CHOCOLATE COCONUT ALMOND BARS.

These bars are my dream, full of all healthy ingredients, a thick layer of coconut and an even thicker layer of chocolate.

Number Of Ingredients 12

1/2 cup raw almonds
1 cup unsweetened flaked coconut
12 plump medjool dates (pitted)
2 teaspoons vanilla
1/4 cup coconut oil
2 cups unsweetened flaked coconut
1/2 cup canned coconut milk
2 tablespoons honey
pinch of salt
12 ounces dark chocolate (chopped, or semi sweet)
2 tablespoons rounded almond butter
cacao nibs + hemp seeds (for topping (optional))

Steps:

  • Line an 8x8 inch square baking pan with parchment paper.
  • In the bowl of a food processor, combine the almonds, 1 cup coconut, dates and vanilla. Pulse until finely chopped, but not pureed. Add the coconut oil and pulse until combined, being careful not to over mix the the mixture. You want it finely chopped and a little chunky.
  • Press the base mixture into the prepared pan. Place the pan in the freezer.
  • Back in the bowl of the food processor (no need to clean it!) combine 2 cups coconut, coconut milk, honey and salt. Pulse until you have a finely ground mixture. Remove the base layer from the freezer and add the coconut layer in an even layer. Return the pan to the freezer.
  • Melt the chocolate over a double broiler or in the microwave, stirring every 30 seconds until melted and smooth.
  • Remove the bars from the freezer and spread the chocolate over top. Now take the almond butter and swirl it into the chocolate. Top with cacao nibs and hemp seeds if desired. Cover the pan and place in the fridge for 30 minutes to 1 hour to allow the chocolate to set.
  • Place the sharp knife under hot water and then cut the bars into about 16 squares. The chocolate layer may pop off of the coconut layer as you cut the bars. Don't worry, just push it back into place. Keep the bars stored in the fridge in a sealed container.

We love sweets and this one does not disappoint. I got this recipe from a local paper 10 years ago. A lovely bittersweet chocolate crust with almonds and coconut filling. Toasting the coconut creates a nice nutty, dark, deep flavor. Sounds like a chocolate bar doesn't it. Yummy!

1 cup flour
1/4 cup butter
2 ounces chocolate, bittersweet
1 tablespoon milk, chocolate
2 eggs, large
1 cup sugar, brown, dark, lightly packed
1/2 teaspoon baking powder
3 tablespoons flour
1/2 teaspoon almond extract, pure
1/2 teaspoon vanilla extract, pure
1 cup almonds, salted, coarsely chopped
3/4-1 cup coconut, lightly toasted (the toasting is optional)

Steps:

  • Preheat oven to 350 degrees.
  • In a small pot melt the butter and chocolate, slowly over a low heat.
  • Add the flour to a bowl and mix the melted chocolate mixture into the flour.
  • The mixture should be crumbly, next add the milk, mixing with a fork, until the crumbs are large and moist.
  • Press the dough into an ungreased 11 x 7 " pan, bake for 10 minutes, remove and cool.
  • In a medium size bowl lightly beat the eggs then add the brown sugar, baking powder, flour, vanilla and almond extracts, nuts and coconut, blending well.
  • Spread the filling over the crust and bake for 25 - 30 minutes longer.
  • Cool completely before cutting into 18 large squares.
  • Keep any leftovers in the freezer.

Inspired by a much-loved chocolate-coconut candy bar, these are the perfect spur-of-the-moment treats for the event that almost slipped your mind: Premade sugar cookie dough does half the work for you!

