- Thaw and chop fruit if necessary. In a saucepan, combine the fruit, 3/4 cup water, 1 cup sugar and 2 tablespoons butter. Cook and stir over medium heat just until mixture begins to simmer and butter is melted. Remove from the heat; set aside., In a bowl, combine baking mix and remaining sugar. Melt remaining butter. Stir butter and remaining water into dry ingredients until smooth. Transfer to a greased 2-qt. baking dish. Spoon fruit mixture over batter. Bake at 375° for 35 minutes or until cake tests done. Serve warm.

- Make the topping in a small bowl.
- cut margarine very small and get soft to room temperature using a serving size spoon like a pastry blender, mix in other ingredients until crumbly (Do it for a few minutes.
- put aside and come back and do it again several Times.
- In a bowl place the thawed peaches and sugar and sprinkle with cinnamon.
- Set aside for a FEW MINUTES.
- Strain off the excess juice.
- make the batter ingredients well and pour onto bottom of well greased 9" x 13" metal pan.
- Arrange the peaches on top of the batter evenly.
- Sprinkle topping evenly OVER THE TOP.
- Bake 350 degrees for 70 minutes.

- 1. Heat oven to 350°F. Spray 13x9-inch pan with cooking spray. In medium bowl, mix cracker crumbs, pecans, brown sugar and butter. Press evenly in bottom of pan.
- 2. Arrange peaches on crust. Sprinkle with cinnamon-sugar. In medium bowl, mix Bisquick mix, granulated sugar and milk; pour over peaches.

You can use any fruit (or combination) to make this biscuit-topped cobbler. Just be sure to adjust the amount of sugar depending on whether your fruit is more sweet or tart. Start with a few tablespoons and go up from there, tasting as you go. For the most tender biscuits, be sure to let the dough chill before baking.

- Place a piece of parchment paper on a small rimmed baking sheet or large plate.
- In a food processor, pulse together flour, granulated sugar, baking powder, baking soda and salt. Pulse in butter just until mixture looks like small pebbles. Drizzle in buttermilk and cream, and pulse just to combine.
- Transfer to a lightly floured surface and pat dough together, incorporating any stray or dry pieces. Using a spoon, scoop off 2-inch pieces of dough and roll into balls (you should end up with about 10). Transfer dough to baking sheet or plate and flatten balls to 3/4-inch thick; wrap with plastic and chill for at least 20 minutes, and up to 8 hours.
- Meanwhile, heat oven to 350 degrees. In a large bowl, toss together fruit, sugar to taste, and tapioca. Let sit for 20 minutes to hydrate tapioca, then scrape into a 2 1/2-quart gratin dish or 9-by-13-inch baking pan.
- Top with biscuits, then brush biscuit tops with remaining 1 tablespoon cream. Sprinkle with turbinado sugar, and bake until dark golden on top and fruit is bubbling in the middle, about 1 hour, rotating halfway through. Let cool for at least 30 minutes before serving.

- Combine blueberries, sugar and first amount of water in small saucepan.
- Heat, stirring often, until mixture simmers.
- Simmer for 2 or 3 minutes until berries are cooked.
- Mix cornstarch into second amount of water and stir into simmering berries.
- Stir until thickened a bit.
- Turn into ungreased 3 cup or 1 quart casserole.
- Keep warm.
- Topping: Measure first 4 ingredients into bowl.
- Stir.
- Add cooking oil, milk and vanilla.
- Stir.
- Drop in 4 mounds over top of berries.
- Bake, uncovered in 400f degree oven for about 20 minutes.
- Recipe can easily be doubled.

- Combine first 4 ingredients in a Dutch oven; add peaches.
- Bring to a boil, and cook 1 minute, stirring often.
- Remove from heat.
- Pour into a lightly greased 13x9x2-inch baking dish; set aside.
- Combine butter, brown sugar, and pecans; set aside.
- Combine flour and 2 teaspoons.
- sugar; cut in shortening with a pastry blender until mixture is crumbly.
- Add buttermilk, stirring just until dry ingredients are moistened.
- Turn dough out onto a floured surface, and knead 3 or 4 times.
- Roll dough to a 12x8-inch rectangle; spread with pecan mixture, leaving a 1/2-inch border.
- Starting with long side, roll up jellyroll fashion.
- Cut roll into 1/2-inch slices; arrange slices over peach mixture.
- Bake at 400* for 25 to 30 minutes or until lightly browned.
- Yield: 12 servings.
EASY FRUIT COBBLER
This cobbler is so very simple, and so very delicious. I am writing this recipe with peaches, however you can use any variety of canned fruit. Hope you enjoy.

Steps:
- Preheat oven to 350 degrees, put stick of butter in 9x13" pan and melt in oven.
- Mix flour, sugar, and milk.
- When your butter is melted pour your mixture into pan directly on top of butter.
- Place peach/fruit slices into pan on top of cobbler.
- Pour syrup over top of cobbler and bake for approximately 1 hours till crust is brown and edges are bubbley.
- Serve hot with ice cream if you wish.
- I put 8-10 on the servings it depends on the size of the servings.
