKIES(TASTE LIKE THIN MINTS!)
Chewy chocolate cookies are topped with half of an Andres mint. They melt-in-your mouth, aren't too minty, and remind me of my very favorite girl scout thin mints. I found this on AllRecipes.com and made for a bake sale -- they were gone in a flash! I made small cookies and used a half mint. For larger cookies, use a whole mint per cookie.

Steps:
- In a large pan over low heat, cook butter, sugar and water until butter is melted. Add chocolate chips and stir until partially melted. Remove from heat and continue to stir until chocolate is completely melted. Pour into a large bowl and let stand 10 minutes to cool off slightly.
- At high speed, beat in eggs, one at a time into chocolate mixture. Reduce speed to low and add dry ingredients, beating until Preheat oven to 350 degrees F (175 degrees C).
- Roll dough into balls and place on ungreased cookie sheet about 2 inches apart. Bake 8-10 minutes. While cookies are baking unwrap mints and divide each in half. When cookies are brought out of the oven, put 1/2 mint on top of each cookie. Let the mint sit for up to 5 minutes until melted, then spread the mint on top of the cookie. Eat and enjoy!

Steps:
- Sift flour, sugar, cocoa powder, baking powder and salt into medium bowl; stir to mix.
- In another bowl, combine egg, milk and butter, beat to mix well.
- Pour egg mixture into flour mixture; mix until moistened.
- Be careful not to overmix.
- Gently fold in candies.
- Lightly grease 12 muffin cups or line with cupcake liners.
- Place about 1/4 cup batter into each cup.
- Bake in a pre-heated 375°F oven for 15-18 minutes, or until top of muffins are slightly firm.
- Remember toothpick won't necessarily work because of the melted chocolate.
- Cool in pan for 5 minutes.
- Place on wire rack to cool completely.
HIDDEN CHOCOLATE MINT COOKIES
These cookies contain a surprise of a chocolate mint inside. Fun to make and eat. A wonderful after-dinner cookie.

- Mix the shortening, sugars and egg.
- Stir in water and vanilla.
- Stir together the dry ingredients then mix into the batter.
- Chill the dough.
- Enclose each wafer into about 1 tablespoon of dough.
- Place each on a greased baking sheet and bake in a 400 degree oven for 8-10 minutes, or until no imprint remains when touched lightly.

These are such a smooth cookie; minty, chocolate, and a pretty frosting. They are from a TOH and are a must have on a cookie tray!

- In a large mixing bowl, cream butter and sugar.
- Beat in chocolate and mint extract; gradually add flour.
- Stir in chocolate chips. Dough will be soft.
- Drop by Tbsp 2 inches apart on ungreased baking sheets.
- Bake at 375 for 6-8 minutes. Cool 4 minutes before moving to racks to cool completely.
- Combine icing ingredients and spread over cooled cookies; let set.
- In a microwave, melt drizzle ingredients, stir until smooth. Drizzle over cookies.
