EASY DOUBLE CHOCOLATE WALNUT COOKIES RECIPE
These double chocolate cookies with walnuts are easy. We love them with buttery walnuts, but hazelnuts or almonds would also be delicious. We use a handheld mixer, but a stand mixer works, too.

Yield Makes approximately 20 cookies

Steps:
- Heat the oven to 350 degrees F. Line two baking sheets with parchment paper or use a silicon baking mat.
- Sift the flour, cocoa powder, baking soda, and salt together. Set aside.
- Add the butter, both sugars, and the vanilla to a large bowl. Cream the butter and sugars together until light and fluffy; 3 to 5 minutes. (Or, use a stand mixer fitted with the paddle attachment).
- Scrape the side and bottom of the bowl then add the egg. Mix on medium-low speed for 30 seconds. The egg will not be completely incorporated.
- Turn the speed to the lowest setting. Add the dry ingredients in thirds, beating until just combined; 1 to 2 minutes.
- With the mixer on low, add the walnuts and chocolate chips and mix until just incorporated.
- Drop 1 1/2 tablespoon-mounds, or use a medium cookie scoop, onto baking sheets. Leave 2 inches between the cookies to allow for spreading. Lightly press cookie dough mounds down towards the baking sheet.
- Bake the cookies, one sheet at a time, for 8 to 10 minutes. The edges should be dry and tops slightly cracked. Let the cookies cool on the baking sheet for 2 minutes then transfer to a wire rack to cool completely.
- Store the cookies in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator.

Steps:
- Put oven rack in middle position and preheat oven to 375°F. Line 2 large baking sheets with parchment or wax paper.
- Whisk together flour, baking soda, and salt in a small bowl.
- Beat together butter and sugars in a large bowl with an electric mixer at high speed until pale and fluffy, 2 to 3 minutes. Lightly beat 1 egg with a fork in a small bowl and add 1 3/4 tablespoons of it plus 2 remaining whole eggs to butter mixture, beating with mixer until creamy, about 1 minute. Beat in vanilla. Reduce speed to low and mix in flour mixture until just blended, then stir in chips.
- Scoop 1/4 cup batter for each cookie, arranging mounds 3 inches apart, on 2 baking sheets. Flatten mounds into 3-inch rounds using moistened palm of your hand. Form remaining cookies on additional sheets of parchment.
- Bake, 1 sheet at a time, until golden, 13 to 15 minutes. Transfer cookies to a rack to cool and continue making cookies in same manner using cooled baking sheets.
CHOCOLATE CHIP COOKIES STRAIGHT UP OR WITH NUTS
After decades of cookie baking, this is the chocolate chip cookie I like best. (For now. My favorites generally last for about six months before I find a new one.) Sometimes I make these cookies with walnuts, and sometimes I leave them out, depending on my mood.

Steps:
- In a large bowl, using a wooden spoon, cream together the butter and brown and granulated sugars until smooth but not over mixed. (I do this by hand, but if you use a stand mixer fitted with the paddle attachment or a handheld mixer, beat on medium speed for 1 to 2 minutes, and then scrape down the sides of the bowl before continuing.) Add the egg, vanilla and salt and stir just until combined.
- Sift in the flour, baking soda and baking powder and stir gently just until combined. Add the chocolate and nuts if using and stir just until evenly distributed throughout the dough. Cover and refrigerate for 30 minutes.
- Position the racks in the upper third and lower third of the oven and preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
- Scoop up 1-inch balls of the dough with a spoon or mini scoop and set them 2 inches apart on the prepared pans. Bake the cookies, rotating the pans after 7 to 9 minutes, for 13 to 17 minutes until the cookies are golden brown. If you like a very soft cookie, bake them for 13 minutes. If you like a crisp cookie, bake them for 17 minutes. Transfer to racks and let cool. I think these cookies are best the day they are baked, but they will keep in an airtight cookie jar for up to 4 days-if they last that long.

Steps:
- Preheat oven to 300*F
- Line cookie sheets with a baking mat, parchment paper or non-stick foil. Set aside.
- Combine butter, sugar and brown sugar in the bowl for 2 minutes. I find it easier to use a stand mixer but a hand mixer will do too.
- Add eggs, vanilla and lemon juice to butter mixture. Blend on medium speed for about 2 minutes, or until light and fluffy. Scrape down the bowl after mixing.
- Add flour oats, baking soda, salt and cinnamon, Don't overmix.
- Remove bowl from mixer and stir in chocolate chips and walnuts by hand.
- Using a cookie scoop or two spoons, scoop out cookie dough and place on prepared cookie sheets about 2 inches apart - 12 per sheet.
- Bake for 20 to 23 minutes, or until edges are golden brown and the center is still soft.
- Typically cookies are done in 12-ish minutes. However this is the low and slow method giving crispy edges and chewy centers.
- Remove from oven and let cool before transferring to a cooling rack.

- Preheat the oven to 350°F (176°C) and line a baking sheet with parchment paper or a silicone baking mat.
- Place the almond flour, rolled oats, nut or seed butter, date sugar, raisins, and ground flax seeds into a high powered blender or food processor and process until it looks like powder and there are no chunks of raisins or big oat pieces.
- Transfer to a mixing bowl and then add the non-dairy milk, chocolate chips, pecans, vanilla, and salt. Mix until everything is combined and the dough forms a sticky ball.
- Using a quarter cup measuring cup, scoop up some batter and roll into a ball with your hands. Place the ball onto the baking sheet and repeat so that you have 12 cookie balls, spaced about an inch apart. If you want to get really precise, each ball should weigh about 50-55 grams. Just make sure you have 12 cookie balls, about the same size.
