I think my most memorable summertime dessert for get-togethers has always been homemade ice cream. This recipe is so rich and creamy and the perfect indulgence on a hot summer afternoon. -Martha Self, Montgomery, Texas

1-1/2 cups sugar
1/4 cup all-purpose flour
1/2 teaspoon salt
4 cups whole milk
4 large eggs, lightly beaten
2 pints heavy whipping cream
3 tablespoons vanilla extract

Steps:

  • In a large heavy saucepan, combine sugar, flour and salt. Gradually add milk until smooth. Cook and stir over medium heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer. Remove from heat., In a small bowl, whisk a small amount of hot mixture into eggs; return all to pan, whisking constantly. Bring to a gentle boil; cook and stir 2 minutes. Remove from heat immediately., Quickly transfer to a large bowl; place bowl in a pan of ice water. Stir gently and occasionally for 2 minutes. Press plastic wrap onto surface of custard. Refrigerate for several hours or overnight., Stir cream and vanilla into custard. Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. (Refrigerate remaining mixture until ready to freeze.) Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm. Repeat with remaining ice cream mixture.

Rich, creamy and deeply satisfying, there is nothing better than a classic custard ice cream. Sometimes called French-style, this base incorporates eggs, which improve the texture and help prevent ice crystals from forming. This recipe for ice cream base may be churned on its own, but it is meant to have flavors added. See the chart here for flavor options and directions for incorporating them into the base recipe.

Number Of Ingredients 6

2 cups heavy cream
1 cup whole milk
⅔ cup sugar
⅛ teaspoon fine sea salt
6 large egg yolks
Your choice of flavoring (see chart)

Steps:

  • In a small pot, simmer heavy cream, milk, sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk yolks. Stirring constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).
  • Strain through a fine-mesh sieve into a bowl. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight. Churn in an ice cream machine according to manufacturers' instructions. Serve directly from the machine for soft serve, or store in freezer until needed.

3/4 cup sugar
Pinch salt
6 large egg yolks
2 vanilla beans, split and seeds scraped
2 vanilla beans, split and seeds scraped
2 cups heavy cream
1 1/2 cups whole milk
Wet Walnuts, recipe follows
2 cups maple syrup
2/3 cup corn syrup
1/4 cup packed light brown sugar
1 teaspoon vanilla extract
1/8 teaspoon salt
1 cup walnut halves

Steps:

  • In a medium heatproof bowl, whisk to combine the sugar, salt, yolks and vanilla seeds until completely smooth. In a large saucepan set over medium-high heat, combine the cream and milk and cook until small bubbles start to form around the edges of the pan and the mixture is hot. Slowly drizzle the eggs into the hot cream mixture, whisking constantly. Reduce the heat to medium-low and cook, stirring constantly, until thickened and the mixture coats the back of a spoon, 5 to 7 minutes. Remove from the heat and strain into a large bowl. Place the bowl in an ice bath and cool the custard, stirring occasionally. Store the custard into the refrigerator until ready to churn.
  • Place the custard in an ice cream maker and process until smooth and thick, about 20 minutes.
  • Transfer the ice cream to a quart container or 1 1/4-quart dish and freeze for 2 hours.
  • Serve the ice cream topped with some Wet Walnuts.
  • In a medium saucepan, combine the maple syrup, corn syrup, light brown sugar, vanilla and salt, and bring to a boil. Pour over the walnut halves and cool. Store refrigerated in an airtight container for up to 1 month.

After the ice cream is made, transfer to an airtight container. Cover tightly and freeze until ready to serve. When ready to serve, make chocolate curls using a vegetable peeler. 1 cup heavy whipping cream
1 teaspoon vanilla extract

  • In a heavy saucepan, combine first three ingredients. Cook, stirring constantly, until thickened. Cool. Pour into chilled ice cube trays without dividers or a shallow pan. Freeze to a mush (do not freeze hard). Whip cream; add vanilla and salt. Fold into partially frozen mixture. Return to trays or pan and freeze.

When thinking of the summers, the first thing that comes to mind is a creamy scoop of ice cream. The old-time custard ice cream is made by making a classic custard and then freezing it.

