Kids will love these, they are whimsical and fun. Cute chocolate mice rolled in confectioners' sugar or chocolate cookie crumbs are very realistic.

4 (1 ounce) squares semisweet chocolate
⅓ cup sour cream
1 cup chocolate cookie crumbs
⅓ cup chocolate cookie crumbs
⅓ cup confectioners' sugar
24 silver dragees decorating candy
¼ cup sliced almonds
12 (2 inch) pieces long red vine licorice

Steps:

  • Melt the chocolate, and combine with sour cream. Stir in 1 cup chocolate cookie crumbs. Cover and refrigerate until firm.
  • Roll by level tablespoonfuls into balls. Mold to a slight point at one end (the nose).
  • Roll dough in confectioners sugar (for white mice), and in chocolate cookie crumbs (for dark mice). On each mouse, place dragees in appropriate spot for eyes, almond slices for ears, and a licorice string for the tail.
  • Refrigerate for at least two hours, until firm.

2 1/4 cups glutinous-rice flour
1/4 cup potato flour
3/4 teaspoon salt
1/2 teaspoon sugar
1 1/2 cups boiling water
500 g minced beef or 500 g minced chicken
500 g ground pork
salt & pepper
2 tablespoons paprika
2 tablespoons ground ginger
1 red chili, minced
1 green chili, minced
1 brown onion, minced
1/4 savoy cabbage, finely shredded
1 carrot, grated
1 egg white, beaten

Steps:

  • Make pastry first;.
  • Mix flours, salt, sugar and add boiling water.
  • Mix well, knead on floured bench.
  • Rest before using.
  • Make filling;.
  • Mix meat, and seasonings by hand or pulse in a food processor. Do not over process.
  • Add vegetables and mix by hand.
  • Roll pastry until thin & cut into rounds; I use an egg-ring.
  • Brush edge of rounds with eggwhite.
  • Place 1-2 tablespoons of filling on each round & shape around filling, moulding into an attractive ball-shape; a little filling should be exposed on the top.
  • Steam for 15 minutes OR Deep fry 180 c for 5-10 minutes.

1 lb cherries, with stems
1 lb Hershey chocolate kiss
semi-sweet chocolate chips, for melting
sliced almonds
icing (optional) or red-hot candies (optional)

Steps:

  • Melt the chocolate chips in a double boiler and dip a cherriy into the chocolate, holding by the stem ("tail").
  • Set cherry on its side on waxed paper. This is the mouse's body and tail.
  • While chocolate it still gooey, "glue" on a hershey's kiss to the mouse's body, with the bottom of the kiss touching the cherry and the pointy part pointing out, the opposite direction that the tail is pointing.
  • Add sliced almonds in the seam for ears.
  • Decorate with icing or red hots for eyes and nose.
  • Repeat with the rest of the cherries, etc.

These are a very "moresome" bikky:) I used to sell these at the local markets, and they always sold out first. Very easy to make, and to really show off, you can throw a handful of chopped macadamia nuts in, gives them an extra crunch!!! PLEASE NOTE, THESE ARE NOTHING LIKE AMERICAN CHOC CHIP COOKIES, WHICH ARE SOFT AND CHEWY. I have also added coco powder to the mix and used white chips, looks good, but the white chips stay very hard.

250 g butter
3/4 cup sugar
200 g condensed milk (1/2 can)
2 1/2 cups self raising flour
3/4 cup chocolate chips
3/4 cup chopped macadamia nuts (optional)

Steps:

  • Cream together the butter and sugar.
  • Add the condensed milk and keep beating for 2 minutes.
  • Fold through the flour, then the choc chips. The mixture will be tacky.
  • Place teaspoons full on your baking tray (either greased or baking pepper).
  • Flatten slightly with a floured fork.
  • Bake at ABOUT (all stoves are different) 160°C for about 15 minutes, or till golden.
  • Leave on trays for 3 minutes, then cool on wire racks.

These are really popular finger food in Australia. Maybe you call them ribbon sandwiches, but most often they are know as club sandwiches here.

1 loaf bread, sliced lengthways
1 (500 g) jar cream cheese spread
5 eggs, hard cooked,mashed,seasoned
2 -3 tomatoes, sliced thinly
200 g ham, shaved thinly
salt and pepper

Steps:

  • If you have your bread sliced at the thickness for sandwiches, you should have 8 long slices.
  • Soften the cream cheese in the microwave if necessary so you don't tear the bread.
  • Lay your bread slices out, and spread with the cream cheese-just as you would with butter for a normal sandwich.
  • On the first slice, top with the ham, then a bread slice, top with tomato, and a bread slice, top with the mashed egg, then a final bread slice.
  • Season each layer with salt and pepper to taste.
  • Repeat with the remaining 4 slices of bread and filling.
  • I like to place 12 cocktail sticks in the sandwich stacks so I can see where I will be cutting, then I take my electric knife, remove the crusts, and finally cut each stack into 12.

Aussies love a BBQ - and I am no exeption. I LOVE vegetables and this is my favourite BBQ dish. I make this in Summer when the produce for this recipe is in season. I can't count how many time I have handed out this recipe, I hope you enjoy this.

2 medium green zucchini
1 medium eggplant
1 large red capsicum
1 large green capsicum
10 mushrooms
250 g punnet cherry tomatoes
1/2 cup olive oil
1/2 cup lemon juice
1/2 cup soy sauce
2 tablespoons garlic

Steps:

  • Wash and chop all the vegetables (not the tomatoes) and place in a large glass or ceramic dish dish.
  • Place the oil, juice, soy sauce and garlic in a jug and stir.
  • Pour over the vegetables and mix.
  • Cover and let marinate for 2 - 24 hours.
  • Cook over a prepared hot BBQ plate for 10 minutes, flipping often.

  • In a large bowl, beat the cream cheese with the butter, 1/2 cup of the confectioners' sugar and the melted chocolate. Crumble 1 1/2 of the warm cake layers into the bowl and beat at low speed until incorporated. Roll level tablespoons of the mixture into 3 dozen ovals, tapering one end to shape the nose. Arrange the mice on a wax paper–lined baking sheet; press a toothpick into the tail end of each. Refrigerate until firm, 30 minutes.
  • Meanwhile, preheat the oven to 275°. Crumble the remaining 1/2 cake layer and spread on a rimmed baking sheet. Bake for 30 minutes, stirring frequently, until almost dry. Very finely crush the crumbs.
  • In a microwave-safe bowl, heat the white and extra-bittersweet chocolate together on high power until three-quarters melted. Stir the chocolates until completely melted and cooled to 90° on an instant-read thermometer. Working quickly, and using the toothpick as a handle, dip the mice into the chocolate to coat; let any excess drip back into the bowl. Roll the mice in the cake crumbs and press 2 pumpkin seeds into the heads of each mouse to make ears. Refrigerate until firm, about 20 minutes.
  • In a bowl, combine the remaining 1/2 cup of sugar with water to make a stiff glaze. Transfer to a small plastic bag and snip off a tiny corner from one end. Pipe eyes on the mouse. Remove the toothpicks and insert a licorice whip into each indentation for the tails.
