- In a small bowl, beat cream cheese and confectioners' sugar until blended. Beat in pumpkin, pie spice and vanilla. Stir in cracker crumbs. Freeze, covered, 20 minutes or until firm enough to shape., Shape pumpkin mixture into 1-in. balls; place on waxed paper-lined baking sheets. Freeze 20 minutes or until firm., In a microwave, melt chocolate; stir until smooth. Dip truffles in chocolate; allow excess to drip off. Return to baking sheets; refrigerate until set. Store in airtight containers in the refrigerator.

- Pulse cookies in a food processor until fine crumbs form. In a bowl, beat cream cheese and extract until blended. Beat in banana. Stir in cookie crumbs. Freeze, covered, until firm enough to shape, about 2 hours., Shape mixture into 1-in. balls. Dip cookie balls in candy coating; place on waxed paper-lined baking sheets. Top immediately with banana chips., Refrigerate until set, about 30 minutes. Store in a covered container in the refrigerator.

CHOCOLATE-COVERED PUMPKIN BANANA TRUFFLES
These easy no-bake treats are a tasty low-sugar treat you will love this season! Filled with pumpkin and banana that are naturally sweet and your favorite chocolate (or carob for AIP) creates a velvety bite!(PALEO | VEGAN | AIP-FRIENDLY)

- Add all filling ingredients to a food processor and blend until creamy (start with 5 Tbsp of the flour).
- Next, add in the pumpkin spice, and blend again to incorporate, taste and adjust seasonings as desired.
- The filling should be rolling into a ball but still be moist to touch, if it's not forming, you can add an additional Tbsp of coconut flour.
- Using a tablespoon, scoop out the filling and roll into balls, set them on parchment-lined plate or tray and chill for 15 mins or so in the fridge to set.
- Meanwhile, make the chocolate by mixing chocolate or carob with coconut oil, you can heat together either on a stove carefully or in the microwave for a minute or so. Mix well and adjust as needed (if using chocolate that's sweetened, you're all set, if not feel free to add honey or maple syrup if needed).
- Pour melted chocolate/carob into a bowl and dunk each truffle into the coating, using 2 forks you can roll the truffle around while shaking off the excess chocolate and placing back on the parchment paper. Return to the fridge to set for another 10 minutes or so (or can even put it in the freezer for a few minutes if you can't wait!) Serve and store in the fridge.
WHITE CHOCOLATE COVERED PUMPKIN TRUFFLES
Pumpkin and spice infused dark chocolate ganache, enrobed in creamy white chocolate. Make these and everyone will think you're some kind of haute confectioner! *prep time is just an assumption, and also include all chilling times.*

Steps:
- In a medium saucepan over low heat, combine the pumpkin, brown sugar, and spices; cook for 5-6 minutes, or until the mixture reduces by half and the pumpkin looks dry. Set aside.
- In another saucepan over high heat, add the cream; remove from heat when it boils.
- In a heatproof bowl, pour the hot cream over the dark chocolate; let mixture sit for 1 minute, then slowly begin to stir, starting from the center of the bowl and working outwards.
- Once the chocolate and cream are evenly mixed, add the pumpkin mixture and whisk to combine. Add the butter and liqueur, if using.
- Cover bowl tightly with plastic wrap and refrigerate until well chilled, at least 1 hour.
- On a parchment paper-lined cookie sheet, scoop the chilled mixture into small balls using a melon baller. Place in refrigerator for another 60 minutes, or until well chilled.
- Remove truffles from refrigerator and dip each in the melted white chocolate; roll in cocoa powder.
- Chill again until chocolate sets; bring to room temperature before serving.

- Add the pumpkin, pumpkin pie spice, graham cracker crumbs, softened cream cheese and powdered sugar all into the bowl of a stand mixer and mix well to combine.
- Place mixture in freezer for 30 minutes to harden. Once hardened slightly, remove from freezer, and using a 1" cookie scoop, scoop out balls of dough, forming slightly in the palm of your hand. Place on a parchment-lined cookie sheet. Continue until all the dough is used up, and place back in freezer for another 30-60 minutes to harden.
- Melt the chocolate with the oil in a microwave-safe dish in 30 second intervals in the microwave, stirring after every 30 seconds, until the chocolate is fully melted. Divide the chocolate into two separate dipping bowls (for ease of dipping), and add in any additional oil if needed to thin out.
- Using a fork, dip the hardened truffles into the chocolate mixture to fully cover. Remove, tap on the edge of the bowl to remove any excess chocolate, and slide back onto the parchment-lined cookie sheet.
