1 1/2 cups all-purpose flour

1 teaspoon cinnamon
1/2 teaspoon salt
3 cups Quaker Oats
1 cup raisins
1/2 cup semi-sweet chocolate chips

Steps:

  • Heat oven to 350 degrees. Beat together butter and sugars until creamy. Add eggs and vanilla; Beat well. Add combined flour, baking soda, cinnemon and salt; mix well. Stir in oats and raisins, mix well. Add chocolate chips and mix together. Drop by rounded tablespoons onto ungreased cookie sheets. Bake 10-12 minutes or until golden brown. 1 cup quick oats
3/4 cup whole wheat flour (spooned and leveled)
1 & 1/2 teaspoons baking powder
1 & 1/2 teaspoons cinnamon
1/2 teaspoon kosher salt (scant)
2 tablespoons butter (melted and cooled)
1 teaspoon vanilla
1 large egg
1/2 cup honey
1/2 cup to 3/4 cup dark chocolate chips (divided)

Steps:

  • Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper or a silpat.
  • Pull out 2 medium bowls, one for dry ingredients, one for wet.
  • In one bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
  • Melt the butter in the other bowl. You don't have to melt it all the way, if there are a couple lumps it's okay. Let cool slightly.
  • Whisk in the vanilla, then the egg. Whisk in the honey.
  • Add the wet ingredients to the dry ingredients and use a wooden spoon to stir until it has just come together (don't overdo it).
  • Save out about half of the chocolate chips. Use a sharp knife to roughly chop the remaining chocolate, then fold it into the dough.
  • Refrigerate the dough for about 30 minutes, or freeze for about 15 minutes.
  • Use your hands to shape the dough into roughly 15 cookies (or 12 if you eat a lot of dough like me...)
  • Place on the prepared baking sheet about 2 inches apart.
  • Bake in the preheated oven for about 12-13 minutes, or until they have just started to brown on the edges.
  • Once you remove them from the oven, immediately press the remaining chocolate chips into the tops of the cookies.
  • Let cool on the pan for a few minutes before removing to a cooling rack.
  • Drink with lots of milk!

1 teaspoon baking soda

1 cup margarine (now I use coconut oil) or 1 cup Crisco, softened (now I use coconut oil)
1/2 cup light brown sugar, firmly packed
1/2-1 cup granulated sugar (depending on how sweet you would like them)
1 large egg
1 1/2 teaspoons vanilla extract
1 cup ground walnuts (can grind in blender)
1 cup old fashioned oats
1 cup semi-sweet chocolate chips
1 cup raisins

Steps:

  • In a small bowl mix flour, baking soda and cinnamon.
  • In a large mixing bowl beat butter and sugars until light and fluffy. Beat in egg and vanilla.
  • At a low speed, beat in flour mixture until blended.

  • Cover with plastic wrap and chill for 1 hour.

1 teaspoon baking soda

2 cups chocolate chips

Steps:

  • In a large bowl, use an electric mixer to cream together the butter, brown sugar and granulated sugar until light and fluffy.
  • Add the eggs, one at a time, mixing until well combined. Mix in the vanilla extract and milk.
  • Gradually add the oats; mix until well incorporated.
  • In a separate bowl, whisk together flour, baking soda and salt.
  • Gradually add the flour mixture to the oat mixture. Stir in the chocolate chips.
  • Cover and the bowl and refrigerate the dough for at least 1-2 hours, or up to 2 days.
  • If the dough is too firm to scoop when you take it out of the fridge, leave it on the counter to sit at room temperature until it softens slightly.
  • Preheat oven to 350° F. Line baking sheets with parchment paper or silicone baking mats.
  • Using a 4-teaspoon spring-loaded scoop, drop dough onto prepared pans. Place the cookie dough about 2 inches apart.

  • In a large bowl, beat the butter, brown sugar, and granulated sugar together for 30 seconds until blended. Beat in the egg until smooth and barely fluffy. 1 cup old-fashioned rolled oats (do not use quick cooking or instant oats)
1 cup all-purpose flour, spooned into measuring cup and leveled-off
½ teaspoon baking powder
⅛ teaspoon baking soda
½ teaspoon salt
1 stick (½ cup) unsalted butter, softened but still cool
1 cup packed dark brown sugar
1 large egg
¾ teaspoon vanilla extract
¾ cup coarsely chopped pecans
¾ cup raisins or currants

Steps:

  • Position two racks in the middle of the oven and preheat to 350°F. Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the oats, flour, baking powder, baking soda and salt.
  • In the bowl of an electric mixer, beat together the butter and brown sugar on medium speed until creamy, about 3 minutes. Scrape down the sides of the bowl with a rubber spatula, then add the egg and vanilla and beat again until smooth, about 30 seconds.
  • Add the flour and oatmeal mixture and mix on low speed until just combined; add the pecans and raisins and mix again until just combined. Do not over-mix.
  • Drop the dough into 1½-tablespoon mounds about 2 inches apart onto the prepared baking sheets. Bake for 11 to 13 minutes, rotating the pans from top to bottom and front to back halfway through, or until the edges are slightly golden but the centers are still pale. Let the cookies cool on the baking sheets for a few minutes, then either slide the papers off the pans onto cooling racks or transfer the cookies with a spatula. Once cool, store the cookies in an air-tight container.
  • Note: The recipe can easily be doubled, but keep in mind that oatmeal cookies are best enjoyed fresh on the day they are baked.
  • Freezer-Friendly Instructions: The Cookie Dough can be Frozen for up to 3 Months: Scoop the dough into balls, let set on a baking sheet in the freezer, then place in a sealable bag and press out as much air as possible. Bake as needed directly from the freezer. (Allow 1 to 2 minutes longer in the oven.) To Freeze After Baking: Let the cookies cool completely and store in an airtight container separating layers with parchment paper or aluminum foil. Before serving, remove the cookies from the container and let them come to room temperature.
