GRANDMA'S CHOCOLATE CUSTARD PIE
Straight from grandma's kitchen, a delicious Southern holiday tradition. A smooth and rich chocolate dessert that will have you asking for thirds.

Steps:
- Mix sugar, flour, and cocoa powder together in a bowl until well combined.
- Mix milk, egg yolks, and vanilla extract together in a separate large bowl. Add flour mixture and blend custard until smooth.
- Pour custard into a cast iron skillet over medium heat. Cook, stirring continually, until slightly boiling but not popping, about 5 minutes. Cook just until reasonably thickened, 3 to 5 minutes more, and remove from heat immediately. Stir hot custard to smooth out any lumps and pour into the pre-baked pie shell.
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Beat egg whites, sugar, and vanilla extract together in a small bowl until peaks start to form. Spread the thick meringue mixture on top of the custard.
- Cook under the preheated broiler just until the peaks start to turn light brown, 1 to 2 minutes, being very careful not to let the meringue burn.
- Place the custard pie in the fridge or on Grandma's porch on a cool night until the custard congeals, about 2 hours.

CHOCOLATE BUTTERMILK PIE
Steps:
- Preheat oven to 325 degrees F. Position a rack in the center of the oven.
- Place the chocolate chips in a double boiler and melt over low heat, stirring constantly.
- In a medium bowl, whisk together the sugar, flour, and salt until well combined. In a large mixing bowl, combine the eggs, buttermilk, and vanilla. Add the sugar mixture and mix with an electric hand mixer or whisk vigorously. With a rubber spatula, stir the melted chocolate into the batter.
- Pour batter into the piecrust; you will have about 1 cup of left-over batter. Place pie in oven on middle rack. Bake for 1 hour and 15 minutes to 1 hour and 25 minutes, or until the pie is crisp on top and a knife inserted in the center comes out with just a bit of moist chocolate on it.
- Remove from oven and cool completely. Let stand at least 1 hour before serving. If not eating immediately, refrigerate pie. This pie can be served warm or chilled. Garnish with store-bought whipped cream just before serving.

- Fit pie crust into a 9-inch deep-dish pie plate; fold edges under and crimp.
- Bake at 400 degrees for 6 minutes; cool crust on a wire rack.
- Reduce oven temperature to 350 degrees.
- Meanwhile, beat butter, sugar, and flour and medium speed with an electric mixer until blended.
- Add eggs, buttermilk, and vanilla; beat well.
- Fold in chocolate morsels.
- Pour into prepared crust.
- Bake at 350 for 1 hour until just set and lightly browned.
- Cool completely before serving.

- Preheat the oven to 350 degrees. Lightly spray the pie plate with cooking spray.
- Combine flour, baking powder, salt and brown sugar in a medium bowl. Add the butter, eggs, and vanilla; Stir well. Stir in the chocolate morsels and nuts. Spoon into a greased 9-inch pieplate.
- Bake at 350 for 35 to 40 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack.
WHITE CHOCOLATE CHIP BUTTERMILK PIE
This recipe was born out of frustration and desperation when I realized I had a gallon of buttermilk to use up and a school bake sale the next day. The nice part is it made 2 pies. The bad part is I had to bake them twice because we wolfed down the first 2 with chocolate whipped cream! The texture of the pie is phenomenal. With the white chocolate chips, orange zest, and blossom water, there is no buttermilk 'bite', just great flavor.

- Preheat the oven to 350 degrees F (175 degrees C). Line two 9-inch pie plates with pie crusts.
- Parbake the crusts in the preheated oven for 8 to 10 minutes.
- Meanwhile, combine sugar, flour, and orange zest in a mixing bowl. Add buttermilk, beaten eggs, orange blossom water, and vanilla.
- Melt butter in a small saucepan over low heat, 3 to 5 minutes. Mix into the buttermilk filling until well incorporated.
- Sprinkle 1/4 cup white chocolate chips over the bottom of each pie crust. Divide the filling between the crusts. Sprinkle the tops lightly with cinnamon. Cover edges with foil so crusts don't burn.
- Bake pies in the preheated oven until the filling is set, 35 to 40 minutes. Allow the pies to cool and refrigerate until firm, 8 hours to overnight. Serve chilled for best flavor.

