BEEF CURRY WITH SPINACH (PALAK GHOST)



Beef Curry With Spinach (Palak Ghost) image

From an Indian chef in Hamburg. All I can say is Awesome! We have made this multiple times and each time we love it more and more. The combination sounds a bit odd at first, but if you like Indian food at all, you will love this recipe.

2 lbs stewing beef (can be made with lamb too)
16 ounces chicken broth
5 shallots, thinly sliced
4 garlic cloves, finely chopped
2 tablespoons fresh ginger, finely chopped
1 serrano pepper, finely chopped
5 cloves
1/4 teaspoon black peppercorns
2 bay leaves
3 cardamom, capsules
1/2 teaspoon salt
1/4 teaspoon chili powder
2 teaspoons cumin
2 teaspoons turmeric
2 teaspoons paprika
1 teaspoon garam masala
8 ounces heavy cream
1 lb fresh spinach

Steps:

  • Put cloves, peppercorns, bay leaves, and cardamom capsules in a metal tea filter ( the kind that is a ball with a hook and chain on it).
  • Heat 3 TB oil in a large pot over medium-high heat and sear the meat in 3 batches until browned. Remove the meat and salt it.
  • Add another 3 TB oil in the pot and sauté the onions, chile, garlic, and ginger until onions are translucent.
  • Add the meat and sprinkle with the chile powder, curcuma, garam masala, and cumin.
  • Stir well until all is coated with the powdered spices (about 2-3 minutes).
  • Add enough chicken broth until meat is covered, add the tea filter with the spices, cover and bring to a boil.
  • Reduce heat and simmer for 90 minutes.
  • Remove spice filter, and add the heavy cream, let simmer for 30 minutes more, do not let it boil! Adjust seasonings ( we usually need more salt here, and maybe a bit more heat).
  • Clean and wash the spinach.
  • Add the fresh spinach to the pot right before serving, and incorporate it, stirring it into the curry just until it becomes soft, about 1 minute. Serve immediately, with rice.

A hearty, flavourful and nutritious curry dish. Pared-down ingredients and a simple technique, resulting in surprisingly deep and complex flavours. Goes VERY nicely with brown rice or wholewheat flatbreads. Compliments a fresh, herby salad well.

500 g extra lean ground beef
500 g frozen spinach
1 large white onion
4 -5 garlic cloves
1 scotch bonnet pepper
1 (14 ounce) can chopped tomatoes
1 tablespoon cinnamon
2 teaspoons coriander seeds
2 teaspoons cumin seeds
1 tablespoon garam masala
1 tablespoon olive oil

Steps:

  • Chop the onion and crush the garlic. Slice the scotch bonnet into thin slivers and chop these finely.
  • Heat the oil in a deep-sided frying pan/skillet and cook the onions, garlic and pepper until soft. Add the minced beef and brown off.
  • Place the balls of frozen spinach into the pan on top of the beef. Cover and cook on a medium heat until spinach is softened. Stir thoroughly.
  • Add the cinnamon, coriander, cumin and garam masala. Stir thoroughly to blend in spices, then add the chopped tomato.
  • Increase heat and cook until the sauce reduces and thickens. Add salt to taste.

SPEEDY LAMB & SPINACH CURRY

The perfect recipe for a quick curry fix, use a tender cut of meat than can be stir-fried instead of stewed

½ tsp cumin seeds
2 tsp sunflower oil
200g lean lamb steak, cubed
1 red pepper , deseeded and sliced
1 green chilli , deseeded and sliced
2 tbsp mild curry paste
225g can chopped tomato
160ml can coconut cream
100g bag baby spinach
½ a 20g pack coriander , chopped (about 1 tbsp)

Steps:

  • Dry-fry the cumin seeds for about 20 secs in a wok, then add half the oil and stir-fry the lamb for about 1 min until browned, but not cooked all the way through. Tip onto a plate.
  • Add the rest of the oil to the wok, then stir-fry the pepper and chilli for a couple of mins until softened. Stir in the curry paste, tomatoes and coconut cream with half a can (from the tomatoes) of water, then simmer for about 5 mins until saucy. Add the lamb, spinach and coriander, stir until the spinach has wilted, then serve with basmati rice.

450g halved new potato
2 tbsp vegetable oil
1 onion , finely chopped
2 garlic cloves , crushed
450g minced turkey
5 tbsp Madras curry paste
400g can chopped tomato
300ml/½ pt chicken stock
150g bag baby spinach

Steps:

  • Boil the new potatoes until tender. Drain. Heat the vegetable oil in a large pan and cook 1 finelythe chopped onion for 5-6 minutes. Add the garlic cloves and minced turkey and cook for 4-5 minutes. Stir in the Madras curry paste and cook for 1 minute. Stir in the chopped tomatoes and chicken stock, cover and cook for 20 minutes. Stir in the potatoes and baby spinach and heat through for 3-4 minutes.

1 teaspoon olive oil
1 onion, cubed
4 garlic cloves, minced
1 lb minced beef
1/2 beef stock cube
4 dashes Worcestershire sauce
1 1/2 teaspoons curry powder, madras
200 ml coconut milk

Steps:

  • Heat oil in a medium hot pan.
  • Brown onions. Throw a little dash of salt on the onions. Stops them burning.
  • Put the garlic in the pan and cook for about 1 min.
  • Move the onions and garlic to the side of the pan and brown the mince.
  • If a lot of liquid comes off the mince pour it into a little bowl hang onto it for later.
  • Once the mince is brown, turn up the heat and let it sit in the pan for about 4 mins until you get some searing on the meat. This is where the flavour is going to come from.
  • Mix the liquid from the meat if not too fatty, stock cube and dashes of worcestershire sauce. Keep to one side.
  • When mince is browner -- lower the heat to medium add the curry powder and cook for 1 minute.
  • Add the stock liquid, make sure this is well mixed.
  • Add the coconut milk. Mix well. Once simmering lower the heat and cook for about 20 minutes This gets better with time.
  • If the curry is too strong use the leftover milk from the coconut milk tin to thin. Usually 400 ml in a tin.
  • Serve with rice, put some veg with it or the carb police will be after me! :D.

Make our easy beef curry and serve with a hunk of naan bread to mop up the delicious juices. If you prefer it less spicy, simply add less chilli powder

2 tbsp oil
500g diced braising steak
1 tbsp butter
1 large onion , chopped
2 garlic cloves , crushed
1 thumb sized piece of ginger , finely grated
¼ tsp hot chilli powder
1 tsp turmeric
2 tsp ground coriander
3 cardamom pods , crushed
400g can chopped tomatoes
300ml beef stock
1 tsp sugar
2 tsp garam masala
2 tbsp double cream (optional)
½ small bunch coriander , roughly chopped
naan bread or rice, to serve

Steps:

  • Heat one tbsp of the oil in a casserole pot over a medium-high heat. Season the beef and fry in the pot for 5-8 mins, turning with a pair of tongs half way until evenly browned. Set aside on a plate.
  • Heat the remaining oil and butter in the pan and add the onions. Fry gently for 15 mins or until golden brown and caramelised. Add the garlic, ginger, chilli, turmeric, ground coriander and cardamom and fry for two mins. Tip in the tomatoes, stock and sugar and bring to the simmer.
  • Add the beef, put a lid on top of the curry and cook over a low heat for 1 ½ - 2 hrs or until the meat is tender and falling apart. Remove the lid for the last 20 minutes of cooking.
  • Stir through the garam masala and cream (if using) and season to taste. Scatter over the coriander and serve with naan breads or rice.
