This was the hit of my last party! People couldn't get enough of these pop-in-your-mouth bits of heaven and everyone asked what was in them. Funny thing was, they were the easiest app to make.

6 large hard-boiled eggs, shelled
1/4 cup mayonnaise
1 tablespoon minced green onion
3/4 teaspoon curry powder

Steps:

  • Cut hard-boiled eggs lengthwise in half.
  • Scoop the yolks into medium bowl and mash with fork.
  • Add mayo, green onion and curry powder and mix well.
  • Season mixture to taste with salt and pepper.
  • You can either spoon the mix into the egg halves or like I did, pipe them with a star tip for a very nice presentation.
  • Can be made 8 hours ahead, kept covered and refrigerated.

12 hard-boiled eggs (made on the stovetop or in the Instant Pot)
1/3 cup mayo (or plain Greek yogurt)
1 tablespoon freshly-squeezed lemon juice (or vinegar)
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder
sea salt and freshly-cracked black pepper
toppings: smoked paprika and chopped fresh chives

Steps:

  • Slice the hard-boiled eggs in half lengthwise.
  • Scoop out the egg yolks and transfer them to a small mixing bowl. Using a fork, mash the egg yolks completely until they form a fine powder. Add in the mayo (or Greek yogurt), lemon juice, Dijon, garlic powder, a generous pinch of salt and pepper, and stir until completely combined. Taste the mixture and season with extra salt and pepper, if needed. Or if the mixture seems too thick, add in some more mayo or a tiny splash of water.
  • Using either a spoon or a small cookie scoop or a piping bag, fill the inside cavities of the egg whites with the yolk mixture. Sprinkle each deviled egg with a pinch of paprika and chives.
  • Serve immediately and enjoy!

I created this recipe because my daughter loves deviled eggs & I like strong seasonings. Can make 3 days ahead of time, see notes below. So here it is!

18 large hard-boiled eggs, already cooked & cooled
1 cup light sour cream
1 tablespoon spicy brown mustard
1 tablespoon white vinegar
2 tablespoons dried onion flakes
2 tablespoons dried parsley
1 tablespoon dried dill weed
1 teaspoon lemon pepper
2 tablespoons paprika, smokey preferred

Steps:

  • Peel the shells off the cooled hard boiled eggs.
  • Cut eggs lengthwise, put only the yolks into a medium bowl & smash with a fork.
  • Add sour cream, mustard, vinegar, onion, parsley, dill & lemon pepper into the yolk bowl & mix until smooth.
  • Put yolk mix into a gallon zip top bag (or a pipping bag with fancy tip), cut 1/4in off corner of bag.
  • Squeeze (or pipe) the yolk mix out of the cut bag's corner into the egg halves.
  • Sprinkle the tops of the deviled eggs with the paprika.
  • Chill in fridge 1 hr & now serve.
  • Notes: Add 30min to total time if you don't have eggs already hard boiled & cooled. You can use fresh herbs in place of the dried it's delicious too! You can make the deviled eggs 3 days ahead stored on a platter in a zip top bag in the fridge.