- Preheat oven to 350 degrees F (175 degrees C).
- Roll out pie dough large enough to fit pie dish with just a bit of overhang. Transfer dough to pie dish and gently fit into dish. Trim excess dough hanging over the edge. Fold about 1/2 inch of the edge of the dough to the inside edge of the pie crust to reinforce it. Crimp the edge. Prick the bottom and sides of the crust with a fork about 10 times. Place a sheet of parchment paper gently into the crust and fill with pie weights or dried beans so pie crust doesn't bubble up with you bake it.
- Bake in preheated oven 15 minutes. Remove dish from oven; lift weights from pan with edges of parchment paper. Allow crust to cool completely.
- Place butter in mixing bowl; add sugar. Smear together until completely combined using a spatula, 4 or 5 minutes. Add flour and salt. Mix together until combined. Stir in 3 eggs; mix until slightly blended. Then using a whisk, whisk together until mixture is fairly smooth and creamy.
- Pour in vanilla extract. Add nutmeg, zest of lemon, lemon juice, and buttermilk. Whisk until thoroughly mixed, 2 or 3 minutes. Pour into pie shell.
- Bake in preheated oven until golden brown and just set, 45 to 55 minutes. Pie should have a slight wiggle, but not a soupy "jiggle." Cool to room temperature. Refrigerate until chilled, 1 to 2 hours.

- Whisk sugar, salt, and 1¼ cups (156 g) all-purpose flour in a medium bowl to combine. Using a pastry cutter or a fork, work butter until mixture resembles coarse crumbs. Make a well in the center and pour buttermilk into well. Using a fork, stir mixture into buttermilk a little at a time until an evenly moist dough forms. Transfer dough to a lightly floured surface and flatten into a thick disk. Wrap in plastic and chill at least 1 hour and up to 2 days.
- Let dough sit at room temperature 5 minutes. Unwrap and roll out on a lightly floured surface to a 12"-diameter round. Drape dough over rolling pin and transfer to a 9"-diameter pie dish. Unfurl and press gently into dish. Using kitchen shears or a small, sharp knife, trim dough so you have about ½" overhang. Fold overhang under and crimp edges as desired. Chill 30 minutes.
- Place rack in bottom third of oven; preheat to 375°. Whisk eggs and sugar in a large bowl to combine. Add buttermilk, butter, vanilla, cocoa powder, flour, and salt and whisk until smooth.
- Pour filling into chilled crust and bake 15 minutes. Reduce oven temperature to 350° and continue to bake pie until a tester inserted into the center comes out clean, about 45 minutes. Transfer to a wire rack and let cool. Slice with a serrated knife to create clean edges. Serve topped with whipped cream. Do ahead: Pie can be baked 2 days ahead. Cover and chill. Let sit at room temperature 10 minutes before serving.

- I like to make sure my pie dough is prepared before I begin making this chocolate pie. Make pie dough the night before because it needs to chill in the refrigerator for at least 2 hours before rolling out and blind baking (next step).
- On a floured work surface, roll out one of the disks of chilled dough (use the 2nd pie crust for another recipe!). Turn the dough about a quarter turn after every few rolls until you have a circle 12 inches in diameter. Carefully place the dough into a 9-inch pie dish. Tuck it in with your fingers, making sure it is completely smooth. To make a lovely thick edge, I do not trim excess dough around the edges. Instead, fold the excess dough back over the edge and use your hands to mold the edge into a nice thick rim around the pie. Crimp the edges with a fork or use your fingers to flute the edges. Brush edges with egg wash/egg white. Carefully line the inside of the pie with two pieces of parchment paper, as shown in the photo below, then pour in the pie weights. Chill the dough in the refrigerator or freezer for at least 30 minu
- Bake the cold pie crust (with weights) for 15 minutes. Remove pie from the oven and carefully lift the parchment paper (with the weights) out of the pie. Prick holes all around the bottom crust with a fork. Return the pie crust to the oven and bake for 8 minutes to help set the bottom. Remove from the oven and set aside until step 7. You can pre-bake the crust up to 3 days ahead of time. Cover and store in the refrigerator (without weights) until ready to use.
