1 ounce raspberry liqueur (recommended: Chambord)
1 ounce bourbon, (recommended: Maker's Mark)
1 ounce chocolate liqueur, (recommended: Godiva)
1/2-ounce heavy cream
Ice
Fresh raspberry, for garnish

Steps:

  • In a cocktail shaker, add the raspberry liqueur, bourbon, chocolate liqueur, heavy cream, and ice. Shake and strain into a martini glass.
  • Garnish with a fresh raspberry and serve.

Chocolate-Covered Raspberry Jellies image

Easy and delicious, these homemade raspberry jellies are the perfect pick-me-up snack.

½ cup (125 mL) raspberry purée (pureed and strained frozen raspberries work best)
⅓ cup (80 mL) unsweetened applesauce
⅔ cup (200 g) white corn syrup
1 ¼ cups (250 g) granulated sugar
1 pouch (80 mL) liquid pectin

Steps:

  • Lightly grease an 8-inch (2 L) square baking pan and line it with parchment paper.
  • In a medium saucepan, whisk the raspberry purée and applesauce and bring to a simmer over medium heat. Add the corn syrup and sugar and (increase the heat- is this needed you mentioned still on medium heat to) bring this up to a gentle but even simmer, whisking constantly. Keep simmering the liquid, stirring constantly until it reaches 225 ºF (107 ºC), 8-10 minutes. Remove the pan from the heat, pour in the pectin and whisk in. Return this to the heat to reach a simmer and then immediately pour this into the prepared pan. Let this cool, uncovered, until set, about an hour.
  • Turn the jellies out onto a cutting board and peel off the parchment paper and cut into 36 squares. Options for finishing the jellies include: a) Rolling in granulated sugar (for a gumdrop look); b) Roll in cornstarch (for a Turkish delight look); c) Dipping in chocolate - to prepare the chocolate for dipping, melt 7 oz (210 g) of the chocolate in a metal bowl placed over a pot of barely simmering water, stirring until it has melted and is within a temperature between 113-122 ºF (45-50 ºC). If the chocolate gets warmer than this, then you need to let it cool below 113 ºF (45 ºC) and re-warm. Remove the bowl from the heat and stir in 3 oz (90 g) of chocolate and stir to melt, continuing to stir until the chocolate reaches a temperature of 82 ºF (28 ºC). Return the bowl to the water bath and stir to warm up to between 88-90 ºF (31-32 ºC) - this doesn't take long. At this point the chocolate is ready for using and will set at room temperature with a nice satin finish (this process is called tempering.)
  • To dip the jellies, have a baking tray lined with parchment paper ready. Use truffle forks or other fine-tined forks to immerse each jelly into the chocolate, lift out and gently shake off excess and place on the baking tray to set. After the jellies are dipped, pop the tray into the fridge for just a minute to set the chocolate and then the jellies can be stored at room temperature in an airtight container.

These intensely rich brownie bars are not for the faint of appetite. Each brownie bears a fruity layer of raspberry jam and fresh raspberries that's covered with a truffle-like blanket of chocolate ganache over top. In other words, they're decadence incarnate. If raspberries aren't your favorite, you can always substitute strawberry jam and fresh strawberries--but you'll want to slice them in half rather than leaving them whole. If desired, garnish with a drizzle of melted white chocolate.

½ cup unsalted butter
½ cup semisweet chocolate chips
¾ cup all-purpose flour
⅓ cup unsweetened cocoa powder
½ teaspoon kosher salt
½ teaspoon baking powder
1 cup white sugar
2 large eggs
1 teaspoon vanilla extract
½ cup raspberry jam
1 ½ cups fresh raspberries
2 cups semisweet chocolate chips
1 cup heavy cream
2 tablespoons unsalted butter
1 pinch kosher salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan and line the bottom and sides with parchment paper, leaving a 1-inch overhang. Lightly grease parchment.
  • Make the brownies: Melt butter in a small saucepan over medium-low heat; once melted, stir in the chocolate chips. Stir until the chocolate is completely melted and mixture is smooth; set aside and allow the mixture to cool to room temperature.
  • Whisk flour, cocoa powder, salt, and baking powder together in a medium mixing bowl; set aside.
  • Combine sugar and eggs in a large mixing bowl; beat with an electric mixer at medium speed until pale and fluffy. Mix in vanilla. Mix in the cooled, melted chocolate, adding it to the bowl in a slow, steady stream. Mix in the dry ingredients in increments, at low speed, until just combined. Finish incorporating the batter by hand with a rubber spatula if necessary. Scrape the batter into prepared pan.
  • Bake in the preheated oven until brownies begin to pull away from the sides of pan and a toothpick inserted into the center of the brownies tests clean, 30 to 35 minutes. Place the pan on a wire rack and allow brownies to cool completely, 30 to 40 minutes.
  • To prepare the topping, spread the raspberry jam evenly over the brownies in the pan, spreading right to the edge. Arrange the whole raspberries in a single layer over the jam.
  • Place the chocolate chips in a medium, heat-proof mixing bowl. Warm heavy cream and butter in a small saucepan over medium heat, stirring occasionally. When the butter melts and the cream begins steaming and bubbling at the edges, pour the hot cream mixture over the chocolate. Let stand for 3 to 5 minutes to allow chocolate to melt; add salt and whisk until completely smooth. Pour the chocolate ganache over the raspberries. Refrigerate until chocolate is set, about 30 minutes.
  • Carefully pull the brownies from the pan using parchment paper overhang; place on a cutting board and carefully peel the parchment paper from the sides. Slice into 9 squares and serve.

  • Cover a baking sheet with parchment paper or a silpat mat and set aside. Wash the raspberries and gently pat them dry with a paper towel to remove any moisture, being careful to not damage or break them.
  • Place the white chocolate in a medium, microwave safe bowl and heat in the microwave in 30 seconds increments, stirring between each, until the chocolate is melted and smooth.
  • Place a raspberry in the white chocolate and use a toothpick to move it around to coat it completely. Poke the raspberry with the toothpick and transfer it to the prepared baking sheet. Repeat the process with each of the raspberries until they're all coated in white chocolate. Transfer the baking sheet to the freezer.
  • While they're chilling, melt the dark chocolate the same way you did with the white chocolate. When the raspberries and white chocolate are frozen and set, repeat the process with the dark chocolate and place back in the freezer. Freeze until set and serve frozen. Store in the freezer for up to 1 month.
