1/2 cup unsalted butter, at room temperature
2 tablespoons chocolate cream liqueur
1 tablespoon strong brewed coffee or 1 tablespoon milk
1 pinch salt

Steps:

  • In a food processor fitted with a metal blade, process confectioner's sugar, cocoa powder, butter, chocolate liqueur, coffee and salt until smooth, scraping down sides as necessary.
  • Spread frosting on cooled cupcakes.

1-1/2 cups cake flour
1 cup sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 ounces unsweetened chocolate
2 tablespoons butter
1 cup buttermilk
1/2 cup canola oil
1 large egg
1 teaspoon vanilla extract
FROSTING:
1/2 cup sugar
4-1/2 teaspoons cornstarch
1/8 teaspoon salt
1 ounce unsweetened chocolate, coarsely chopped
1/2 cup hot coffee or water
4-1/2 teaspoons butter
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the flour, sugar, baking soda and salt; set aside. In a microwave-safe bowl, combine the chocolate and butter. Cover and microwave on high for 1 minute. Stir; cook 30 seconds longer or until melted., In a small bowl, combine the buttermilk, oil and egg. Add to dry ingredients; beat just until combined. Add the chocolate mixture and vanilla. , Pour into a greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack., For frosting, in a saucepan, combine the sugar, cornstarch, salt and chocolate; stir in the coffee until blended. Bring to a boil over medium heat; cook and stir until mixture is thickened. Remove from the heat; stir in butter and vanilla. Spread warm frosting over cake.

I took this recipe from the Ghiradelli cocoa mix box and altered it a bit. I tend to find frosting recipes sickeningly sweet. This one is delicious and just the right sweetness, with a great mocha flavor. This recipe makes enough to cover the tops and sides of 2 9-inch rounds. Try it with the "Better than Box Cake" yellow cake recipe.

1/3 cup butter
4 1/2 tablespoons whole milk
3/4 cup cocoa powder (I recommend Ghiradelli)
2 1/4 cups confectioners' sugar
1 dash salt
3/4 teaspoon vanilla extract
3 teaspoons dry instant coffee

Steps:

  • Place butter, milk, and cocoa powder in a saucepan over low heat.
  • Stir mixture until all the butter has just melted.
  • Remove from heat and add the vanilla and salt.
  • Sift in the confectioner's sugar and ground coffee.
  • Mix until smooth.
  • Cool to room temperature and frost away!

1 cup (2 sticks or 226g) unsalted butter, (room temperature)
8 ounces cream cheese, (room temperature)
6 cups (750g) confectioners sugar
1/2 cup unsweetened cocoa powder
1/2 cup strong brewed coffee, (or more to taste)
Pinch salt

Steps:

  • Beat butter and cream cheese together in a bowl with an electric hand mixer until creamy.
  • Slowly add in confectioners' sugar, cocoa powder, coffee, and salt until smooth and spreadable. Can add more coffee if you want it creamier.

100g milk chocolate, chopped into small pieces
200g slightly salted butter, softened
400g icing sugar, sieved
4 tbsp cocoa powder
2 tbsp milk

Steps:

  • Put the chocolate in a heatproof bowl, suspended over a pan of barely simmering water. Stir every now and then until melted. (Alternatively, melt in the microwave, stirring the chocolate every 20 secs so it doesn't burn.)
  • Remove the bowl from the heat and leave to cool a little. Meanwhile, put the butter and icing sugar in another large bowl and mash with a spatula to combine (this will prevent you covering the work surface in icing sugar), then whisk with a hand mixer until smooth.
  • Sift in the cocoa and pour in the melted chocolate and milk, then mix again until smooth, and use to ice your chosen cake immediately. Will keep in the fridge for up to a week, but remove an hour before using to bring it back to room temperature, and beat well.

4 teaspoons instant coffee powder
6 ounces unsweetened chocolate, chopped
4 ounces semisweet chocolate, chopped
1 teaspoon vanilla extract
2 1/2 cups powdered sugar
4 teaspoons ground cinnamon

Steps:

  • Combine butter, 3/4 cup sugar, half and half and coffee powder in large saucepan. Stir over medium heat until sugar and coffee powder dissolve and mixture simmers. Remove from heat. Add both chocolates; whisk until smooth. Whisk in vanilla. Pour chocolate mixture into large bowl. Sift in powdered sugar and cinnamon; whisk to blend. Press plastic onto surface of frosting. Chill just until firm enough to spread, stirring occasionally, about 1 1/2 hours.

  • Line a 15x10x1-in. pan with foil; grease foil with 1 teaspoon butter.
