Steps:
- Heat oven to 200C/180C fan/gas 6 (or a BBQ). Make a slit through the skin of the bananas along one side - making sure you don't cut all the way through to the other side. Poke in the chocolate buttons along the cut. Put each banana onto a sheet of foil and crimp the edges together to seal into a parcel. Transfer to a baking sheet and cook for 25 mins until the bananas have turned black (or pop straight into the BBQ embers for 15 mins).
- Serve with a scoop of ice cream and any melted chocolate that has escaped!

CAMPFIRE BANANAS AT HOME
Steps:
- Place a rack in the upper third of the oven and heat oven to 400 degrees F.
- Slice bananas down the center vertically. Wrap individually in foil. Top each banana with chocolate chips and marshmallow. Seal the foil and place on a rimmed baking sheet. Bake for 6 to 8 minutes or until chocolate and marshmallow has melted and the bananas are softened slightly.
- Remove from the oven, carefully open the foil and top with whatever toppings you'd like. Enjoy and Happy Summer!

- Preheat oven at 375°. In a large bowl, combine the first 5 ingredients. In another bowl, combine the eggs, oil and vanilla. Stir into dry ingredients until just moistened. Fold in the bananas, coconut and pineapple. , Fill greased or paper-lined muffin cups two-thirds full. Sprinkle with nuts. Bake for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Freeze option: Freeze cooled muffins in airtight containers. To use, thaw at room temperature or, if desired, microwave each muffin on high until heated through, 20-30 seconds.

CHOCOLATE & MACADAMIA BAKED BANANAS
This is as easy a recipe as I've seen anywhere and SO delicious: just have a glance at the ingredients and the instructions. Do recipes come any easier than this? This is Todd Cameron's recipe and it appeared in the October issue of the Australian magazine 'Delicious'. Todd is the chef at the Gaia Retreat & Spa near Byron Bay. How do I explain Byron Bay to non-Australians? Well the name of the retreat should give you some idea. Byron Bay, situated on the New South Wales coastline, on the Pacific Ocean, has long been the retreat of hippies - or aging hippies - and in more recent years properties there have been much sought after by Australian actors, such as Russell Crowe and Paul Hogan. So although Byron Bay still has New Age leanings, it has also become the stomping ground of the rich and famous. That said, this recipe with its three ingredients and no chopping or grating, whisking or kneading, couldn't be simpler. Or quicker!

- Preheat the oven to 180˚C.
- Leaving the skin on, cut along the inside curve of each banana, without cutting all the way through. Open the bananas out a little and fill them with chocolate and macadamias.
- Place the bananas on a baking sheet for 10 minutes or until they are heated through and the chocolate is melted.

BANANA CAKE WITH WHITE CHOCOLATE MACADAMIA FROSTING
Steps:
- Preheat the oven to 350 degrees F. Place 12 cupcake liners into a cupcake pan.
- In a medium bowl, cream the white sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine the flour, pudding mix and baking powder. Then add to the creamed mixture and mix well. Pour in the buttermilk and stir until the batter is smooth. Stir in the mashed banana. Pour or spoon the batter into the cupcake liners in the cupcake pan. Bake until the cake springs back to the touch, 18 to 20 minutes. Test cake doneness approximately 15 minutes into baking time. Cool.
- To assemble: Frost the cooled cupcakes with the Buttercream Frosting. Roll the cupcake tops and sides in the macadamia nuts.
- Slowly combine the butter into the confectioners' sugar, 1/2 cup at a time. After well incorporated, add white chocolate and vanilla. Whip well until light and fluffy.

- Preheat oven to 350 degrees with racks in upper and lower thirds. In a large bowl, using an electric mixer, beat butter and sugar on medium-high until light and fluffy, 2 minutes. Add egg yolk, lemon zest and juice, and salt and beat until combined; beat in nuts. With mixer on low, add flour and beat just until combined, 2 minutes. - Preheat oven to 325. Lightly grease a 13 x 9 cake pan.
- Measure out 1/2 c cake mix and set aside.
- Place the remaining cake mix, macadamias, melted butter and 1 egg in a large bowl. Beat at low speed for 2 minutes. Batter should come together into a ball.
- With your fingertips, pat dough into an even layer on the bottom of the prepared pan.
- In a glass measuring cup, microwave white chocolate on high for 1 minute. Stir until smooth.
- Place cream cheese in the same mixing bowl you used for the crust mixture. Beat on low speed until smooth. Beat in reserved cake mix. Beat in white chocolate and condensed milk until just combined, about 30 seconds, scraping down sides as needed.
- Beat in eggs, one at a time.
- Mix in bananas and vanilla.
- Pour over crust and smooth with rubber spatula.
- Bake until it looks shiny and golden brown and the center no longer jiggles when you shake the pan, about 45 to 50 minutes.
- Remove from oven, let cool for about 30 minutes. Cover tightly with plastic wrap or "Press-N-Seal" and refrigerate for at least an hour, or overnight.

- Butter a 10 x 14-inch baking dish with 1 tablespoon of the butter and set aside.
- Melt the remaining 8 tablespoons butter in a large skillet over medium heat. Add 1 cup of the brown sugar and the cinnamon and cook, stirring, until the sugar dissolves, about 2 minutes. Add the bananas and cook on both sides, turning, until the bananas start to soften and brown, about 3 minutes. Remove from the heat and let cool.
- Whisk together the eggs, remaining 1/2 cup brown sugar, cinnamon, vanilla, salt, milk, and cream in a large bowl. Add the cooled banana mixture, nuts, and bread and fold to blend thoroughly. Pour into the prepared baking dish.
- Cover with foil and set aside in refrigerate over night.
- Preheat the oven to 325°F Bake for 45 min to 1 hour until firm, remove cover and bake for additional 10 min until top is brown.
- Cool on a wire rack for 20 minutes.
- For the white chocolate sauce: bring the 1/4 cup sugar, milk, cream, vanilla seeds and empty bean pod almost to a boil in a med sauce pan then remove the bean pod.
- In a separate mixing bowl, whisk together the 2 tablespoons sugar, cornstarch and egg yolks in a mixing bowl. Stir until smooth. Gradually add the 3 tablespoons of heavy cream. Add one fourth of the hot milk mixture to the egg yolk mixture. Pour this back into the cream mixture in saucepan.
- Cook over a gentle heat, whisking continuously to avoid scorching. Cook until the sauce begins to thicken. Remove from heat and pour the sauce back into the mixing bowl through a fine mesh strainer over white chocolate. Mix until chocolate is melted and sauce is smooth. Cool over an ice bath, stirring occasionally (makes 5 cups).
- To serve, scoop the pudding onto dessert plates. Top each serving with a small scoop of ice cream, drizzle with sauce, and serve immediately.

- Preheat oven to 175°C/350°F. Mash most of the bananas with a fork. Add vanilla extract, sugar, and salt and whisk to combine. Melt the coconut oil and half of the chocolate, add to the banana mixture and whisk to combine.
- Mix baking powder, cocoa, and flour, sieve into the banana mixture and fold in until you have a smooth batter (feel free to taste).
- Chop the remaining chocolate and macadamia nuts, then fold in with a scraper. Grease your loaf pan and lay out some parchment paper. I like to let some hang over the edges, so I can lift the baked banana bread out effortlessly.
- Fill the loaf pan with the batter. For decoration, slice the leftover banana lengthwise, arrange on top of the batter, and sprinkle some brown sugar over it to caramelize.
