2 tablespoons vegetable oil
2 lbs chicken breasts, cut in 1/2 inch pieces
1 large onion, finely chopped
4 cloves garlic, minced
1 teaspoon cumin
1 teaspoon oregano
1 teaspoon thyme
2 teaspoons hot chili powder
1/2 teaspoon cinnamon
1 teaspoon kosher salt
1/4 teaspoon black pepper
2 tablespoons flour
1 1/2 cups chicken broth
15 ounces diced tomatoes
15 ounces white beans, drained and rinsed
1 ounce bittersweet chocolate, broken into pieces
2 tablespoons chopped fresh cilantro

Steps:

  • Heat oil in a large deep skilletover medium high heat. Add chicken and saute until golden, about 3 minutes. Transfer to a 5 to 6 quart slow cooker.
  • Add onion to the oil and saute until tender, about 2 minutes. Add the garlic, cumin, oregano, thyme, chili powder, cinnamon, salt, pepper, and flour and stir until onion is evenly coated. Cook for 1 minute, stirring constantly. Add the broth and tomatoes and stir until liquid boils and thickens, add to the slow cooker. Add the beans, cover the slow cooker, and cook 3 to 4 hours on high, or 6 to 8 hours on low.
  • Reduce the slow cooker to warm setting. Add chocolate and cilantro and stir until chocolate melts.

2tbsp olive oil
500g skinless chicken breast fillets, cut into bite-size pieces
1 onion, chopped
1 red pepper, deseeded and cut into chunks
2 garlic cloves, crushed
1tsp chilli powder
1tsp ground cumin
1/2tsp ground cinnamon
500g passata
25g dark chocolate (70% cocoa solids), broken into squares
Rice, to serve
Parsley, to garnish (optional)

Steps:

  • Heat the oil in a pan, add the chicken and fry over a high heat for 3-4 mins until browned. Remove from the pan with a slotted spoon and set aside.
  • Add the onion and red pepper to the pan and fry over a medium heat for 5 mins to soften. Add the garlic, chilli powder, cumin, cinnamon and passata and season with salt and freshly ground pepper.
  • Return the chicken to the pan and bring to the boil, stirring. Reduce the heat and simmer for 10 mins, stirring occasionally until the chicken is cooked through.
  • Add the chocolate and stir until melted. Taste and add a little extra chilli powder, if liked. Serve with rice and garnish with parsley, if using.

1 medium yellow onion, diced
1 pound ground chicken
1 packet taco seasoning
One 28-ounce can diced tomatoes
One 15.5-ounce jar medium tomato salsa
One 15-ounce can pinto beans, drained and rinsed
1 cup frozen corn
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Sour cream, shredded cheese, thinly sliced scallions and pickled jalapenos, for serving

Steps:

  • Heat the olive oil in a Dutch oven over medium heat. Add the onion and cook until tender and translucent, 5 to 6 minutes. Add the chicken and cook, using a wooden spoon to break it up as it browns, about 5 minutes. Mix in the taco seasoning and 1/4 cup water. Cook for 3 minutes. Add the tomatoes, salsa, beans, corn, salt and pepper. Bring to a simmer, reduce the heat to low, cover and cook until reduced slightly and heated through, about 20 minutes. Serve with sour cream, cheese, scallions and jalapenos.

4 ounces bacon, diced
One 3-pound chicken, cut into 8 pieces
1 1/2 teaspoons salt
1 onion, chopped
2 carrots, peeled and chopped
3 cloves garlic, peeled and smashed
1 serrano chile, stemmed and halved
2 tablespoons tomato paste
1/2 teaspoon allspice
1 teaspoon pimenton (smoked paprika)
1 1/2 cups red wine
1/2 cup low-sodium chicken broth
1 1/2 ounces baking chocolate, chopped
2 tablespoons butter, room temperature
2 teaspoons agave nectar
1 cup frozen peas, thawed

Steps:

  • Heat a braiser or Dutch oven over medium heat. Add the oil and bacon; cook until the bacon is golden brown and crispy, about 5 minutes. Remove the bacon to a plate, using a slotted spoon.
  • Turn the heat up to medium-high. Pat the chicken pieces dry with paper towels, and sprinkle all over with the salt. Add the chicken, skin-side down, to the pan and cook until golden brown and crispy, 8 to 10 minutes. Flip and brown on the reverse side, an additional 5 minutes. Remove the chicken to the plate with the bacon.
  • Add the onions, carrots, garlic and chiles to the pan, and cook an additional 3 minutes, stirring often. Add the allspice and pimenton; cook another 2 minutes. Add the tomato paste; cook, stirring constantly, until fragrant and deepened in color, 2 minutes more. Deglaze the pan with the red wine and simmer for 5 minutes to reduce slightly. Add the chicken broth and then whisk in the chopped chocolate. Nestle in the browned chicken pieces, skin-side down, and sprinkle with the bacon. Reduce the heat to low, cover, and simmer for 35 minutes, turning the chicken pieces halfway through.
  • Remove the chicken to a platter to rest. Meanwhile, whisk the butter and agave nectar into the sauce. Stir in the peas, then spoon the stew over the chicken pieces.

Steps:

  • Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 more minute. Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Crush the tomatoes by hand or in batches in a food processor fitted with a steel blade (pulse 6 to 8 times). Add to the pot with the basil. Bring to a boil, then reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally.
  • Preheat the oven to 350 degrees F.
  • Rub the chicken breasts with olive oil and place them on a baking sheet. Sprinkle generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin and cut it into 3/4-inch chunks. Add to the chili and simmer, uncovered, for another 20 minutes. Serve with the toppings, or refrigerate and reheat gently before serving.

