- Place peanuts in a wide, shallow dish. Roll 3 to 4 pieces of banana in the melted chocolate and peanut butter mixture, and stir to coat.
- Remove bananas using a fork and place in the dish containing peanuts. Roll chocolate-covered bananas in peanuts and coat as best as you can. Once well coated, place bananas on baking sheet lined with waxed paper.
- Repeat with remaining bananas, re-melting the chocolate mixture if needed. Once complete, place in freezer.
- Once frozen, store in a freezer bag or airtight container. Thaw for 8 to 10 minutes before eating, to ensure banana bites are frozen, but not rock hard.

CHOCOLATE COVERED BANANAS (FROZEN BITES!) – A COUPLE COOKS
From acouplecooks.com
- Slice bananas into 1/4-inch rounds. Place them on a baking sheet lined with parchment paper and freeze for 45 minutes.
- Start a pot of simmering water. Place the chocolate, coconut oil, and salt in a glass measuring cup or large wide mouth jar, and place it into the simmering water. Very carefully, stir the chocolate until it melts, using a hot pad or gloves to hold the glass. Do not let any of the water splash, or it will split the chocolate. (You can also melt the chocolate in the microwave in a liquid measuring cup, heating for about 30 second intervals and then stirring several times until the chocolate melts.)
- Make sure your toppings are ready, if using. Leave the jar in the double boiler to keep the chocolate warm. Use a fork to dip each banana slice into the jar, then shake off excess chocolate. Transfer the slice to the parchment lined baking sheet, using your finger to gently slide off the banana. Add toppings immediately (the chocolate freezes quickly) — this process is easiest with 2 people, 1 person to dip and 1 person to top. This recipe uses only 1 cup of chocolate for the bananas, but it’s nice to have extra chocolate to make the dipping process easier. You can dip pretzels or cereal into the remaining chocolate, or discard it.

- Line a platter or small baking sheet with parchment paper. Place about 1/2 teaspoon of peanut butter on a banana slice and top with another banana slice to make a little banana peanut butter sandwich. Keep doing this until all banana slices are used and you have about 30 bites. Place bites on two parchment lined platters or plates and place in the freezer to harden for about 1 hour.
- Once banana bites have been in the freezer for over an hour, melt your chocolate by adding chocolate and coconut oil to a microwave-safe bowl. Microwave for 1 minute, stir and microwave in additional 30 second increments until chocolate is completely melted. This shouldn't take more than 2 minutes of microwave time.

- Chop fruit and assemble into stacks. Press a popsicle stick through the fruit and freeze until solid.
- Prepare a baking sheet with parchment paper, wax paper or a silicone mat. Melt the chocolate along with the coconut oil either in a double boiler or in the microwave using short intervals and stirring frequently to prevent burning. Once completely melted, remove the frozen fruit from the freezer. Dip the fruit in the chocolate, let the excess drip off for a minute and then place on the sheet to harden. If desired, dip the chocolate covered side immediately in chopped nuts or coconut before placing on the sheet to harden. Once the chocolate is completely hardened(you may need to place in the freezer for it to harden completely), remove from the sheet and place in an airtight container to store in the freezer until ready to serve.
- When ready to serve, remove them from the freezer and let sit at room temperature for a couple minutes before serving - if you can wait that long :)
CHOCOLATE COVERED BANANA BITES - BAREFEET IN THE KITCHEN
From barefeetinthekitchen.com
- Slice the bananas into 1/2" thick rounds and place them flat and untouching on a paper plate or a parchment lined baking tray. Set the bananas in the freezer and freeze for at least 2 hours.
- Place the chocolate chips and the coconut oil in a small glass cup or bowl. Microwave at 50% power for 60 seconds, stir and microwave at 50% power for an additional 30-60 seconds just until the chocolate can be stirred. Stir for a minute or so, until the mixture is smooth. Line a small section of the counter or a baking tray with parchment paper or wax paper.
- Remove the bananas from the freezer and gently pierce them one at a time with a toothpick and dip them into the melted chocolate. Turn slowly to allow the excess to drizzle off and then place on reserved parchment paper. The chocolate will already be almost set. You can skip the toothpicks and simply drop the banana pieces one at a time into the chocolate and use two forks to lift them out and allow the excess to drip off of the pieces. Set the coated pieces onto the parchment paper.

- Slice the banana and place the slices on a tray. Put the tray in the freezer until the bananas are frozen solid. About an hour.
- Meanwhile place the chocolate chips and the coconut oil in a small microwave safe bowl or measuring cup. Microwave for 30 seconds and then stir. Microwave for another 15 seconds and stir again, until all the chocolate is melted and smooth. Put it back in the microwave for another few seconds if necessary. Don't over heat. Set the chocolate aside to cool.
- When the bananas are frozen, dip them into the cooled chocolate and coat on all sides. I like set the slices on a fork and then use a spoon to help drizzle the chocolate all over. Let any excess chocolate drip off before setting the slice down on parchment or waxed paper. Put the slices back in the freezer right away.