Butter, for greasing pan
Topping:
1/3 cup coconut cream
1 large egg white
1/2 teaspoon vanilla extract
1 1/2 cups sweetened shredded coconut
2 teaspoons all-purpose flour
One 4-ounce bar bittersweet or semisweet chocolate, coarsely chopped
Base:
1/4 cup all-purpose flour, plus more for rolling dough
1/3 cup natural unsweetened cocoa powder (not Dutch process)
1/4 teaspoon fine sea salt
One 1-pound package prepared refrigerated sugar cookie dough

Steps:

  • Preheat the oven to 350 degrees F. Cut a piece of foil 9- by 23-inches. Butter the corners and sides of a 9- by 9-inch baking pan. Line the pan with the foil, leaving an overhang on two sides. Fold the overhanging foil to make them doubly thick. (This will make it easier to lift the bar out of the pan.)
  • For the topping: Whisk the coconut cream with the egg white and vanilla in a medium bowl. Toss the shredded coconut with the flour in another medium bowl. Stir the shredded coconut mixture into the coconut cream mixture. Set aside.
  • For the base: Whisk the flour with the cocoa powder and salt in a small bowl. Put the cookie dough on a clean work surface and dump the flour mixture on top. Knead the flour mixture and dough together until it is dark and homogenous. Sprinkle a little extra flour on the work surface, and use a rolling pin to gently press and roll the dough into a 7- or 8-inch square; don't worry if it cracks a bit. Put the dough in the prepared pan, using your fingers to press it evenly into the sides and corners.
  • Scatter the coconut topping evenly over the base, making sure you cover the edges well and being sure not to press down so that the coconut mixture lies on top of the dough. Scatter the chocolate on top and press it lightly into the coconut. Bake until the coconut is a toasted golden brown, the topping seems dry and a toothpick inserted in the center comes out clean, about 30 minutes. Cool completely on a rack before gently lifting out of the pan by the overhanging foil, about 20 minutes. Slice into 16 square bars.

¾ cup packed brown sugar
¾ cup white sugar
1 teaspoon vanilla extract
2 eggs
1 ¼ cups almond flour
1 cup coconut flour
1 teaspoon baking soda

½ cup chocolate chips, or to taste
¼ cup rolled oats
¼ cup shredded coconut

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
  • Combine butter, brown sugar, and white sugar in a large bowl; beat with an electric mixer until creamy. Add vanilla extract. Beat in eggs one at a time.
  • Combine almond flour, coconut flour, baking soda, and salt in a separate bowl. Mix into the creamed butter mixture until just combined. Add chocolate chips, oats, and coconut; stir again just until combined.
  • Scoop cookie dough onto the prepared baking sheets.

1-1/2 cups all-purpose flour
2/3 cup sugar
3/4 cup cold butter, cubed
1 can (14 ounces) sweetened condensed milk
1-1/2 cups semisweet chocolate chips, divided
1 egg, beaten
2 cups chopped almonds, toasted
1/4 teaspoon almond extract
1 teaspoon shortening

Steps:

  • In a bowl, combine the flour and sugar; cut in butter until crumbly. Press into a greased 13x9-in. baking pan. Bake at 350° for 18-20 minutes or until lightly browned. Cool on wire rack., In a saucepan, combine the milk and 1 cup chocolate chips. Cook and stir over low heat until chips are melted. Remove from the heat; cool slightly. Stir in egg, almonds and extract. Spread over crust. Bake at 350° for 20-25 minutes or until a toothpicks inserted in the center comes out clean. Cool on a wire rack. In a microwave, melt shortening and remaining chips; drizzle over top. Cut into bars.

  • In a large bowl, whisk together coconut oil, honey, vanilla and eggs. It is important your eggs are at room temperature.
  • In a separate medium bowl whisk together coconut flour, baking soda, and salt. Add dry ingredients to wet ingredients and mix until combined and batter is completely smooth. Stir in almond milk. Fold in chopped chocolate, reserved a few tablespoons for sprinkling on top if desired.
  • Bake for 17-22 minutes or until edges are golden brown and knife comes out with a few crumbs attached. The batter may look like it's not all the way cooked but it will be. DO NOT OVERBAKE or it will result in dried out bars and no one likes that! I always bake mine for 18-20 minutes and don't have any problems. Cool bars on a wire rack for at least 10 minutes so that they settle a bit, then cut into 16 squares. Enjoy!