4 dried guajillo chiles
4 dried pasilla chiles
2 chipotle chiles in adobo plus 2 tablespoons sauce
8 ounces thick sliced bacon, chopped
4 tablespoons vegetable oil
One 4- to 5-pound boneless beef chuck roast, trimmed of excess fat and cut into 1-inch chunks
Kosher salt and freshly ground black pepper

2 medium onions, chopped
6 cloves garlic, finely chopped
1 tablespoon unsweetened cocoa powder
1 tablespoon ground cumin
2 teaspoons dried oregano, preferably Mexican
2 teaspoons paprika
One 16-ounce can chocolate stout
3 cups low-sodium beef stock
Finely chopped onion, thinly sliced scallions, sour cream and chopped fresh cilantro, for serving

Steps:

  • Remove the stems and seeds from the ancho, guajillo and pasilla chiles.
  • Heat a large skillet (preferably cast iron) over medium-high heat and toast the chiles in batches until they just start to darken and become shiny, 10 to 20 seconds per side. Remove the chiles to a large bowl. When all of the chiles are toasted, pour boiling water over them to cover and let stand until soft, about 30 minutes.
  • Puree the chiles with the chipotles, adobo sauce and 1/2 cup soaking water in a blender until smooth. (Reserve the remainder of the soaking water.)
  • Cook the bacon in a large Dutch oven over medium heat until crisp, then drain on paper towels. Pour off the oil from the skillet and add the vegetable oil.
  • Sprinkle the beef all over with some salt and pepper. Working in batches, brown the beef in the fat over medium-high heat, 3 to 4 minutes per batch, and remove to a plate as it browns.
  • Reduce the heat to medium low and add the onions to the drippings in the pan. Cook, stirring occasionally, until the onions are almost tender, about 6 minutes.
  • Add the garlic and continue to cook, 2 minutes more. Add the cocoa, cumin, oregano and paprika and stir to coat the onion, about 1 minute. Increase the heat to high and add the chile puree. Cook until slightly thickened, 2 to 3 minutes.
  • Add the stout, bring to a boil and boil until reduced by about a quarter, about 3 minutes. Add the beef and bacon. Pour in the stock and add enough reserved chile soaking water or additional water (about 2 cups), to cover the meat by about 1 inch. Set the cover ajar and simmer over low heat, stirring occasionally, until the meat is tender, 3 1/2 to 4 hours.
  • Serve the chili in bowls garnished with onion, scallions, sour cream and cilantro.

  • Chili: In a stock pot, briefly saute onion, garlic, cumin, chile powder, and salt in the olive oil.

2 tbsp olive oil
1 onion, sliced
2 mixed peppers, sliced (use red, yellow or orange peppers)
2 large garlic cloves, crushed
1 small bunch of coriander, stalks finely chopped and leaves roughly chopped
½ tbsp ground coriander
1 tbsp ground cumin
1-2 tsp chipotle paste
400g can chopped tomatoes
1 tbsp tomato purée
300ml chicken stock
1 small cinnamon stick
4 chicken thighs, bone-in
400g can black beans
400g can kidney beans, drained
1 tbsp red wine vinegar
20g dark chocolate (at least 70% cocoa solids)
cooked rice or tortilla chips
guacamole and soured cream (optional)

Steps:

  • Heat the oil in a casserole dish over a medium heat, and fry the onion and peppers for 10-12 mins, or until softened. Add the garlic, coriander stalks, ground coriander, cumin and chipotle paste, and fry for 2 mins more. Tip in the tomatoes, tomato pureé and stock, then add the cinnamon stick. Nestle the chicken thighs into the mixture, then reduce the heat to low and simmer, covered, for 45 mins or until the chicken is tender. Remove the chicken from the casserole and transfer to a chopping board, then shred the meat off the bone using two forks.
  • Return the shredded chicken to the pan, then tip in the black beans along with the liquid from the can, the drained kidney beans, vinegar and chocolate. Stir well to combine all of the ingredients and melt the chocolate, then turn the heat up to medium and simmer, uncovered, for 10-15 mins, or until the mixture has thickened slightly.
  • Remove the cinnamon stick, season to taste and stir though most, or all of the coriander leaves (you can reserve a few leaves to scatter over at the end, if you like). Serve the chilli with rice or tortilla chips, topped with guacamole and soured cream, if using, and scatter over any remaining coriander.

3/4 cup chopped cilantro
1 large red pepper, cut into large chunks
1 medium green peppers or 1 medium yellow pepper, chunked

Steps:

  • Fry first 7 ingredients in the 2 tbsp. oil 'til onions are transparent.
  • Add next 6 ingredients, simmer 45 mins., meanwhile prepare chicken:
  • Cut chicken into bite-sized pieces.
  • In a bowl, cover breast chunks with olive oil, add salt, cilantro and set aside.(I do this the night before and let it marinade overnight in a baggie)
  • Add more water to the chili (or other liquid: broth, black coffee) if necessary.
  • Add the pepper chunks, simmer for 1/2 hr.
  • Meanwhile, remove chicken from marinade (discard leftover marinade) and grill 4-5 mins.
  • I use a George Forman grill, or broil.
  • When the chili is ready, gently stir-in the grilled chicken. Don't cook, just heat low for 20 minutes.
  • Adjust seasoning. Optional: 1/4 tsp cayenne pepper can be added.
  • Serve over rice or in a bread bowl.
  • Toppings: sour cream, grated jalapeno-jack cheese.

Steps:
