Steps:
- Heat oven to 375°F.
- Combine flour, baking soda and salt. Beat butter and sugars in large bowl with mixer until light and fluffy. Blend in egg and vanilla. Gradually add flour mixture, mixing well after each addition. Stir in chocolate and nuts.
- Spread onto bottom of seasoned 12-inch cast-iron skillet. (See tip.)
- Bake 20 to 25 min. or until edge of cookie is golden brown and center is slightly puffed. Cool in skillet 30 min. before cutting into wedges to serve.

Steps:
- Preheat oven to 375°F. Whisk flour, cinnamon, baking powder, espresso powder, baking soda, and salt in a medium bowl. Lightly beat eggs and vanilla in a small bowl.
- Using an electric mixer on medium speed, beat butter, granulated sugar, and brown sugar in a large bowl until light and fluffy, 3-4 minutes. Add egg mixture and beat, occasionally scraping down sides of bowl, until mixture is pale and fluffy, 3-4 minutes. Reduce mixer speed to low and gradually add dry ingredients, beating until just incorporated. Fold in chocolate with a spatula.
- Press dough evenly into 12" skillet. Bake cookie until golden brown around the edges and center is still soft, 20-25 minutes. Let cookie cool in skillet before slicing.

- Cookie can be made 3 days ahead; cover and store at room temperature.
THE ULTIMATE SKILLET CHOCOLATE CHIP COOKIE
Steps:
- Preheat the oven to 350 degrees F and butter a 12-inch cast-iron skillet.
- Whisk together the flour, baking powder and salt in a medium bowl. Set aside.
- Combine the 1 cup (2 sticks) butter with the granulated sugar and brown sugar in a stand mixer fitted with the paddle attachment. Beat on medium speed until light and fluffy, about 2 minutes.
- Add the eggs one at a time, beating on medium speed after each addition, until combined. Then add the vanilla extract and beat on medium speed until combined.
- Add the flour mixture and mix on low speed just until the dough comes together, then mix in the chocolate until combined.
- Scrape the dough into the prepared skillet with a rubber spatula, spreading it to the edges and smoothing the top. Sprinkle the sea salt over the top.
- Bake until the edges are brown and crisp and the cookie is barely cooked in the center, 30 to 35 minutes.
- Remove from the oven and let cool for 10 minutes. Top with ice cream and serve.

- Position a rack in the center of the oven and preheat to 375 degrees F. Melt the butter in a 10-inch cast iron skillet over medium heat, then set aside to cool slightly, 5 minutes.
- Whisk the granulated sugar, brown sugar, eggs, and vanilla together in a large bowl until smooth. Stir in the melted butter. (Do not wipe out the skillet.) Whisk the flour, baking soda and salt together in another bowl. Stir the dry ingredients into the wet ingredients, mixing well with a wooden spoon until dough is homogeneous (do not overmix). - Preheat the oven to 350°F. Brush bottom and sides of a 10 inch cast iron skillet with 1 Tbsp from melted butter.
- In a medium-size mixing bowl mix together remaining butter with brown sugar, granulated sugar, eggs and vanilla.
- Add flour, baking soda and salt. Mix well. Add chocolate chunks and nuts. Mix until evenly distributed.
- Spread dough evenly in skillet. Arrange reserved 1/3 cup chocolate chunks on top pressing into the dough. Bake for 35-45 minutes or until a toothpick inserted into the cookie portion shows moist crumbs. The cookie should be slightly gooey.
