EASY PEASY DREAM WHIP CHOCOLATE MOUSSE
Posted for ZWT3. I tried this before posting it and it is so easy and so delicious. A classic French dessert and usually much more difficult to make - and the good news is, you don't have to wait for this to chill. I had some immediately after mixing and it was so good! You could also substitute any flavor pudding mix you wanted.

Steps:
- Beat 1/2 cup milk, vanilla, and Dream Whip powder on slow speed just until blended. Then, blend on high speed for 4 minutes or until topping thickens and forms peaks.
- In a separate bowl, pour remaining 1 1/2 cups milk and then add pudding mix.
- Beat with wire whisk 2 minutes (I beat on low speed about 1-2 minutes).
- Stir in Dream Whip mixture.
- Refrigerate until ready to serve. You can garnish with whipped cream or mint.
THE BEST CHOCOLATE MOUSSE
The best chocolate mousse must be perfect. It should taste rich, indulgent and not too sweet, with a texture that is both light-and-airy and silky-and-smooth. After many attempts we nailed it and made a dessert that not only exceeded our standards, it's also quite easy to pull off. Close your eyes and take a bite -- you'll be transported to a 4-star French restaurant.

Steps:
- Whip 1 cup of the heavy cream to soft peaks in a medium bowl (see Cook's Note). Set aside.
- Add the egg, egg yolks, sugar, espresso powder, vanilla extract, salt and 1 tablespoon water to a medium heatproof bowl and whisk to combine. Set the bowl over a medium saucepan of gently simmering water (do not allow the bowl to touch the water). Whisk constantly until the mixture is pale, hot to the touch and has almost doubled in volume, about 4 to 6 minutes, scraping down the sides of the bowl occasionally with a rubber spatula, if necessary. Remove from the heat and continue whisking until cooled, about 2 minutes.
- Put the chopped chocolate in a medium heatproof bowl and set over the saucepan of gently simmering water (do not allow the bowl to touch the water). Stir occasionally with a rubber spatula until the chocolate is melted and smooth. Remove from the heat and gently stir for about 3 minutes to cool slightly.
- Whisk the egg mixture into the melted chocolate in 3 additions until combined. (The mixture may get very thick.) Using a rubber spatula, gently fold the whipped cream into the chocolate mixture in 3 additions until it is fully incorporated. It is important that the chocolate mixture is not warm to ensure that it combines smoothly with the whipped cream without seizing up.
- Divide the chocolate mousse among four 4-ounce ramekins and chill until firm, about 1 hour.
- Whip the remaining 3/4 cup cold heavy cream to stiff peaks. Top each chocolate mousse with whipped cream and serve. (For a softer texture, allow the ramekins to sit at room temperature while you whip the cream.)
MELTED ICE CREAM CHOCOLATE MOUSSE
The base of this decadent chocolate dessert is melted vanilla ice cream (with added cocoa powder, of course).

- Whisk the ice cream and cocoa powder in a saucepan, making sure there are no lumps. Heat over medium heat until simmering. Put the chopped chocolate in a medium bowl and pour the heated ice cream over the top. Stir to evenly melt the chocolate, then let cool to warm.
- Beat the egg whites with a pinch of salt until they hold stiff peaks. Whisk one-third of the whites into the chocolate base to lighten. Gently fold in the remaining egg whites.
- Beat the heavy cream until it just holds medium-stiff peaks, then fold into the chocolate mixture. Divide the mousse among 4 serving bowls and chill until set, about 1 hour 30 minutes. Serve topped with the shaved chocolate.

- SPRINKLE gelatin over water in a medium saucepan; let stand for 1 minute.
- Stir over low heat until gelatin is dissolved; stir in sugar.
- Stir in evaporated milk.
- Continue stirring over medium heat until milk is steaming hot (do not boil).
- POUR into blender container; add morsels and vanilla extract.
- Cover; blend on low speed until smooth.
- Pour into small mixer bowl.
- Chill, stirring occasionally, until mixture mounds from a spoon.
- BEAT on high speed for 1 to 2 minutes or until thick and light in color.
- Spoon into serving dishes; chill until ready to serve.

- In a bowl, combine the flour and pecans; cut in butter until mixture resembles fine crumbs. Press into a 13x9-in. baking pan. , Bake at 350° for 15-20 minutes or until golden brown. - Preheat oven to 350°. Grease and flour 3 (9-inch) square or round cake pans. In a large bowl, combine flour, sugar, cocoa, baking powder, baking soda, and salt. Add mik, coffee, oil, and eggs. Beat at medium speed with an electric mixer until smooth.
- Pour evenly into prepared pans and bake for 23 to 25 minutes, or until a wooden pick inserted in center comes out clean. Let cool in pans for 10 minutes, Remove from pans, and let cool completely on wire racks.
- Using a serrated knife, cut cake layers in half horizontally to make 6 layers. Place 1 layer, cut side up, on a cake plate, spread with one-fifth of Dreamy Chocolate Mousse. Repeat procedure with remaining cake layers and mousse. Freeze cake for 1 hour. Spread Chocolate Fudge Frosting evenly over top and sides of cake. Garnish sides of cake with grated chocolate. - In a small bowl, soften gelatin in 3 tablespoons cold water. Let stand for 2 minutes. Add boiling water, stirring until gelatin dissolves; set aside.
- In a small bowl, combine sugar and cocoa powder.
- In a medium bowl, beat cream at medium speed with an electric mixer until foamy. Gradually add sugar mixture, beating until stiff peaks form. Stir in gelatin mixture. Cover and chill for 4 hours.
- Chocolate Fudge Frosting
- In a medium saucepan, combine sugar and cream. Bring to a boil over medium-high heat; reduce heat, and simmer for 6 minutes, stirring frequently. Remove from heat; add chocolate and butter, stirring until melted and smooth. Let cool for 10 minutes. Whisk in confectioner's sugar. Let mixture cool until it reaches a spreadable consistency.
