Chocolate Dipped Rice Krispie Treats are an extra special twist on classic Rice Krispie squares. They're fun party snacks that are easy to make and perfect for customizing with your favorite colors and sweet goodies, like sprinkles or chopped nuts and more!

½ stick of butter (1/4 cup)
10-ounce bag of mini marshmallows (about 5 cups)
2 tsp vanilla extract or paste
5 cups Rice Krispies cereal
12 ounces chocolate chips (1 bag)
Sprinkles (optional)

Steps:

  • Grease the bottom of a 9x13 pan. Set aside.
  • In a large pot, melt the butter over medium-low heat.
  • Reduce heat to low and add the marshmallows. Stir often until the marshmallows are melted and totally incorporated with the butter. Do not overcook or you'll have hard treats!
  • Add the vanilla and stir to combine.
  • Turn off the heat and pour in the cereal. Gently fold in the marshmallow mixture until all of the cereal is fully coated.
  • Transfer the cereal mixture into the greased pan. Lightly press the mixture so you have a nice even layer throughout the pan.
  • Allow the treats to cool, cut them into any size squares you like.
  • Next, add the chocolate chips into a small bowl. Microwave in 15-20 second intervals stirring each time until chocolate is completely melted and smooth. If the chocolate seems too thick, add about 1 teaspoon of vegetable or coconut oil until the chocolate is shiny and stirs easily.
  • Dip each Rice Krispies treat in chocolate and lightly shake off any excess chocolate. You can dip just the top or dunk half of the bar into the melted chocolate. If desired, add sprinkles to the top while the chocolate is still wet.
  • Place the dipped treats on a sheet of wax paper to set up. Allow the chocolate to harden before serving.

Milk chocolate-dipped marshmallow cereal treats are decorated using modeling chocolate to look like cute and kooky turkeys for Thanksgiving.

6 Rice Krispies Treats (store-bought or homemade)
16 ounces melted and tempered pure milk chocolate or melted light Cocoa Candy Melts
2 ounces white modeling chocolate
1 ounce each of orange, black, and red modeling chocolate

Steps:

  • Dip the tip of your straw, lollipop stick, or craft stick in melted chocolate.
  • Push it into one end of the Rice Krispie Treat.
  • Allow that chocolate to dry.
  • Dip the cereal treat into the melted chocolate then remove and allow the excess chocolate to drip off.
  • Set the chocolate-dipped treat on a baking sheet lined with parchment paper.
  • If using pure milk chocolate, refrigerate for 5-10 minutes until set. If using light cocoa candy melts, freeze for 5-10 minutes.
  • Allow the chocolate-dipped cereal treats to come to room temperature before decorating.
  • Using a fondant roller, roll all the colors of modeling chocolate out to about 1/16th of an inch.
  • Pinch off 6 tiny pieces of red and roll them into teardrops, then shape each into the Turkeys' wattles.
  • Use a small round plunger cutter or the tip of a #4 pastry tip to make the black pupils.
  • Cut two different sized circles out of the white for each turkey.
  • Very lightly brush the backsides of the black pupils with water and attach them to the white eyes.
  • Also, use water to attach the facial features to the chocolate dipped rice cereal treat bars.

We took a classic crispy rice treat recipe and sculpted it into a festive Thanksgiving shape that is sure to impress any crowd. Dust your "turkey" with cinnamon sugar and serve with candy "stuffing" for the perfect party dessert. Look at the photo to help guide you through the molding and shaping process.

Nonstick cooking spray
1 stick (8 tablespoons) unsalted butter
Two 10-ounce packages mini marshmallows, reserve 4 for garnish
1 teaspoon pure vanilla extract
One 12-ounce box crispy rice cereal (about 12 cups)
1 1/2 ounces chocolate-covered wafer candy bars, such as Kit Kat, chopped into 1/4-inch pieces (about 1/3 cup)
3 tablespoons chopped green gummy candies
1 teaspoon ground cinnamon
2 tablespoons sugar
1/2 cup dried pineapple rings, halved (about 2 ounces)
1/2 cup dried kiwi slices (about 2 ounces)
1/2 cup grapefruit gummy candy (about 2 ounces)

Steps:

  • Spray a wooden spoon or rubber spatula with nonstick cooking spray and line a baking sheet with parchment paper. Set aside.
  • Melt the butter in a large pot over medium heat. Add the marshmallows (reserving 4 pieces for garnish) and stir until completely melted, about 5 minutes; stir in the vanilla. Add the rice cereal and stir with the sprayed utensil until the cereal is completely coated and the mixture is thoroughly combined.
  • Coat your hands with a little nonstick cooking spray so the mixture does not stick. Divide the crispy treat mixture into two portions, 1/4 of the mixture (about 9 ounces) and 3/4 of the mixture (about 1 1/2 pounds). Using the larger portion, make a teardrop-shaped body 8 inches across at the wide end and about 12 inches long. Using your hands or a spoon, create a cavity at the tail end of the teardrop shape, where you would ordinarily put stuffing in a real turkey. Do not hollow out the entire body, you only need to make an indentation about 4 inches deep.
  • Take the remaining crispy treat mixture and set one-third of it aside to make the wings. From the other two thirds, mold two drumstick shapes and affix them to either side of the cavity. Make two wings and attach them to either side of the wide end of the teardrop.
  • Transfer the turkey to a serving platter and fill the cavity with chopped-up chocolate-wafer candy bars. For a little flourish, mix in some sliced-up green gummy candy to resemble parsley. Whisk the cinnamon and sugar together in a small bowl. Sprinkle the cinnamon-sugar over the turkey to give the outside a browned look. Attach the four reserved mini marshmallows to the ends of the drumsticks to resemble bone tips. Tuck the slices of dried pineapple, dried kiwi and some grapefruit gummy candy around the turkey for garnish.