1-½ cup Sugar
¼ cup All-Purpose Flour
1 tsp Salt
4 cup Whole Milk
4 large Eggs (lightly beaten)
2 Pints Heavy Whipping Cream
3 tbsp Vanilla Extract

Steps:

  • Take a large, heavy saucepan and mix sugar, salt, and flour in it. Make this mixture smooth by adding milk to it. Cook this over medium flame and stir it until it becomes bubbly and thick.
  • Now, reduce the flame to a minimum and cook it for 2 minutes. Remove the pan from heat.
  • In a small bowl, whisk eggs with a small amount of the hot mixture. Add this to the pan and whisk constantly. Bring this all to a boil and cook it for 2 minutes, stirring constantly. Remove this from heat immediately.
  • Transfer this to a large bowl after placing the bowl on a pan of ice water. Stir it gently. Press the surface of the custard with a plastic wrap and refrigerate for several hours or overnight.
  • Add cream and vanilla to the custard. Fill ice cream freezer cylinders with two-thirds of their capacity and freeze them as per the manufacturer's direction. Transfer the contents to the freezer containers and allow some headspace for expansion. Freeze it for 2-4 hours till it gets firm.
  • Repeat till you freeze the whole ice cream mixture.

5 eggs
3 cups sugar
2 tablespoons flour
2 (12 ounce) cans evaporated milk
1 tablespoon vanilla
whole milk

Steps:

  • Beat egg yolks with half of sugar and all of flour. Mix until creamy. Add evaporated milk then add rest of sugar and vanilla.
  • Beat egg whites until fairly stiff. Fold into above mixture. Put in ice cream freezer and add whole milk, leaving about 1 1/2 inches at top of freezer.
  • Freeze in ice cream freezer. Makes 1 gallon.

  • Add milk, sugar and vanilla to beaten eggs.

Number Of Ingredients 9

3 cups half-and-half
3 eggs
1 cup sugar
1/2 cup corn syrup
2 cups heavy cream
1/4 teaspoon salt
1 vanilla beans or 1 tablespoon vanilla extract
1/4 cup orange juice concentrate
1/2 teaspoon orange flavoring

Steps:

  • Beat eggs in a small bowl and set aside.
  • Heat half and half in a heavy sauce pan.
  • Add sugar and corn syrup.
  • Slice open vanilla bean and add to pot. Of using vanilla extract, add vanilla at the same time as heavy cream.
  • When almost simmering, slowly add a half cup of hot milk to eggs, whisking quickly.
  • Add tempered eggs to pot and whisk quickly.
  • Cook on low for 3 minutes. Remove from heat.
  • Pour through fine mesh strainer to remove any cooked egg particles, and vanilla bean.
  • Cool before adding heavy cream and vanilla extract, if using.
  • Divide into 2 bowls. Add orange juice concentrate and orange flavoring to one bowl. Stir and taste. Add more, if necessary, until taste is to your liking.
  • Chill in refrigerator four hours or overnight, before freezing in your ice cream maker. Freeze plain vanilla first. Remove to container and place in your freezer. Freeze orange mixture. Swirl into vanilla, or Freeze in separate container.

2 vanilla beans, split lengthwise
1 cup milk
6 egg yolks, beaten lightly
2 cups cream

Steps:

  • Place sugar and vanilla beans in medium heatproof bowl; pour milk over; set bowl into a pan of simmering water, but make sure it doesn’t touch water; stir milk mixture until simmering.
  • Remove milk from heat; place yolks in heatproof bowl; gradually add milk to the egg yolks and whisk through thoroughly.
  • Return mixture to heat over simmering water; stir constantly over low heat until mixture coats back of spoon.
  • Remove from heat, set aside to cool; place plastic wrap directly onto surface of custard to prevent a skin from forming; cool; once cool, stir cream into custard and chill in refrigerator for atleast 4 hours, preferably overnight.
  • Remove vanilla beans from custard and scrape the seeds from the beans into the mixture; discard pods; pour the custard into an ice cream maker and follow manufacturer’s instructions to make ice cream.
